Chicken Breasts With Pears and Dried Figs image

Clipped out of our local newspaper; this Mediterranean-inspired recipe courtesy of that gang of rogues: The Pear Bureau Northwest. Original recipe called for fresh thyme.

1/2 cup goat cheese (I used French feta-read *NOTE)
3/4 teaspoon fresh oregano or 3/4 teaspoon fresh marjoram
1 garlic clove, finely minced
3 pears, cored, peeled and cut in half
1 1/3 cups chicken broth
1 1/4 cups dried figs, chopped
3/4 cup dark balsamic vinegar, plus
1 tablespoon dark balsamic vinegar
1/4 cup sugar
6 boneless skinless chicken breasts (about 3 pounds)
1 teaspoon salt
1 teaspoon cracked black pepper
3 figs, cut up
1 sprig fresh oregano or 1 sprig fresh marjoram

Steps:

  • *NOTE: If using feta, it is high in sodium, so you may want to adjust the amount of salt indicated in the recipe. Also, the directions did not say to peel the pears, but I did anyway.
  • In a small bowl, mix together the cheese, fresh herb and garlic. Place 2 rounded tablespoons of the mixture onto the center of each pear half.
  • In a blender or food processor, puree the chicken broth, figs, balsamic vinegar and sugar until smooth. (You may have to do this in batches.).
  • Pour the chicken broth mixture into a strainer over a bowl. Using a spatula, press the liquid through the strainer into the bowl. Discard the solids.
  • Pour HALF of the fig sauce into a 13 x 9-inch baking pan. Place the chicken breasts over the sauce in the pan. Sprinkle with salt and pepper.
  • Now take a filled pear half and place cut side down (that means the filled half is placed cut side down) over each chicken breast. Drizzle with the remaining fig sauce.
  • Preheat oven to 375 degrees.
  • Cover baking dish with foil and bake in oven for 20 minutes.
  • Remove the foil and continue baking, basting the chicken occasionally, for approximately 30-40 minutes or until the internal temperature of the chicken reaches 160 degrees.
  • Cut chicken breast and pear in half to serve. Spoon fig sauce over pear. Garnish with cut up figs and sprigs of herbs.

This Chicken with Dried Figs and Balsamic Honey Vinegar was one of the easiest and most delightful roast dishes I've made. I used a few pieces of chicken thighs with bone, dried, organic figs and vegetables and arranged them in a roasting pan. I poured the balsamic honey glaze all over. The chicken resulted in tender, succulent pieces with a caramel-colored glaze all over. The carrots took on the sweet flavor of the balsamic liquid. And leafy, green spinach leaves cooked by themselves in the residual heat of the roast. This was inspired by a recipe for Chicken with Figs on The Kitchn. Serves 4.

Number Of Ingredients 14

2 pounds (bone-in, about 4 to 6 pieces chicken thighs)
1 teaspoon salt
1 teaspoon black pepper powder
4 Tablespoons (divided, use 2 Tablespoons to pan sear chicken, rest for the roast extra virgin olive oil)
1/2 cup Honey Ridge Farms Balsamic Honey Vinegar
1 Tablespoon Dijon mustard
1 Tablespoon Honey Ridge Farms Honey Creme Clover
1 Tablespoon soy sauce
4 cloves (peeled, minced garlic)
3/4 cup organic chicken broth
1 piece (peeled, sliced carrot)
6 ounces about 10 to 12 pieces organic dried figs
2 cups fresh spinach leaves
for serving boiled rice

Steps:

  • In a bowl, sprinkle the chicken with salt and black pepper. Spread seasoning all around. Set chicken aside in the refrigerator for at least an hour so the flavors set in.
  • In a large skillet, over medium high heat, add two tablespoons of the extra virgin olive oil. After 1 to 2 minutes, when oil is hot enough, pan sear the chicken thighs. Brown the chicken for about 5 to 6 minutes, then remove the pieces and set aside in a platter.
  • In a medium-sized bowl, mix together the remaining two tablespoons of extra virgin olive oil, balsamic honey, mustard, honey, minced garlic,soy sauce and chicken broth. Blend well and set aside.
  • Grease with cooking spray a large roasting pan that will fit the chicken pieces. Place the chicken pieces, the figs and carrots all around. Pour the liquid glaze on the chicken, figs and carrots. Cover the pan with foil and seal well.
  • Roast the chicken and figs in the preheated oven. Cooking time: It takes 35 minutes per pound of chicken (with bone) to roast. For this amount of chicken, roast in a 375 F oven for about two hours.
  • At the last 5 minutes of roasting, remove the foil cover. Add the spinach leaves all around the chicken and figs. The spinach cooks in the residual heat of the roast in five minutes.
  • Serve chicken with figs warm with boiled rice.
  • Cook's Comments: Fresh figs are in season from the late summer to early fall here in America. They are grown in California and in states with warmer climates. Since I live on the east coast and miss out on fig season, I've used organic dried figs for cooking with meats or baking and the results are always great.

