CREAMY CHICKEN ASPARAGUS PASTA



Creamy Chicken Asparagus Pasta image

This pasta is perfectly creamy and it has just the right amount added flavor from the parmesan, Neufchatel cheese and the garlic.

1 lb boneless skinless chicken breasts (, pounded with mallet to even thickness)
1 Tbsp olive oil
1 tsp dried basil
1/2 tsp dried oregano
1/4 tsp dried thyme
1/4 tsp each salt and freshly ground black pepper (, plus more for sauce)
12 oz penne pasta
1 lb asparagus (, trimmed of ends, remaining diced into 2-inch pieces and steamed)
1 1/2 Tbsp butter
2 Tbsp all-purpose flour
2 cloves garlic (, minced)
1 3/4 cup milk ((I used 1%))
1/4 cup cream or half and half
3 oz Neufchatel cheese ((aka light cream cheese), diced into pieces)
1/3 cup finely shredded parmesan cheese
4 - 5 slices bacon (, cooked and crumbled into small pieces (optional))

Steps:

  • In a small bowl, stir together basil, oregano, thyme and 1/4 salt and pepper. Sprinkle half of the herb mixture evenly over tops of chicken. Heat olive oil in a non-stick skillet over medium-high heat.
  • Once hot, add chicken to skillet, herbed side down, then add remaining herb mixture to tops of chicken.
  • Cook chicken until fully cooked through, about 8 - 12 minutes, occasionally rotating chicken (time will vary based on thickness of chicken breasts. If chicken is browning too quickly reduce heat to medium low as needed). Transfer cooked chicken to a plate, let rest 5 minutes then dice into pieces.
  • Meanwhile cook pasta according to directions listed on package, reserving 1/2 cup pasta water before draining.
  • In a clean skillet (large and deep), melt butter over medium heat. Whisk in flour and cook 1 minute, stirring constantly, add garlic and cook 30 seconds longer, stirring constantly.
  • While whisking, slowly pour in milk then cream (whisk vigorously to break up clumps). Season with salt and pepper to taste (a fair amount of each) and bring mixture to a boil, stirring constantly.
  • Once it reaches a boil and thickens, reduce heat to medium-low, add Neufchatel and parmesan cheese and cook, stirring frequently, until cheeses have melted.
  • Toss in cooked pasta, then add cooked chicken, steamed asparagus and bacon and toss to evenly coat. Add in reserved pasta water as desired (it will thicken as it rests and the pasta will absorb the liquids, so add up to 1/2 cup as needed). Serve immediately.

2 pounds chicken breasts (cut in strips)
1 Tbsp olive oil
1 pound asparagus (ends removed)
2 Tbsp garlic ( minced)
1/2 tsp. onion powder
1/2 tsp. garlic powder
2 tsp. Italian seasoning
red pepper flakes (To taste)
1/2 cup chicken broth
1/4 cup whole milk
5 oz cream cheese
1/2 cup Parmesan cheese (shredded)
salt (to taste)
pepper (to taste)

Steps:

  • Wash and cut asparagus into bite sized pieces and set aside. Bring a pot of water to a boil over high heat on the stove.
  • Cook pasta for 8-9 minute, until al dente. During the last 5 minutes of cooking, add the asparagus to the water.
  • Drain pasta and asparagus.
  • Heat olive oil in a skillet over medium heat. Add the chicken, garlic, onion powder, garlic powder, Italian seasoning and red pepper flakes cook until light brown.
  • Add chicken broth, milk, cream cheese, and half of the Parmesan cheese.
  • Stir until well combined and the cream cheese is melted. Stir in the cooked pasta and asparagus.
  • Add remaining Parmesan cheese, and salt and pepper.

