Ridiculously Easy Chocolate Chip Cherry Scones image

These amazing Ridiculously Easy Chocolate Chip Cherry Scones will stop you in your tracks with the first melt-in-your-mouth delicious bite! And you can put them together in less than 10 minutes (hands-on time)!

Number Of Ingredients 14

½ cup dried cherries
1 cup heavy cream
8 tablespoons butter
2 cups all-purpose flour
6 tablespoons sugar
1 tablespoon cornstarch
1 tablespoon baking powder
½ teaspoon baking soda
½ teaspoon salt
½ cup mini chocolate chips
2 cups powdered sugar
4 tablespoon milk or half and half (maybe more)
1 teaspoon vanilla extract
¼ teaspoon pure almond extract

Steps:

  • Place the cherries in a small bowl and cover with boil water. Set aside while you prep the other ingredients.
  • Preheat the oven to 400 degrees. Line a sheet pan with parchment paper (you'll need 2 sheet pans for smaller scones). Set an oven rack on the middle level of the oven.
  • Measure 1 cup heavy cream and place it in the freezer for 10 minutes. Place the butter in a microwave-safe bowl, cover with a paper towel and heat on high for 1 minute. If not completely melted, return to the microwave for 10-second intervals till melted. Set aside to cool a bit while prepping other ingredients.
  • Whisk flour, sugar, cornstarch, baking powder, baking soda and salt in a medium-size bowl. Stir to combine and then add the chocolate chips and stir again. Set aside.
  • Drain the cherries well then turn out onto several thicknesses of paper toweling. Wrap the cherries in the paper towels tightly to remove any excess moisture. Transfer the cherries to a cutting board and roughly chop them with a sharp knife.
  • Transfer the cherries to the bowl with the flour mixture and stir well.
  • After heavy cream has been chilled in the freezer for 10 minutes, combine it with the melted butter. Stir with a fork until butter forms small clumps or globules (see the picture above in the post).
  • Add the cream mixture to the dry ingredients and stir with a rubber spatula until all flour is incorporated. The batter will be very thick, like cookie dough. Don't over mix it, but you do make sure all the little flour bits are incorporated.
  • Spray a cookie scooper (see Café Tips above) or large spoon with non-stick cooking spray. Scoop up scones in mounds onto the prepared pan. Space the scones at least 2-inches apart to allow for some spreading.
  • Refrigerate scones for at least 15 minutes (longer is fine).
  • Bake for 10-15 minutes or until light golden brown. Transfer to a wire cooling rack.
  • While the scones are baking, make the vanilla almond glaze. Combine the powdered sugar, milk (or half and half) and extracts in a medium-size bowl. Whisk well until smooth to make a thick, but spoonable glaze. (If the glaze is too thin, add a bit more powdered sugar, if too thick add a little more milk or half and half.) Place a sheet pan or piece of foil under the cooling rack and spoon the glaze over the warm scones as soon as they come out of the oven, You can either come the scones completely or just drizzle the icing over the scones. Any excess icing will drip onto the sheet pan or foil. If you can wait, let the glaze set before serving.
  • Store in an airtight container or freeze for longer storage.

1 cup Gold Medal™ all-purpose flour
1 cup whole wheat flour
1/4 cup sugar
1/2 teaspoon salt
1 teaspoon baking soda
1/4 cup firm butter or margarine
1 cup Yoplait® strawberry lowfat yogurt (from 2 lb container)
1/2 cup dried cherries or cranberries
1/4 cup semisweet miniature chocolate chips

Steps:

  • Heat oven to 400 . Spray cookie sheet with cooking spray.
  • In medium bowl, mix flour, sugar, baking soda and salt. Cut in butter, using pastry blender, until mixture looks like fine crumbs. Stir in yogurt, cherries and chocolate chips (dough will seem a little crumbly).
  • On lightly floured surface, shape dough into a ball. Knead dough lightly 10 times. Divide dough in half. On cookie sheet, pat each half of dough into 6-inch circle. Cut each circle into 6 wedges, using sharp knife, but do not separate wedges.
  • Bake 10 to 15 minutes or until golden brown. Immediately remove from cookie sheet to rack. Carefully separate wedges. Cool 10 minutes. Serve warm.

