1 small onion, halved and sliced
2 teaspoons mixed pickling spices
1/2 teaspoon celery seed
1/2 teaspoon mustard seed
1 cup sugar
1 cup cider vinegar
1/3 cup water

Steps:

  • Trim leaves from Swiss chard; save for another use. Cut stems into 2-in. pieces; place in a large heatproof nonreactive bowl. Add onion, pickling spices, celery seed and mustard seed. , In a small saucepan, combine sugar, vinegar and water; bring to a boil. Cook 1 minute, stirring to dissolve sugar; pour carefully over chard mixture. Cool completely. Refrigerate, covered, overnight, stirring occasionally.

1 large yellow onion, chopped
2 tablespoons olive oil
1 teaspoon brown sugar
1 bunch red Swiss chard, rinsed and chopped
¼ cup kalamata olives
2 tablespoons capers
½ teaspoon coarse sea salt, or to taste
freshly ground black pepper to taste
1 lemon, juiced

Steps:

  • In a cast iron skillet, cook onions in olive oil over medium-high heat until they begin to brown. Stir in brown sugar, and continue cooking for a few minutes.
  • When onions are brown and tender, stir in chard and olives. Cook until chard is slightly wilted. Stir in capers and salt, and continue cooking until chard is completely wilted, about 3 minutes. Season with black pepper and squeeze lemon over the top.

2 large red onions, peeled and sliced into thick rings, rings separated
1 1/2 cups white wine vinegar
2 bay leaves
4 thyme sprigs
1/2 teaspoon red pepper flakes
1 tablespoon sugar
2 teaspoons black or mixed peppercorns, bruised; more for garnish
Salt and pepper
4 pounds chard, red or green
1/4 cup olive oil
2 cloves garlic, crushed

Steps:

  • For the onions: bring a kettle of water to a boil. Place onion slices in a colander, and pour boiling water over. In a bowl, combine remaining ingredients, stirring to dissolve sugar. Add onions, submerging them by placing a plate on top; if more liquid is needed, add equal amounts of vinegar and water. After about 15 minutes, onions will turn bright pink. (Recipe can be made to this point and refrigerated for up to 3 days.)
  • For chard: bring large pot of salted water to a boil. Cut stems off chard, and set aside; slice leaves across into wide ribbons. Working in batches if necessary, boil leaves until tender but not mushy, 3 to 7 minutes. Boil stems separately. Drain in colander.
  • To cook, heat oil in a wide skillet. Add garlic cloves and chard leaves and stems, and heat through, turning to coat evenly with oil. When hot, transfer to a serving dish, and top with some pickled onions, garnishing with peppercorns. Pass more onions at table.

2 tablespoons olive oil

2 medium onions, halved lengthwise and thinly sliced

  • Cut stems and center ribs from chard, discarding any tough portions, then cut stems and ribs crosswise into 2-inch pieces. Stack chard leaves and roll up lengthwise into cylinders. Cut cylinders crosswise to make 1-inch-wide strips.

3 lbs swiss chard, stems removed and reserved with leaves torn into bite-size pieces
2 tablespoons olive oil, divided
10 cloves garlic, peeled and halved
2 medium red onions, peeled and chopped
salt and pepper

Steps:

  • Cut out the tough, triangular inner core of each leaf of swiss chard and cut into 1/4- to 1/2-inch slices.
  • Rinse the leaves and stems separately and reserve.
  • In a large nonstick skillet, heat 1 tablespoon olive oil over medium heat.
  • Add the garlic and cook until it turns golden brown; don't let the garlic get too brown or it will be bitter.
  • Remove the garlic and set aside.
  • Reserve the oil in the skillet.
  • Add the remaining 1 tablespoon olive oil to the skillet and the onions.
  • Saute over medium heat until tender, about 5 minutes.
  • Add the chopped stems from the swiss chard and continue to cook over medium heat, stirring frequently, until the stems are very tender, 15 to 20 minutes.
  • Add the swiss chard leaves, season with salt and pepper and cover.
  • Cook 10 minutes, stirring often; you may need to add 1/2 cup chicken stock or water to keep the leaves moist.
  • Transfer to a serving bowl and top with the crispy garlic.

2 tablespoons coriander seeds
1 tablespoon mustard seeds
3 medium red onions, cut in half lengthwise and thinly sliced
1/4 cup red-wine vinegar
1/4 cup white balsamic vinegar
1/8 cup sugar
3 fresh bay leaves
3 sprigs fresh thyme
Coarse salt and freshly ground pepper
1 tablespoon extra-virgin olive oil

Steps:

  • Toast the coriander seeds in a small, dry skillet over medium heat until fragrant, about 2 minutes. Add mustard seeds, and toast 1 minute more; set aside.
  • Soak onions in a large bowl of ice water, about 10 minutes. Drain, pat dry, and transfer to a medium heatproof bowl.
  • Place vinegars, sugar, bay leaves, and thyme in a small saucepan and slowly bring to a boil over medium heat; add reserved coriander and mustard seeds. If mixture seems too acidic, add a little water. Pour mixture over onions and let stand 5 minutes. Drain, discarding liquid, and season onions with salt and pepper.
  • Toss onions with olive oil and store, refrigerated, in an airtight container until ready to use, 2 to 3 weeks.

1 to 2 medium red onions, thinly sliced into half moons
1 sprig fresh thyme or oregano
1/2 cup apple cider vinegar (5% acidity)
1 teaspoon sugar
1 teaspoon kosher salt

Steps:

  • Bring a medium pot of water to a rolling boil. Add the onions and cook for 30 seconds, then drain in a colander. Let cool slightly, then transfer to a sterilized glass container with a tight lid, such as a pint canning jar. Add the thyme. You want to make sure there is enough headroom at the top of the jar so that the vinegar solution can cover the onions.
  • In a second medium pot, combine the vinegar, sugar and salt. Bring to a boil and stir until the sugar and salt are dissolved, 1 to 2 minutes.
