Moroccan Chicken with Eggplant, Tomatoes, and Almonds image

6 tablespoons olive oil, divided
3 cups sliced onions
6 large garlic cloves, minced
1 tablespoon Hungarian sweet paprika
1 1/2 teaspoons coarse kosher salt
1 teaspoon turmeric
1 teaspoon ground coriander
1 teaspoon fennel seeds, ground
1 teaspoon freshly ground black pepper
1/2 teaspoon ground cumin
1/2 teaspoon ground ginger
2 cups drained canned diced tomatoes (from 28-ounce can)
1 cup water
3 tablespoons (or more) fresh lemon juice
8 chicken thighs with bones, skinned
8 chicken drumsticks, skinned
1 large eggplant, unpeeled, cut into 1-inch cubes
1 tablespoon chopped fresh marjoram
1/2 cup whole blanched almonds or slivered almonds, toasted
Chopped fresh cilantro

Steps:

  • Heat 2 tablespoons olive oil in heavy large wide pot over medium heat.
  • Add onions and garlic. Cover and cook until onions are soft, about 10 minutes. Add paprika, salt, turmeric, coriander, fennel, pepper, cumin, and ginger; stir 1 minute. Add tomatoes, 1 cup water, and 3 tablespoons lemon juice; bring to boil. Arrange all chicken in single layer in pot; spoon some sauce over. Bring to boil. Reduce heat to medium-low, cover, and simmer 15 minutes. Turn chicken over, cover, and simmer until chicken is tender, about 20 minutes longer.
  • Meanwhile, preheat oven to 400°F. Brush large rimmed baking sheet with olive oil. Place eggplant and remaining 4 tablespoons olive oil in large bowl; toss to coat. Spread eggplant out on prepared baking sheet and bake until soft and brown, stirring occasionally, about 25 minutes. (Chicken and eggplant can be made 1 day ahead. Cool slightly. Refrigerate separately until cold, then cover and keep refrigerated.)
  • Stir eggplant and marjoram into chicken. Simmer uncovered 10 minutes to heat through and blend flavors. Season stew to taste with more lemon juice, if desired, and salt and pepper. Transfer chicken to large shallow bowl. Sprinkle with almonds and cilantro.

3 eggplants, peeled and cut lengthwise into 1/2 inch thick slices
3 tablespoons olive oil
6 skinless, boneless chicken breast halves - diced
1 onion, diced
2 tablespoons tomato paste
½ cup water
2 teaspoons dried oregano
salt and pepper to taste

Steps:

  • Place eggplant strips in a big pot of lightly salted water and soak for 30 minutes (this will improve the taste; they will leave a brown color in the pot).
  • Remove eggplant from pot and brush lightly with olive oil. Saute or grill until lightly browned and place in a 9x13 inch baking dish. Set aside.
  • Saute diced chicken and onion in a large skillet over medium heat. Stir in tomato paste and water, cover skillet, reduce heat to low and simmer for 10 minutes.
  • Preheat oven to 400 degrees F (200 degrees C).
  • Pour chicken/tomato mixture over eggplant. Season with oregano, salt and pepper and cover with aluminum foil. Bake in the preheated oven for 20 minutes.

Priorat, near the Mediterranean coast of Spain and a stone's throw from Barcelona, produces wines with dark fruit flavors, spice, bold complexity and ample alcohol. To compete with reds like these, the food alongside must take no prisoners.It would have been simple enough to sear some rib-eyes, lamb chops or lusty sausages. But I looked across the Mediterranean to North Africa and came up with a tagine in which chicken is coated with robust spices and becomes more than mere white noise. Eggplant and olives round out the dish, and a splash of sherry vinegar brightens the sauce.If you have yet to equip your kitchen with a genuine terra-cotta tagine, you can cook the dish in a covered sauté pan or a fancy-pants tagine of enameled cast iron.