2 large skinless, boneless chicken breast halves

8 asparagus spears, trimmed - divided
½ cup shredded mozzarella cheese, divided
¼ cup Italian seasoned bread crumbs

Steps:

  • Preheat an oven to 375 degrees F (190 degrees C). Grease an 8x8-inch baking dish.
  • Place each chicken breast between two sheets of heavy plastic (resealable freezer bags work well) on a solid, level surface. Firmly pound the chicken with the smooth side of a meat mallet to an even thickness of about 1/4 inch. Sprinkle each side with salt and pepper.
  • Place 4 spears of asparagus down the center of a chicken breast, and spread about 1/4 cup of mozzarella cheese over the asparagus. Repeat with the other chicken breast, and roll the chicken around the asparagus and cheese to make a tidy, compact roll. Place the rolls seam sides down in the prepared baking dish, and sprinkle each with about 2 tablespoons of bread crumbs.
  • Bake in the preheated oven until the juices run clear when pricked with a fork, about 25 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

1 tbsp olive oil
4 skinless boneless chicken thighs, cut in half
300g fettuccine, or tagliatelle
1 tbsp butter
200ml double cream
½ a nutmeg, grated
100g parmesan
parsley, chopped, to serve

Steps:

  • Heat the olive oil in a non-stick frying pan over a medium high heat. Add the chicken thighs and fry for around 10 mins, turning half way, until they are golden brown and cooked through. Set aside to cool a little, then use two forks to shred.
  • Bring a pan of salted water to the boil and add the pasta, cook for 1 minute less that package instructions. Whilst the pasta is cooking, add the butter to the frying pan over a medium heat, scraping the bottom a little to get any of the browned bits. Tip in the cream along with the nutmeg and bring to a simmer. Add the chicken back to the pan.
  • Once the pasta is cooked, use tongs to transfer the pasta straight from the water into the frying pan with the cream mixture. Sprinkle most of the parmesan over and use the tongs to toss it all together, adding a splash of the pasta water if it looks a little stiff. Season well, then tip into bowls. Top with the remaining parmesan, a scattering of parsley, and black pepper.

2 boneless, skinless chicken breasts (if breasts are thick, lightly pound to 1-inch thickness)
2 tablespoons olive oil
1/4 cup white wine, such as Pinot Grigio
1 tablespoon salted butter
3 stalks broccolini, cut into 2-inch pieces
10 asparagus spears, cut into 2-inch pieces
2 cloves garlic, minced

3/4 cup heavy cream
1/3 cup grated Parmesan, plus a piece of Parmesan for shaving
Zest and juice of 1/2 lemon
6 fresh basil leaves

Steps:

  • Bring a large pot of salted water to a boil. Add the pasta to the boiling water and cook according to the package directions.
  • Sprinkle the chicken on one side with salt and pepper. Heat the olive oil over medium-high heat in a large skillet. When the oil is hot, add the chicken, seasoned-side down, then sprinkle the other side with salt and pepper. Cook until golden brown and cooked through, 5 to 6 minutes per side. Remove from the skillet and set aside.
  • Drain the pasta, reserving 1 cup of the pasta water. Set aside.
  • With the empty chicken skillet over a medium heat, add the white wine, scraping the bottom of the skillet with a wooden spoon, until almost fully reduced, about 30 seconds. Add the cream and bring to a simmer, stirring. Stir in the grated Parmesan, lemon zest and juice. Season with salt and pepper. Add the reserved pasta to the sauce and toss well to coat the pasta, adding the pasta water 1/4 cup at a time, if the sauce is too thick.
  • Slice the chicken breasts thinly and place on top of the pasta, or serve them whole if you prefer. Garnish with the basil leaves and Parmesan shavings.

1 cup crumbled blue cheese
1 egg
2 cups bread crumbs

1 lb penne rigate (penne pasta with ridges)
1 lb thin asparagus, ends trimmed, spears cut in 1/2-in .-long pieces
12 ounces chicken tenders, cut diagonally into 1/2 inch wide strips
1/2 teaspoon salt
1/2 cup flour
1 1/2 tablespoons olive oil
1 (16 ounce) jar alfredo sauce (homemade is best)
1 tablespoon grated lemon zest
3 tablespoons fresh lemon juice
1/4 cup freshly grated parmesan cheese (canned won't due)
1 large tomatoes, halved, seeded and diced
1/4 cup snipped fresh chives or 1/4 cup green onion
fresh ground black pepper, to taste
finely shredded lemon peel