This quick skillet-spiced chicken braise is a perfect low-calorie, full-flavored weeknight dinner. The sweet and sour flavors of dried figs and vinegar are the stars of the sauce for the chicken, along with fragrant and aromatic basmati rice that's steamed with cinnamon and bay leaves.

1 cup basmati rice, well rinsed
1 cinnamon stick
3 bay leaves, preferably fresh
Kosher salt
1 1/4 pounds skinless, boneless chicken thighs, cut into 2-inch pieces
2 teaspoons paprika
1 tablespoon vegetable oil
1 shallot, minced
1 cup dried figs, halved
1/4 cup white wine vinegar
1 cup low-sodium chicken broth
1/4 cup chopped fresh parsley

Steps:

  • Combine the rice, cinnamon stick, 1 bay leaf, 1/2 teaspoon salt and 1 1/2 cups water in a saucepan over medium-high heat. Bring to a boil and stir. Reduce the heat to low, cover and cook until the liquid is absorbed and the rice is tender, about 17 minutes. Remove from the heat and set aside, covered.
  • Meanwhile, season the chicken with salt and the paprika. Heat a large skillet over medium-high heat. Add the vegetable oil and heat until shimmering. Add the chicken and cook, undisturbed, until well browned, 4 to 5 minutes. Flip and cook until browned on the other side, 3 to 5 more minutes. Remove to a plate.
  • Add the shallot to the skillet; cook, stirring, 30 seconds. Stir in the figs, then add the vinegar and remaining 2 bay leaves. Cook, scraping up any browned bits, until the liquid is mostly reduced, 1 minute. Return the chicken to the skillet along with any juices from the plate; add the broth. Bring to a boil, then reduce the heat, cover and simmer until the chicken is cooked through and the liquid is reduced but still saucy, 10 to 12 minutes; season with salt.
  • Fluff the rice, discarding the cinnamon stick and bay leaf, and divide among plates. Top with the chicken, figs and sauce and sprinkle with the parsley.

6 medium shallots
4 medium-large parsnips, peeled and cut into 1-inch chunks
1/3 cup apricot preserves
2 tablespoons whole-grain mustard
1 teaspoon ground ginger
1/2 teaspoon ground cumin
8 medium skin-on, bone-in chicken thighs
Kosher salt and freshly ground pepper
1/2 cup pitted prunes, roughly chopped
1/2 cup dried apricots, roughly chopped
1 tablespoon apple cider vinegar

Steps:

  • Position a rack in the center of the oven and preheat to 425. Heat the olive oil in a large ovenproof skillet over high heat. Add the shallots and parsnips and cook until golden, shaking the pan, 2 minutes.
  • Whisk the apricot preserves, mustard, ginger and cumin in a bowl. Season the chicken with salt and pepper; toss with the apricot glaze.
  • Scatter the dried fruit in the skillet. Place the chicken, skin-side up, on top. Add 1/4 cup water and bring to a boil. Cover and cook until heated through, 6 minutes. Uncover and transfer the skillet to the oven. Cook until the chicken and vegetables are tender and golden, 20 to 25 minutes.
  • Push the chicken to the side of the skillet, then stir the vinegar into the pan juices (add up to 2 tablespoons water if the sauce is too thick). Serve from the skillet.

1 egg, beaten
1 cup buttermilk
1 ½ teaspoons garlic powder
1 cup all-purpose flour
1 cup seasoned bread crumbs

1 quart oil for frying

Steps:

  • Place chicken strips into a large, resealable plastic bag. In a small bowl, mix the egg, buttermilk and garlic powder. Pour mixture into bag with chicken. Seal, and refrigerate 2 to 4 hours.
  • In another large, resealable plastic bag, mix together the flour, bread crumbs, salt and baking powder. Remove chicken from refrigerator, and drain, discarding buttermilk mixture. Place chicken in flour mixture bag. Seal, and shake to coat.
  • Heat oil in a large, heavy skillet to 375 degrees F (190 degrees C).
  • Carefully place coated chicken in hot oil. Fry until golden brown and juices run clear. Drain on paper towels.

Cooked figs go beautifully with meat, especially a griddled or pan-cooked chicken breast. I always seem to circle back to feta when I'm working with figs in a savory dish. I love the flavor of the earthy, salty cheese against the subtle, sweet fruit.