2 tablespoons ground cumin
1 tablespoon smoked paprika
1 chicken, cut in 10 pieces
3 tablespoons extra virgin olive oil
1 medium red onion, quartered lengthwise
2 small eggplants, about 1 pound total, quartered lengthwise
3 garlic cloves, slivered
1/3 cup pitted black niçoise olives
1/2 cup chicken stock
2 tablespoons sherry vinegar
Salt

1 tablespoon chopped tarragon, plus a few sprigs for garnish

Steps:

  • On a plate, blend the cumin and paprika together. Dip the chicken pieces in spices to coat both sides. Heat 1 tablespoon oil in a large, heavy skillet over medium-high heat and brown chicken on both sides. Remove.
  • Add the onions to the skillet and sear on cut sides until browned. Remove. Lower heat to medium and add remaining 2 tablespoons oil. Lightly brown eggplant on cut sides. Remove. Add garlic and olives, cook until the garlic has softened, then add the stock and vinegar. Bring to a simmer, deglazing the pan, then turn off the heat.
  • Coarsely chop the browned onions. Scatter them in a terra-cotta tagine or in a sauté pan with a cover, then lay the chicken pieces on top. Chop the eggplant in 1-inch chunks and distribute them over the chicken. Pour stock mixture, with olives and garlic, on top. Season with salt and pepper and scatter chopped tarragon on top. Cover the tagine or pan and cook on medium-low heat for 40 minutes. Remove from heat and let rest 10 minutes. Garnish with tarragon sprigs and serve with rice or couscous.

1 pound boneless, skinless chicken thigh(s), boneless, cut into 1 1/2-inch pieces
1 medium onion(s), chopped
1 medium celery, stalk
1/2 medium sweet red pepper(s), chopped
1/2 medium green pepper(s), chopped
3 Tbsp red wine vinegar
3 medium tomato(es), very ripe, chopped
2 tsp sugar
10 items olive(s), kalamata, pitted and chopped
3 medium garlic clove(s), chopped
1/2 tsp table salt
2 Tbsp capers
1/8 tsp black pepper, or to taste

Steps:

  • In a colander, sprinkle eggplant with salt and toss. Set aside. Spray a large, nonstick skillet with olive oil cooking spray. Sauté chicken over high heat until browned. Remove and set aside. Rinse eggplant with water and let drain. Combine onion, celery, garlic, red and green peppers and eggplant in skillet and sauté over medium heat until softened, about 10 minutes. If skillet becomes too dry add a tablespoon or 2 of water. Add chicken, tomatoes, vinegar, sugar, olives, capers and ground pepper to pan. Stir. Cover and let simmer over medium-low heat for 10 minutes. Serve. I served it over brown rice.

A flatbread topped with roasted bell peppers and eggplant. Can't get much better. This takes some time, but is well worth it. Prep time includes roasting the vegetables. From Williams-Sonoma with a few of my own changes.

1 red bell pepper
1 green bell pepper
1 small eggplant
1 2/3 cups all-purpose flour
1/2 teaspoon salt
2 teaspoons baking powder
1/2 tablespoon olive oil
1 egg yolk
3/4 cup water
1 garlic clove, minced
12 black olives, pitted and coarsely chopped
salt & fresh ground pepper
2 large ripe tomatoes, cut into slices
4 tablespoons olive oil

Steps:

  • Place the bell peppers and eggplant on a baking sheet and roast, turning several times to cook evenly, until peppers are blistered and blackened all over and the skin of the eggplant is wrinkled and shriveled, about 45 minutes.
  • Transfer the peppers and eggplant to a plate, cover and set aside until cool enough to handle, about 15 minutes.
  • Peel the charred skins off the roasted vegetables. Slice each bell pepper in half lengthwise and discard the seeds, ribs and stems. Cut the peppers and egglannt into thin strips.
  • DOUGH:.
  • In a bowl, sift together the flour, salt and baking powder.
  • Make a well in the flour and add the olive oil and egg yolk.
  • Gradually add the water, mixing the wet ingredients into the flour little by little with a wooden spoon.
  • Turn the dough out onto a lightly floured board and knead until soft, smooth and elastic, about 1 minute.
  • Form the dough into a ball and place in a large, lightly oiled bowl.
  • Cover with a moist towel and let stand in a warm place until the dough rises slightly, about 30 minutes.
  • In another large bowl, combine the eggplant and bell pepper strips with the garlic and olives, and season generously with salt and pepper.
  • Lightly oil a 12 X 9 inch rimmed baking sheet.
  • On a lightly floured work surface, roll out the dough into a rectangle to fit the pan.
  • Press into the prepared pan and trim away any excess dough.
  • Cover the dough base with the tomato slices, drizzle 2 Tbs. of the olive oil over the tomatoe slices. Arrange the eggplant mixture evenly over the tomatoes and drizzle with remaining olive oil.
  • Bake at 450 degrees F until the edges are begining to brown, about 25 minutes.
  • Remove from the oven and let cool slightly.
  • Cut into squares and serve warm.

