4 chicken breasts ((use 4 thin chicken breasts, or use 2 large chicken breasts, sliced in half, horizontally))
salt and pepper
2 cups broccoli florets (, blanched, chopped)
6 strips bacon (, cooked, chopped)
1/3 cup Mozzarella cheese (, shredded)
1 cup Cheddar cheese (, shredded)

Steps:

  • Preheat the oven to 400 F.
  • Grease the bottom of the casserole dish with olive oil. I used the the oval casserole dish measured 13 inches x 9 inches x 4 inches deep.
  • Add chicken breasts to the casserole dish. Note about chicken: use 4 thin chicken breasts, or use 2 large thick chicken breasts, sliced in half horizontally each to make 4 thin chicken breasts.
  • Sprinkle chicken breasts with salt and pepper.
  • Top with chopped and blanched broccoli florets.
  • Top with chopped cooked bacon.
  • Top with shredded Mozzarella cheese.
  • Top with shredded Cheddar cheese.
  • Bake, uncovered, for about 20-30 minutes, until the chicken is cooked through. The cooking time will depend on the thickness of your chicken breasts.

Steps:

  • Preheat oven to 350 degrees F.
  • Spray a 9 x 13 inch pan with nonstick cooking spray.
  • Place the chicken on the bottom of the pan and top with broccoli and bacon.
  • In a bowl, combine Greek yogurt, ranch dressing mix, roasted garlic seasoning and pepper; spread evenly over chicken, broccoli and bacon.
  • Sprinkle mushrooms on top of the cream layer.

Nonstick cooking spray or butter, for the baking dish
4 boneless, skinless chicken breasts
Kosher salt and freshly ground black pepper
1 medium head broccoli, cut into small florets
2 cups cooked white rice
One 10-ounce can condensed cream of chicken soup
1 cup sour cream
1/2 cup mayonnaise
1 tablespoon lemon juice
10 ounces Cheddar, grated (about 2 1/2 cups)

Steps:

  • Preheat the oven to 350 degrees F. Grease a 9-by-13-by-2-inch baking dish with nonstick cooking spray or butter.
  • Place the chicken in a large pot with water to cover. Add some salt, bring to a boil, then reduce the heat to a low simmer and cook the chicken until tender, about 45 minutes. Drain the chicken, cover, and refrigerate until cool, or up to 24 hours. Shred.
  • Meanwhile, bring a medium pot of generously salted water to a boil. Add the broccoli florets, and boil until crisp-tender, 2 to 3 minutes.
  • Spread the rice in an even layer in the baking dish. Make a second layer with the broccoli. In a large bowl, mix the chicken soup, the sour cream, mayonnaise, lemon juice, shredded chicken, half the Cheddar and some salt and pepper. Pour the mixture over the broccoli and top with the remaining Cheddar. Bake for 40 minutes; let stand for 5 minutes before serving.

1 cup mayonnaise
1 can cream of mushroom soup

1 lemon juice, juiced
1 box rotini pasta

Steps:

  • Preheat the oven to 350°. Spray a 9x13 inch (22x33 cm) pan with non-stick cooking spray.
  • Cook the pasta according to package directions.
  • Cut up the broccoli and place in the bottom of the pan. Lay the chicken on top of broccoli. Season the chicken with garlic powder and lemon herb seasoning.
  • Mix together the mayonnaise, cream of mushroom soup, Parmesan and lemon juice. Pour the mixture over the chicken and broccoli. Sprinkle with Parmesan.

I made it the first time because I was craving something that was sort of like a chicken cordon blue, but with bacon, broccoli and provolone, since that's what I had in the fridge! I also wanted it to be a casserole so my wife could make it when she got home from. So I made it in the morning, put it in a baking dish in the fridge and they cooked it up when they got home. If you're not a big fan of mustard, certainly reduce it, or omit it altogether, it should still be just as good.

3 lbs boneless skinless chicken breasts
1/2 lb bacon
2 cups broccoli
8 ounces provolone cheese, shredded
1 cup chicken broth
1/4 cup heavy cream
1/4 cup Dijon mustard
1 teaspoon oregano
1 teaspoon basil

Steps:

  • Pre-heat oven to 350.
  • Cut bacon into 1" pieces and fry until mostly crisp.
  • Cut chicken into cubes and cook in a frying pan until it is no longer pink.
  • Place chicken and bacon into a bowl, and put in the fridge to cool.
  • In a mixing bowl combine broth, cream, mustard, herbs and salt and pepper to taste.
  • When chicken and bacon has cooled most of the way, stir in shredded cheese and broccoli.
  • Place chicken mixture into a casserole dish, then pour sauce over the top.
  • If cooking immediately, place in oven and bake 25-30 minutes, or until cheese is melted.
  • To refrigerate for later, cover dish with tin foil and place in fridge. When ready to cook, pull casserole out of the fridge and preheat the oven to 350. Bake, covered for 30 minutes, then uncover dish and bake for another 10 minutes, or until the cheese is melted and the food is hot all the way through.

The fastest way to pre-cook the broccoli, chicken and bacon is by using a combination of the microwave and stovetop. I cooked the bacon and chicken in the microwave--separately--and I steamed the broccoli--but you could also nuke the broccoli and saute the other two).

1 head broccoli, chopped, cooked
4 chicken breasts, diced, cooked
7 slices bacon, chopped, cooked
3/4 cup sour cream

1 1/4 cups monterey jack cheese, grated
1 cup chicken stock
1/4 cup milk
1/8 teaspoon ground pepper
1/2 teaspoon garlic powder
1/2 cup monterey jack and cheddar cheese blend, grated

Steps:

  • In a medium saucepan, heat chicken stock until boiling.
  • Reduce heat to low and stir in sour cream and milk.
  • When dissolved, stir in monterey jack.

  • Add garlic powder, ground pepper, and bacon grease (optional).
  • Whisk until smooth.
  • Remove sauce from stove and pour into the bottom of a rectangular glass casserole dish.

  • If you don't have cooked bacon start by cooking the bacon how you normally would, either on a frying pan or in the oven. Once the bacon is done set it aside for the topping later.
  • Heat a large deep pan to medium heat. While waiting for the pan to heat up season the chicken with pepper and garlic powder. Once the pan is hot, add the extra virgin olive oil to the pan.
