2-1/2 cups blanched almonds, toasted
2 tablespoons plus 1-1/4 cups sugar, divided
1/2 cup butter, softened
3 ounces semisweet chocolate, grated
1/4 cup cold brewed espresso
2 tablespoons baking cocoa
2 tablespoons orange juice
1 tablespoon instant espresso granules
1 teaspoon vanilla extract
Confectioners' sugar, chocolate curls and coffee beans, optional

Steps:

  • Place egg whites in a small bowl; let stand at room temperature for 30 minutes. Meanwhile, in a food processor, combine almonds and 2 tablespoons sugar; cover and process until ground. Set aside., In a large bowl, cream butter and remaining sugar until light and fluffy. Add egg yolks, one at a time, beating well after each addition. Beat in the chocolate, espresso, cocoa, orange juice, espresso granules, vanilla and reserved almond mixture. , Beat reserved egg whites on high until stiff peaks form. Fold egg whites into the batter., Pour into a greased 9-in. springform pan. Place pan on a baking sheet. Bake at 350° for 42-48 minutes or until cake springs back when lightly touched. Cool on a wire rack for 10 minutes. , Carefully run a knife around edge of pan to loosen; cool completely. Garnish with confectioners' sugar, chocolate curls and coffee beans if desired.

1 1/2 cups water
1/2 cup sugar
2 1/2 tablespoons instant espresso powder
12 ounces semisweet chocolate, chopped
6 tablespoons (3/4 stick) unsalted butter
Crust
3 cups macaroon cookie crumbs (about 21 Mother's brand cookies)
1/4 cup (1/2 stick) unsalted butter, melted
Filling
2 pints chocolate ice cream
2 pints coffee ice cream
3/4 cup chopped Almond Roca or Heath bars (about 14 Almond Roca or 12 miniature Heath bars, about 5 ounces)

Steps:

  • For sauce: Cook water, sugar and espresso in heavy medium saucepan over low heat, stirring until sugar dissolves. Add chocolate and butter. Stir until chocolate and butter are melted and sauce is smooth. Cool completely. (Sauce can be prepared 3 days ahead. Cover and refrigerate. Bring sauce to room temperature before using.)
  • For crust: Oil 9-inch springform pan. Mix 2 cups crumbs and butter in medium bowl. Press firmly into bottom of prepared pan. Freeze until firm.
  • For filling: Soften chocolate ice cream in refrigerator until spreadable but not melted. Spread in pan and smooth top. Freeze until firm.
  • Spoon 1/2 cup sauce over ice cream and sprinkle with remaining 1 cup cookie crumbs. Freeze until firm.
  • Soften coffee ice cream in refrigerator until spreadable but not melted. Spread in pan. Smooth surface and freeze until firm. Spread 1/2 cup sauce over coffee ice cream. Sprinkle with Almond Roca and freeze until firm. (Can be prepared 3 days ahead. Cover tightly.)
  • Soften cake slightly in refrigerator if necessary. Rewarm remaining sauce over low heat until lukewarm, stirring frequently. Remove pan sides. Cut cake into wedges. Serve, passing warm mocha sauce separately.

Steps:

  • Filling: Preheat oven to 325 degrees. Stir together cocoa, espresso powder, and granulated sugar.

55g butter , melted and cooled, plus extra for the tin
125g plain flour , plus extra for dusting
115g dark chocolate , broken into pieces
5 tsp instant espresso powder
100g blanched hazelnuts , toasted
375g light brown soft sugar
¾ tsp bicarbonate of soda
2 large eggs , lightly beaten
115g soured cream
3 tsp vanilla extract
50ml hazelnut oil
1 tbsp instant espresso powder
100g butter
150g icing sugar , sieved
75ml double cream
¾ tbsp instant espresso powder
3 tbsp light brown soft sugar
50g dark chocolate , broken into pieces
30g blanched hazelnuts

Steps:

