2 lbs chicken breasts (cut to similar sizes)
1/2 cup Italian dressing
1 tablespoon olive oil
2 tablespoons lemon juice
2 garlic cloves (crushed)
1 shallot (minced)
1/2 teaspoon pepper (cracked)
1/2-1 teaspoon hot sauce

Steps:

  • Mix marinade ingredients and place chicken and marinade in a gallon ziplock bag.
  • Marinate 30 mins to 24 hours.
  • Preheat grill to med high.
  • Grill breasts for 3 to 4 mins per side or till juices run clear and chicken reached 155 degrees.
  • Remove from grill and wrap in foil. Let sit about 5 minutes Chicken will continue to cook to 160.
  • You should know your grill. Chicken may take a little longer to cook or it may take less time. The sitting is critical to the chicken staying moist.
  • Enjoy.

Mediterranean drizzle:
1 large garlic clove, pressed
2 teaspoons coarse kosher salt
2 tablespoons fresh lemon juice
6 tablespoons extra-virgin olive oil
Chicken:
1/2 cup fresh lemon juice
1/2 cup chopped fresh Italian parsley
1/4 cup olive oil
6 garlic cloves, minced
1 teaspoon salt
1/2 teaspoon ground black pepper
2 3 1/2- to 4-pound free-range chickens
Grilled Lemons, Baby Artichokes, and Eggplant

Steps:

  • For Mediterranean drizzle:
  • garlic and 2 teaspoons coarse kosher salt in mortar with pestle or in small bowl with back of spoon until paste forms. Whisk in lemon juice, then oil. DO AHEAD: Can be made 1 day ahead. Cover and chill. Bring to room temperature before using.
  • For chicken:
  • Whisk lemon juice, parsley, olive oil, garlic, 1 teaspoon salt, and 1/2 teaspoon pepper in medium bowl. Place 1 whole chicken in each of 2 resealable plastic bags. Divide lemon marinade between bags. Seal bags, releasing excess air. Turn to coat chicken with marinade. Chill chicken at least 1 hour and up to 1 day, turning bag occasionally.
  • Prepare barbecue ( medium heat). If using 2-burner gas grill, light 1 burner. If using 3-burner gas grill, do not light center burner. If using charcoal grill, light briquettes in chimney and pour onto 1 side of lower grill rack (you'll need to light more briquettes in chimney to replenish during grilling). Remove chickens from marinade.
  • Sprinkle chickens inside and out with salt and pepper. Tie legs together. Place chickens, breast side down, over unlit side of grill. Cover and grill chickens 45 minutes, adjusting gas levels if using gas grill or adjusting vents and adding more charcoal as needed if using charcoal grill to maintain barbecue temperature between 350°F and 400°F. Turn chickens breast side up. Cover and grill until instant-read thermometer inserted into thickest part of thigh registers 165°F., continuing to maintain barbecue temperature between 350°F and 400°F, about 35 minutes longer. Transfer chickens to work surface; let rest 10 minutes.
  • Carve chickens and transfer to platter. Arrange Grilled Lemons, Baby Artichokes, and Eggplant around chickens. Spoon some of Mediterranean drizzle over chicken and vegetables. Garnish with grilled lemons for squeezing over.

3 tablespoons teriyaki sauce
8 boneless skinless chicken breast halves (4 ounces each)

Steps:

  • In a small bowl, combine salad dressing and teriyaki sauce. Remove 1/4 cup for basting; cover and refrigerate. Place chicken in a large resealable bag; add remaining marinade. Seal bag and turn to coat; refrigerate for 8 hours or overnight, turning occasionally., Drain and discard marinade from chicken. Grill chicken, covered, over medium heat for 3 minutes on each side. Baste with reserved marinade. Grill 3-4 minutes longer on each side or until a thermometer reaches 170°.

1 (16 ounce) bottle Italian-style salad dressing
1 teaspoon garlic powder
1 teaspoon salt
4 skinless, boneless chicken breast halves

Steps:

  • In a shallow baking dish, mix the salad dressing, garlic powder, and salt. Place the chicken in the bowl, and turn to coat. Marinate in the refrigerator at least 4 hours. (For best results, marinate overnight.)
  • Preheat the grill for high heat.
  • Lightly oil grate. Discard marinade, and grill chicken 8 minutes on each side, or until juices run clear.

pam no-stick grilling cooking spray
3 tablespoons extra virgin olive oil
1 tablespoon lemon juice
1 tablespoon dried Italian seasoning (I sometimes use a Middle Eastern spice mix called Bhaharat that I received in a "B" swap)
1 teaspoon garlic salt
1/4 teaspoon ground black pepper
4 boneless skinless chicken breasts

Steps:

  • Coat grill pan with no-stick cooking spray. Heat over medium heat.
  • Combine olive oil, lemon juice, Italian seasoning, garlic salt, and pepper, in a medium microwavable bowl. Microwave on HIGH for 1 minute. Stir. Dip chIcken in olive oil mixture to coat evenly.
  • FOR INSIDE COOKING: Place on hot grill pan. Cook 6-8 minutes per side until juices run clear and thermometer reads 165 degrees. Allow to rest 5 minutes before serving.
  • FOR OUTDOOR GRILL: Coat unheated grill grate with no-stick cooking spray. Preheat grill to medium-high heat. Grill chicken 6-8 minutes per side until juices run clear and thermometer reads 165 degrees F. Allow to rest 5 minutes before serving.

6 whole boned chicken breasts (skin on)
2 tablespoons onions, green finely chopped or 2 tablespoons yellow onions, finely chopped
3 cloves garlic, minced
garlic powder, salt and pepper (for sprinkling)
1/2 teaspoon paprika
1/4 cup grated parmesan cheese
1 teaspoon fresh rosemary, minced
2 tablespoons fresh parsley, minced
of butter and olive oil
1 1/2 cups bread, crumbs
1/2 lb thinly sliced ham or 1/2 lb prosciutto, finely chopped
12 wooden toothpicks (soaked in water for 5 minutes)

Steps:

  • Preheat grill so that coals are white hot in time for grilling.
  • Melt butter in microwave, stir in oil. To this warm mixture, add Parsley, Rosemary, minced garlic, chopped onion and paprika (a pinch of rubbed sage may optionally be added if you have it on hand, but be careful not to overdo). Allow the herbs to infuse for 10 minutes. Remove 3-4 tablespoons to a separate small bowl and use this to brush both sides of the chicken.
  • Place chicken breasts, skin side down, on a layer of wax paper or plastic wrap. Pound lightly with the back of a heavy frying pan or meat mallet until slightly flattened out. Sprinkle chicken with salt, pepper, and garlic powder.
  • In a small bowl, mix together bread crumbs with Parmesan cheese and chopped ham. Add remaining butter, oil and herb mixture to bread crumbs and stir until well combined (if mixture seems too thick, add a tablespoon or so of warm water or more olive oil).
  • Spoon stuffing mixture into the hollow part inside the chicken breasts. Fold edges of chicken over stuffing to cover and fasten together securely with wooden toothpicks.
  • Place chicken (about 6 inches away) over white hot coals on grill, skin side down. Grill on one side for about 20 minutes; brush again with more butter/oil mixture (if you run out, just use olive oil spray). Turn chicken over and grill for another 20 minutes or until chicken is tender and golden. Remove toothpicks and serve.
  • Variation: Place a slice of provolone cheese over each breast before stuffing and rolling up.
  • To make a great take-along lunch, this may also be prepared in aluminum foil pouches (one for each breast). Spray the inner side of the foil with olive oil and add a slice of or two of onion to each packet for extra flavor.
