These crumbly, savory cookies, courtesy of Anton Edelmann, maitre chef des cuisines at the Savoy in London, are served there for afternoon tea.

Yield Makes about 20

Number Of Ingredients 4

1 cup all-purpose flour, plus more for dusting
1 1/2 cups freshly grated (5 ounces) Parmesan cheese
10 tablespoons unsalted butter, room temperature
1 large egg yolk

Steps:

  • In a medium bowl, stir together flour and cheese. Work in butter with fingertips until evenly mixed. Work in egg yolk to form a firm dough. Wrap dough in plastic wrap, and leave to rest in a cool place for about 30 minutes.
  • Preheat oven to 400 degrees. On a lightly floured surface, roll dough to 1/4 inch thick. Cut out 2 1/2-inch rounds, and place on baking pan. Gather dough scraps, and roll once again. Bake until golden, about 15 minutes.

1/2 cup butter, softened
1/2 cup sugar
1 egg yolk
1 teaspoon pure vanilla extract
1 cup unbleached allpurpose flour
1/4 teaspoon salt
1 egg, beaten
Crystalline sugar, chopped

Steps:

  • Cream the butter and sugar. Add egg yolk and vanilla and beat thoroughly. Combine flour and salt. Add to the butter mixture and blend until the dough is smooth. On a very lightly floured surface, shape the dough into cylinders about 1 to 2 inches in diameter. Wrap in waxed paper or plastic wrap and chill for at least an hour.
  • Preheat oven to 350 degrees. Brush refrigerated logs with beaten egg and roll in crystalline sugar. With a sharp knife, slice the dough into rounds about 1/3-inch thick. Place 1-inch apart on a parchment covered baking sheet. Bake for about 10 minutes or until the cookies are slightly colored around the edges.

115g plain flour
55g grated strong cheese (cheddar is best)
55g unsalted butter
1 egg yolk
A pinch of salt
A pinch of freshly ground black pepper
A pinch of paprika (for those that like a little spice)

Steps:

  • Preheat oven to 180C.
  • Blend the flour, cheese and butter in a food processor until it looks like fine crumbs.
  • Add salt and pepper to taste, add paprika for an additional kick!
  • Add the egg yolk to the food processor and mix until it forms a soft ball. You may need to add a little water to encourage the ball to form.
  • Roll the mix on a lightly floured board to a thickness of 8mm and cut the biscuits.
  • Place the biscuits on a non-stick tray and bake in the oven for 10 minutes, or until golden brown.

Steps:

  • Preheat the oven to 170C/fan 150C/gas 5.
  • Mix all the ingredients together in a mixing bowl using your hands until a dough is formed.
  • Roll out the dough to a thickness of 5mm. Then use a cutter to cut out the biscuits.
  • Place the biscuits onto a floured baking tray and bake in the oven for 10-15 minutes or until golden and crispy.

1 ¾ cups all-purpose flour
¼ cup unsweetened cocoa powder
¼ teaspoon sea salt
11 tablespoons unsalted butter, softened
½ cup white sugar
1 egg yolk
1 teaspoon vanilla extract

Steps:

  • Mix flour, cocoa powder, and salt in a bowl and set aside.
  • Beat softened butter and sugar together with an electric mixer until the mixture looks like overwhipped whipped cream. Add egg yolk and vanilla extract; mix well. Add dry ingredients. Use a spatula to mix them in until evenly moistened.
  • Divide the dough into thirds or quarters and knead a little bit on a large sheet of waxed paper. Gather into a ball, then shape into a 1 1/2-inch cylinder or square tube. Wrap up with the waxed paper, pushing in the sides so that the tube is evenly thick from left to right. Repeat with remaining dough.
  • Refrigerate dough for at least 1 hour, and up to overnight.
  • Preheat the oven to 350 degrees F (175 degrees C). Line baking sheets with parchment paper.
  • Slice dough into 1/4-inch thick cookies with a sharp knife. Arrange on the baking sheets, spacing them 1/2 inch apart.
  • Bake in the preheated oven until firm, 20 to 25 minutes. Cool completely before eating.

Savoury Cheese & Walnut Sables for Cocktails and Parties! image

These delicious crisp and light little savoury biscuits/crackers are a firm favourite in our family, especially when served with the cheese board! They are also great served with soups, dips, & salads. I have used pecans instead of walnuts in the past with the same tasty results. You can omit the chilli or cayenne pepper if you are not keen on the spicy "kick" it gives! They are very nice at Christmas time if you cut them into star shapes & serve them as aperitif snacks, or with cocktails.

1/2 cup plain flour
1/2 cup self raising flour
salt
black pepper
1/4 teaspoon chili powder or 1/4 teaspoon cayenne pepper
2 ounces butter
1 1/2 cups grated cheddar cheese
1/2 cup finely chopped walnuts or 1/2 cup finely chopped pecans
2 -3 tablespoons beer or 2 -3 tablespoons milk

Steps:

  • Sift the flours, salt, pepper & chillies into a bowl together & mix.
  • Rub in the butter until it resembles breadcrumbs.
  • Add the cheese & walnuts - mix well.
  • Add the beer or milk - mix into a dough.
  • Chill for 30 minutes.
  • Roll out on a floured board and cut into small rounds.
  • Place on a greased baking (cookie) tray and bake in pre-heated oven 180C/360F for about 15 minutes or until golden brown & crisp.
  • Sprinkle with seasoning salt or Cayenne pepper if you wish.
  • Cool on a wire rack and store in airtight tins.
  • Serve with cheese, cream cheese & savoury fillings & dips, or just by themselves!