  • Heat oven to 180C/160C fan/gas 4. Butter two 20cm cake tins and line the bases, then dust well with flour and tap out the excess. Put the chocolate in a small bowl set over a pan of gently simmering water. Stir until melted, then set aside to cool.
  • Mix the espresso with 250ml boiling water, then leave to cool. Blitz the hazelnuts in a food processor until finely ground.
  • Combine the ground hazelnuts, sugar, flour, a good pinch of salt and the bicarb in a mixer. Mix the eggs, soured cream, vanilla, butter, hazelnut oil and the cooled espresso in a jug. With the mixer on a low speed, gradually add the egg mixture to the sugar mixture and combine until smooth. Add the melted chocolate and beat for 15 seconds.
  • Divide the batter between the tins (it'll be quite thin at this stage) and bake for 35-40 mins, or until a skewer inserted into the middle of each cake comes out clean. Leave to cool in the tin for 10 mins, then run a knife around the edge and turn the cakes out onto a wire cooling rack. Leave to cool completely.
  • For the buttercream filling, dissolve the espresso powder in 1 tbsp boiling water and leave to cool. Beat the butter and icing sugar in a mixer or by hand in a bowl, gradually adding the cooled coffee. Use a palette knife to spread the buttercream over the top of one sponge.
  • To make the topping, gently heat the cream, espresso powder and sugar in a pan, stirring to help the sugar and coffee dissolve. Take off the heat and add the chocolate. Stir to melt until smooth and glossy, then leave to cool until thickened. Toast the whole hazelnuts in a dry frying pan, leave to cool, then chop very roughly (you'll want some halves in the mixture).
  • Place the top layer of cake onto the bottom layer and cover with the glaze. Scatter the hazelnuts on top.

1/2 cup almonds, skinless
1 tablespoon unsalted butter
1 tablespoon all-purpose flour
1 lb resh chestnuts or 1 cup unsweetened chestnut puree
6 large eggs, separated
1 cup sugar
1 teaspoon pure vanilla extract
1/4 cup espresso
1 pinch salt
2 cups heavy cream
8 ounces semisweet chocolate, broken into bite-size pieces
1 teaspoon instant espresso coffee, dissolved in
1/4 cup boiling water

Steps:

  • For the Cake:Place the almonds in the bowl of a food processor fitted with a knife blade and pulse until the nuts are finely ground.
  • Set aside in a small dish.
  • Preheat the oven to 325 degrees.
  • Butter and flour 2 9" round cake pans.
  • If you are using fresh chestnuts, place them in a saucepan with water to cover.
  • Simmer the chestnuts until they are tender, about 40 minutes.
  • BE sure to keep the water level over the chestnuts as they cook.
  • Drain the chestnuts, reserving 1 cup of the liquid, and set aside 6 whole nuts.
  • When they are cool enough to handle, peel the skin with a paring knife.
  • Puree the chestnuts in the bowl of a food processor and remove the puree to a small bowl.
  • If you need more liquid, add some of the reserved cooking liquid.
  • The puree should be as stiff as peanut butter.
  • Beat the egg yolks with the sugar in the bowl of an electric mixer on medium spped for 5 minutes or until the mixture forms ribbons when you raise the beater from the batter.
  • On low speed, blend in the chestnut puree, almonds, vanilla and espresso.
  • With the whisk attachment, beat the egg whites in a bowl of your electric mixer with the pinch of salt until they form soft peaks.
  • Do not overbeat.
  • Add 1/4 of the whites to the egg yolk batter and blend well; carefully fold in the remaining egg whites until you have a fluffy batter.
  • Fill the cake pans evenly with the batter.
  • Gently rap the pans on the counter to settle the batter.
  • Bake the cake layers on the center rack of the oven for about 35 minutes or until a cake tester inserted in the center comes out clean.
  • Allow the cakes to cool 10 minuts in their pans, then invert them onto wire cooling racks.
  • Place 1 cake layer on a large round cake platter.
  • Frost the sides and top of the bottom layer with Mocha Whipped Cream.
  • Place the top layer over the cream and frost the rest of the cake.
  • Cut the reserved whole chestnuts in half and arrange them over the cake.
  • Chill the cake at least 1 hoiur.
  • Remove it from the refrigerator 15 minutes before serving.
  • For the Mocha Whipped Cream:Combine the cream, chocolate and espresso in a heavy saucepan.
  • Cook, stirring, over moderate heat until the chocolate has melted and the mixture thickened.
  • Transfer the mixture to the bowl of an electric mixer and refrigerate until the mocha cream has chilled, about 30 minutes.
  • Whip the cream until stiff.