4 5- to 6-ounce boneless, skinless chicken breasts
Salt and pepper
2 teaspoons chopped fresh rosemary
2 garlic cloves, peeled and crushed
2 tablespoons plus 2 teaspoons extra-virgin olive oil
2 ounces feta, crumbled (about 1/2 cup)
1 1/4 teaspoons fresh thyme leaves
1/2 cup red wine
8 fresh figs, cut in small dice
1 tablespoon honey
Rosemary sprigs for garnish (optional)

Steps:

  • One at a time, place each chicken breast between pieces of plastic wrap or parchment and lightly pound with a mallet until it is 1/2 to 3/4 inch thick. Chicken breasts should be of uniform thickness.
  • Place chicken breasts in a bowl, season with salt and pepper and toss with rosemary, garlic and 2 tablespoons olive oil. Cover bowl and refrigerate for 30 minutes to an hour.
  • Place oven on lowest setting, around 200 degrees. Cook the chicken: Heat a large cast-iron skillet or grill pan over high heat for 5 minutes. Add remaining olive oil to pan and reduce heat to medium-high. Turn over chicken breasts in marinade to coat them, then add them to the pan, rounded side down. Cook for 4 to 5 minutes on one side, until cooked halfway through.
  • Turn chicken breasts over and carefully arrange feta on top, dividing it equally among the 4 breasts. Sprinkle about 1/4 teaspoon thyme leaves over feta on each breast. Cook 4 to 5 minutes, until breasts are cooked through. Feta will warm but will not melt. Transfer to a baking sheet and keep in warm oven while you cook the figs.
  • Add wine to pan and scrape with a wooden spoon to deglaze the bottom. Boil wine until it has reduced by half, then add figs, honey and remaining thyme. Cook, stirring, until figs break down and begin to look jammy, about 3 minutes. Remove from heat.
  • Serve chicken breasts with fig compote on side and garnish with rosemary sprigs.

This juicy, citrus-scented chicken is a perfect dish for that shoulder season between summer and fall, when pears and figs overlap in the market, and evenings cool down enough to turn on the oven. As the chicken roasts, its skin crisps and its fat renders, flavoring the caramelizing fruit in the pan. Before it's served, everything is topped with a garlicky orange relish flecked with parsley and drizzled with sherry vinegar. It's a sweet and savory meal that's simple enough for a weeknight (if you can marinate the chicken the night before), yet festive enough for guests.

3 garlic cloves
1 large orange
1 tablespoon finely chopped fresh rosemary, plus 2 whole sprigs
2 teaspoons fine sea salt
1 teaspoon freshly ground black pepper
1 (3 1/2- to 4-pound) whole chicken, patted dry
Extra-virgin olive oil, for drizzling
8 seckel pears, halved and cored (or use 4 small ripe Bartlett, Anjou or other pears, quartered)
8 ounces ripe fresh figs (4 to 6 figs), halved lengthwise

Steps:

  • Peel 2 of the garlic cloves, and finely grate or mash to a paste. Grate 1 teaspoon zest from the orange (reserve zested orange and remaining garlic clove for serving).
  • In a small bowl, combine garlic and zest with 1 tablespoon finely chopped rosemary, salt and pepper.
  • Place chicken on a 13-by-17-inch rimmed baking sheet, and rub rosemary mixture all over chicken including underneath the skin and inside the cavity. Chill uncovered in the refrigerator for at least 4 hours and up to overnight.
  • Heat oven to 450 degrees. Stuff chicken with rosemary sprigs. Drizzle chicken lightly with oil, and roast for 30 minutes.
  • Remove baking sheet from oven and carefully arrange pears and figs, cut-side down, on the hot pan. Continue to roast until chicken is cooked through, another 15 to 25 minutes.
  • Transfer chicken to a cutting board to rest for 10 minutes before carving. Roast pears and figs another 5 to 10 minutes, if necessary, until they are caramelized and tender.
  • Cut the white pith off the orange, then cut out orange segments into bite-size pieces. Finely grate or mash the remaining garlic clove.
  • To serve, transfer figs, pears and chicken to a platter. In the pan with chicken juices, toss orange segments, remaining garlic clove, and a drizzle of sherry vinegar; taste and season with flaky sea salt, if needed. Spoon oranges and pan juices over chicken and fruit on platter, and top with chopped parsley and more flaky sea salt.

8 dried Calimyrna figs, stems trimmed, cut in half lengthwise

Steps:

  • Place flour in large resealable plastic bag. Season flour with salt and pepper. Add chicken to bag; seal bag. Shake bag to coat chicken lightly with flour.
  • Heat 2 teaspoons oil in large nonstick pot over medium-high heat. Working in batches, add chicken and sauté until brown on all sides, about 7 minutes per batch. Transfer chicken to plate. Add remaining 2 teaspoons oil to pot and reduce heat to medium. Add onions and garlic and sauté until golden and tender, about 10 minutes. Stir in broth, 1/2 cup cilantro and lemon juice and bring to boil. Add figs and chicken with any accumulated juices to pot. Cover and simmer until chicken is tender, about 35 minutes.
  • Using slotted spoon, transfer chicken to bowl and cover with foil to keep warm. Boil juices in pot until thickened to sauce consistency, about 5 minutes. Season to taste with salt and pepper. Pour sauce over chicken. Sprinkle remaining 2 tablespoons cilantro over and serve with lemon wedges.

Increase heat and boil until sauce is slightly thickened, about 4 minutes. Spoon sauce over chicken.