1 (20 ounce) can pineapple rings in juice, drained and juice reserved
2 tablespoons white sugar
1 tablespoon oil
1 pound skinless, boneless chicken breast halves
1 large eggplant, cubed
1 medium green bell pepper, cut into 1-inch pieces
1 medium red bell pepper, cut into 1-inch pieces
1 large onion, cut into 1-inch pieces
¼ teaspoon salt
¼ teaspoon ground black pepper

Steps:

  • Zest 1/2 of one lemon, then juice it. Combine zest and juice in a bowl with pineapple juice, sugar, salt, and pepper; mix well.
  • Heat oil in a large skillet over medium to medium-high heat. Add chicken and sear for 1 to 2 minutes per side. Pour pineapple juice mixture over chicken and lay pineapple rings over top.
  • Add eggplant, bell peppers, and onion to the skillet. Juice remaining lemon over top. Reduce heat to medium and cook until eggplant and vegetables are soft and chicken is no longer pink in the center and the juices run clear, 10 to 15 more minutes.

30 ounces diced tomatoes

6 ounces roasted red peppers, sliced

Steps:

  • Preheat oven to 425. Season chicken and eggplant with salt and pepper, set chicken aside.
  • In a medium pot and add diced tomatoes, paste, olives, honey, oregano, parsley and salt and pepper to taste. Bring to a boil and let simmer uncovered.
  • In a small pot heat oil then fry the garlic slices to a golden color. Remove and set garlic aside.
  • Brush eggplant with the garlic infused oil and place on a non stick sheet pan. Bake to brown both sides. About 10 minutes per side. Remove from oven and set aside. Or pan fry to brown both sides.
  • Lower oven to 350 degrees.
  • Meanwhile In a fry pan heat 2 tablespoons of the garlic infused oil over medium high heat, when hot brown chicken pieces. 1-2 minutes per side. Remove and set aside. Will not be cooked through at this point.
  • Add the basil to the sauce.
  • Oil a casserole dish with the garlic infused oil and spoon 1 cup sauce into casserole dish.
  • Place the chicken slices in casserole dish, top with eggplant rounds, arrange the roasted red peppers over the eggplant top with the cheese. Spoon sauce over the cheese.
  • Sprinkle with Parmesan.
  • Bake 20 minutes.
  • Garnish with the fried garlic.

1 chicken, 3 pounds, cut into quarters
Salt to taste
Freshly ground pepper to taste
2 small eggplants, about 1 1/4 pounds total
1 large onion, about 1/2 pound, peeled
2 small tomatoes, about 1/2 pound total
2 tablespoons olive oil
1 tablespoon finely minced garlic
1/4 cup red-wine vinegar
1/2 cup dry white wine
1/2 cup fresh or canned chicken broth
1 bay leaf
1/4 teaspoon dried thyme
1/4 teaspoon dried hot red pepper flakes
Finely chopped parsley for garnish

Steps:

  • Sprinkle chicken pieces with salt and pepper. Make slight gashes at thigh and wing joints to facilitate cooking. Set aside.
  • Trim off ends of eggplants. Cut lengthwise in half and cut each half lengthwise into 3 long slices. Cut slices crosswise into inch pieces. There should be about 5 cups.
  • Cut onion in half vertically. Cut each half crosswise into very thin slices. There should be about a cup.
  • Cut cores from tomatoes. Cut tomatoes into inch cubes or slightly smaller. There should be about 1 1/2 cups.
  • Heat oil in large skillet and add chicken pieces skin side down. Cook about 5 minutes on one side and turn, cooking 5 minutes more. Transfer chicken to platter.
  • Add onions, garlic and eggplant to skillet. Cook, stirring, about a minute and add tomatoes. Stir.
  • Add vinegar, wine and broth and bring to boil. Stir. Add bay leaf, thyme, salt, pepper and pepper flakes. Stir and return chicken to the skillet. Turn pieces in sauce.
  • Cover closely and let cook, basting occasionally, about 20 minutes or until chicken is done. Remove bay leaf. Serve with sauce poured over and sprinkled with parsley.
