Classic Pub Style Nachos image

I got this recipe from summer camp, and when I made them at home, my whole family was impressed. Layers of tortilla chips and salsa with the works on the side - tastes just like the nachos they serve at restaurants. Perfect for a party!

¼ cup chopped red onion
4 tomatoes, seeded and finely chopped
½ cup chopped fresh parsley
¼ cup olive oil
1 lime, juiced
1 pinch salt and black pepper
1 (8 ounce) package tortilla chips
2 cups shredded Cheddar cheese, divided
½ cup sour cream
½ cup guacamole

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C).
  • Mix together the onion, tomatoes, parsley, olive oil, lime juice, salt and pepper in a bowl.
  • Spread tortilla chips in a single layer onto a baking sheet, and spoon about 1 teaspoon of the tomato salsa onto each chip. Spread 1 cup of Cheddar cheese over the nachos, top the chips with another teaspoon or so of salsa, and top with the remaining 1 cup of cheese.
  • Bake the nachos in the preheated oven until the cheese is bubbling, about 5 minutes. Serve hot with sour cream, guacamole, and any remaining salsa on the side for dipping the chips.

Easy Cheesy Nachos image

These easy cheesy nachos are loaded with fresh ingredients. Serve with salsa, sour cream, and guacamole for a definite crowd-pleaser!

1 pound lean ground beef
2 tablespoons taco seasoning
⅓ cup water
⅔ cup black beans (drained and rinsed)
8 ounces tortilla chips
4 cups cheddar (shredded, and/or Monterey Jack cheese)
4 green onions (sliced and divided)
toppings as desired

Steps:

  • Preheat oven to 375°F.
  • Brown ground beef in a skillet until no pink remains. Drain fat. Stir in taco seasoning, water and black beans. Simmer 5 minutes or until sauce thickens and water evaporates.
  • Meanwhile, spread tortilla chips onto a baking sheet. Top with ½ of the cheese, the beef mixture, remaining cheese, and half of the green onions.
  • Bake 8-10 minutes or until cheese is melted and bubbly.
  • Remove from oven and add remaining green onions & desired toppings. Serve hot with salsa and sour cream.

Cheesy baked nachos layered with refried beans, black olives, corn, and tomatoes topped with salsa, Guacamole, jalapeño, and sour cream.

1 teaspoon vegetable oil
12 oz tortilla Chips
2 cups refried beans
4 oz canned green chilies (chopped)
1 tomato (chopped)
4 oz black olives (sliced)
⅔ cup black beans (or pinto beans drained and rinsed)
1 cup corn (canned or frozen)
4 cups shredded cheese (such as cheddar & Monterey Jack cheese )
½ cup salsa
Guacamole (optional)
1 jalapeño (pickled or fresh, sliced)
Sour Cream
hot sauce (optional)

Steps:

  • Preheat the oven to 350°F/176°C
  • Grease a 12-inch oven-safe skillet or small sheet pan with the oil.
  • Arrange a third of the tortilla chips in a single layer in the pan.
  • Top chips evenly with a third of the refried beans, green chilies, chopped tomatoes, black olives, black beans, and corn, then top with a third of the cheese.
  • Repeat with the next layer, and on the third layer, use the remaining refried beans, green chilies, chopped tomatoes, black olives, black beans, and corn Scatter with the salsa before adding the remaining cheese.
  • Bake in preheated oven until cheese melts and browns slightly, about 8 minutes.
  • Remove from oven, and top with Guacamole, jalapeño, and sour cream. Drizzle with hot sauce, if desired.
