Steps:
- In a large saucepan, combine milk, 4 cups water, butter, and salt. Bring to a boil over medium-high heat. Add grits, stirring to combine. Cook according to package directions. Add 3 cups cheese and chiles to cooked grits, stirring until combined and cheese is melted. Sprinkle remaining 1 cup cheese on top. Serve immediately.
CHILI 'N' CHEESE GRITS
Steps:
- In a large saucepan, bring water and milk to a boil. Add grits; cook and stir over medium heat for 5 minutes or until thickened. , In a small bowl, beat egg yolks. Stir a small amount of hot grits into yolks; return all to the pan, stirring constantly. , Add 3/4 cup cheese, butter, chilies and salt. Pour into a greased 1-1/2-qt. baking dish. Sprinkle with remaining cheese. Bake, uncovered, at 350° for 30-35 minutes or until a thermometer reads 160°.

I had this at a party at a colleague's house. I've loved cheese grits for years, but these are by far the best I've ever had.

- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a medium baking dish.
- Bring the milk to a boil in a pot over medium heat. Melt 1/2 cup butter in the boiling milk. Gradually mix in the grits, and cook 5 minutes, stirring constantly. Remove from heat, and season with salt and pepper. Beat with a whisk or electric mixer until smooth. Mix in the Cheddar cheese and 1/3 cup butter. Transfer to the prepared baking dish, and sprinkle with Parmesan cheese.
- Bake 1 hour in the preheated oven, until firm.

- Put oven rack in middle position and preheat oven to 350°F.
- Bring water and 3/4 teaspoon salt to a boil in a 4-quart heavy pot.
- Add grits in a slow stream, stirring constantly. Reduce heat and gently simmer, stirring frequently to avoid sticking, until very thick, about 30 minutes. (Use a long-handled spoon to avoid bubbling and popping hot grits.)
- Add butter, remaining 1 1/2 teaspoons salt, pepper, garlic, and cheese, stirring until butter and cheese are melted. Lightly beat eggs and milk in a small bowl, then stir into grits until combined.

This recipe came from a friend. The casserole is seasoned with Tex-Mex flavors. The whole recipe can be baked a day or two ahead and refrigerated, covered. Reheat, covered, in a preheated oven at 350 degrees.

- Preheat oven to 375. Lightly butter 1-quart baking casserole.
- Melt butter in medium saucepan over medium-low heat until hot. Add onion; saute for about 5 minutes or until almost tender. Add jalapeno and garlic; saute for about 2 minutes. Stir in chili powder.
- Increase heat to medium. Add chicken broth. Bring to boiling. Reduce heat to low; gradually whisk in grits. Cook, stirring constantly, for 1 to 2 minutes or until grits thicken. Remove from heat.
- Beat eggs slightly in a small bowl. Quickly beat small amount of hot grits into eggs. Return to saucepan with remaining grits, stirring constantly. Stir in cheese; pour into prepared casserole.
- Bake uncovered, in preheated oven for 45 minutes or until golden.

- Bring the chicken broth, milk, 1 1/2 teaspoons salt and cayenne to a boil in a medium saucepan. Slowly whisk in the grits and lower the heat to a simmer. Cover and cook, stirring occasionally, until thick, about 30 minutes.

CHILI CHEESE GRITS SQUARES
Found this in a Southern Living of indeterminate age. I NEVER liked grits until I fixed this with roast beef and gravy. NOW -- I pay much more attention to grits recipes, expecially when there is an unexpected, added twist. These go well with ANY beef and/or vegetables, and are just a little different. Times do not include chill time.

Being from the south, I'm very fond of grits. I really love this side dish where it is baked with cheese and garlic. This is excellent served at a brunch or with fried fish or baked ham.

- Bring the water and salt to a boil.
- Stir in the grits.
- Cook until the grits are done.
- Remove from the heat and add the next 4 ingredients; stir until the cheese and butter has melted.
- Add a very small amount of grits to the eggs and stir well.
- Add a little more and stir well again.
- The pour this mixture back into the grits and mix well.
- Pour the mixture into a greased 2 quart casserole dish.
- Bake at 325°F for 1 hour.
- NOTE: You can add chopped green or red bell pepper, green chile, or jalapeños to the mixture for a kick.