●2 large eggs, divided
●1/2 cup plus 2 tablespoons heavy cream
●1/2 teaspoon vanilla extract

Steps:

  • Preheat oven to 400° F. Lightly grease baking sheets.
  • Combine flour, sugar, baking powder, and salt in a large mixer bowl with paddle attachment. Add cold chopped butter and mix until butter is broken up into pea size pieces. Add chopped cherries and morsels and mix until combined. In a separate bowl, combine 1 egg, heavy cream, and vanilla extract. Add this to the flour mixture and mix until just combined. Do not overmix. Using a rolling pin, roll dough on a floured work surface to 1 inch thick. Using a 2 ½ inch round cookie cutter, cut dough into rounds and place on prepared baking sheets. Whisk together remaining egg with a splash of water, and lightly brush egg mixture on top of scones.
  • Bake for 14 to 17 minutes or until wooden pick inserted in center comes out clean. For best results, bake one baking sheet at a time. Cool on wire racks for 10 minutes. Sprinkle with additional sugar, if desired.

These are so decadent tasting, but surprisingly have very little chocolate! The bonus they cook rather quick! I use black onyx cocoa powder from the Savory Spice Shop®- it allows for a much deeper, darker, and richer chocolate taste that regular Dutch processed cocoa powder just doesn't have.

2 cups all-purpose flour, plus additional for rolling
1/3 cup sugar, plus more for sprinkling
1 teaspoon kosher salt
1 teaspoon baking powder
1/4 teaspoon baking soda
1/2 cup sour cream
1 large egg
1/2 cup dried cherries
1/2 cup semisweet chocolate chips
1/2 cup pecans, coarsely chopped
1/2 cup golden raisins
1 stick (1/2 cup) unsalted butter, frozen
Quick Strawberry Jam, recipe follows
2 pints strawberries, hulled and split
1/2 cup sugar
1 tablespoon vanilla extract
Splash balsamic vinegar

Steps:

  • Preheat the oven to 400 degrees F. Position a rack in the center of the oven.
  • In a large bowl, whisk together the flour, sugar, salt, baking powder and baking soda. Set aside. In a medium bowl, combine the sour cream with the egg. Mix in the cherries, chocolate chips, pecans and golden raisins. Set aside.
  • Use a grater with large holes to grate the butter over the dry ingredients. Alternatively, cut the butter into small cubes. Lightly work the butter into the flour with your fingers until it looks like small peas. Gently work the sour cream mixture into the flour mixture. Using your hands, gather the ingredients together from the bottom of the bowl. Wash your hands, then turn out the dough onto a lightly floured surface, then gather the dough together. Take care not to overwork the dough!
  • Gently press the dough into a loose 1-inch-thick circle, about 5 inches in diameter. Use a knife to cut the circle into 6 equal wedges (like slices from a pie). Place the wedges spaced out on a nonstick or parchment-lined baking sheet and sprinkle with sugar.
  • Bake the scones until golden brown, 15 to 18 minutes. Allow them to cool a few minutes before serving with the Strawberry Jam.
  • In a large bowl, stir together the strawberries with the sugar and vanilla to evenly coat. Allow the mixture to macerate, or sit, for about 15 minutes until the berries are "weepy"-softened and letting off liquid.
  • Transfer about three-quarters of the strawberries and some of the liquid at the bottom of the bowl to a small saucepan and bring to a simmer over medium heat. Cook, stirring occasionally, until the fruit starts to break down, 5 to 8 minutes. Remove the saucepan from the heat and stir back into the bowl of uncooked strawberries. Stir in the balsamic vinegar. Serve warm or let cool, then cover and store in the refrigerator for about a week.

⅓ cup white sugar
2 teaspoons baking powder

1 cup Amarena cherries in syrup, drained and halved (syrup reserved)
¼ cup miniature semisweet chocolate chips
½ cup heavy cream
1 large egg
1 tablespoon heavy cream

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Line 2 baking sheets with parchment paper.
  • Combine flour, sugar, baking powder, baking soda, and salt in the bowl of a food processor. Pulse 3 or 4 times to mix. Add butter and pulse until mixture resembles coarse crumbs, 20 to 25 times. Pour mixture into a large bowl. Fold in cherries and chocolate chips, making sure they are well coated with the dry ingredients.