Steps:

  • Cook pasta in a large pot of lightly salted boiling water as package directs, add­ing asparagus 3 minutes before pasta is done.
  • Meanwhile sprinkle chicken with salt, then toss with flour to lightly coat.
  • Heat oil in a large nonstick skillet over high heat. Add chicken; sauté 3 minutes until golden and just barely cooked through. Add Alfredo sauce, zest, lemon juice and cheese. Bring to a simmer and cook 1 to 2 minutes until chicken is done.
  • Drain pasta and asparagus; return to pot. Immediately add sauce, tomato, chives or green onions and pepper. Toss to mix and coat.

1/2 lb farfalle pasta (bow-tie)
6 ounces cooked chicken breasts, sliced 1/4 inch (may be grilled, poached or broiled)
2 tablespoons extra virgin olive oil
1/3 cup onion, finely chopped
1 clove garlic, minced
1/2 lb fresh asparagus, trimmed,cut into 1-1/2 inch lengths
1/2 cup red bell pepper, diced
1/2 cup basil leaves, loosely packed,sliced thinly
4 ounces blue cheese, crumbled

Steps:

  • Cook pasta according to package directions, rinse, drain and set aside.
  • In medium nonstick skillet, heat olive oil; add onion and sauté until translucent.
  • Stir in garlic and cook 1 minute more; add asparagus, red bell pepper, and 1/2 cup water.
  • Cook uncovered until water evaporates and asparagus is tender, about 4-5 minutes.
  • Stir in basil, pasta, and sliced chicken; add salt and freshly ground pepper to taste.
  • Gently blend in blue cheese and serve immediately.

2 tablespoons margarine (I Can't Believe It's Not Butter! Spread)
4 boneless skinless chicken breasts (about 1-1/4 lbs.)
1/2 cup onion, finely chopped
3 cups water
1 cup milk
8 5/8 ounces fettuccine alfredo Pasta Roni (two 4.3-Ounce packages Knorr Pasta Alfredo Sides)
8 asparagus spears, trimmed and blanched (about 1/2 lb.)
4 slices mozzarella cheese
1/4 cup blue cheese, crumbled

Steps:

  • Melt 1 tablespoon margarine in a large nonstick skillet over medium-high heat and cook chicken until thoroughly cooked, about 8 minutes, turning once.
  • Remove and set aside.
  • Melt remaining 1 tablespoon Spread and cook onion until tender, about 3 minutes, stirring occasionally.
  • Add water and milk and bring to a boil.
  • Stir in Knorr® Pasta Sides™ - Alfredo and continue boiling until pasta is tender, about 7 minutes.
  • Return chicken to skillet, then evenly top with asparagus and mozzarella cheese.
  • Cover and remove from heat.
  • Let stand until cheese is melted, about 1 minute.
  • Sprinkle with blue cheese and freshly grated black pepper.

One day I was making basic chicken Alfredo and I decided to throw in some blue cheese and veggies. It turned out great! Serve with grilled asparagus and garlic bread for a complete meal.

4 garlic cloves, minced
1 medium onion, chopped
2 cups fresh mushrooms, sliced
1 cup parmesan cheese, grated
1 cup blue cheese
1 cup heavy cream
1/2 cup butter, softened
2 cups cooked chicken, diced
1 pinch nutmeg
salt and pepper
1 lb fettuccine pasta, cooked al dente

Steps:

  • Heat a large pot to medium on the stove.
  • Place 1 T. of the butter in the pan; add the garlic, onion and mushrooms. Cook until the vegetables begin to soften, about seven minutes; stirring as needed.
  • Add the cheeses and turn heat to low. Stir in the rest of the butter, heavy cream, chicken and nutmeg. Simmer for about five more minutes or until all ingredients are hot and the sauce is slightly thickened. Add salt and pepper to taste and serve over the pasta. Enjoy!
