A delicious slider that packs a hint of heat. You may want to double the chipotle mayonnaise if your guests like spice.

1/2 cup mayonnaise
2 Tablespoons chopped chipotle in adobo sauce
3 pound pork shoulder
1 Tablespoon cumin (ground)
2 teaspoons kosher salt
1/2 teaspoon pepper
1 bottle Guinness beer
2 chipotle peppers (minced + 1 Tablespoon of adobo sauce)
1 white onion (sliced)
shredded cabbage (raw)
24 King's Hawaiian Dinner Rolls

Steps:

  • In a small bowl mix mayonnaise with 2 Tablespoons of minced chipotle with adobo sauce.
  • Place in refrigerator to allow flavors to develop.
  • Combine cumin, salt and pepper in a resealable bag.
  • Place pork in bag and rub with spices.
  • In a medium sized bowl combine beer and 2 minced chipotle peppers and 1 tablespoon of adobo sauce.
  • Lay onion slices on bottom of slow cooker.
  • Place spice rubbed pork on top of sliced onions.
  • Pour beer and chipotle mixture over pork.
  • Place slow cooker on low and cook pork for 7-8 hours until meat is tender.
  • Pull pork apart with 2 forks and mix with cooked onions.
  • Slice dinner rolls and spread with chipotle mayonnaise.
  • Place shredded cabbage on bottom of dinner rolls.
  • Pile high with shredded pork.
  • Enjoy!

1 boneless pork shoulder butt roast (3 to 4 pounds)
2 finely chopped chipotle peppers in adobo sauce plus 3 tablespoons sauce
3/4 cup honey barbecue sauce
1/4 cup water
4 garlic cloves, minced
1 tablespoon ground cumin
1 teaspoon salt
1/4 teaspoon pepper
COLESLAW:
2 cups finely chopped red cabbage
1 medium mango, peeled and chopped
1 cup pineapple tidbits, drained
3/4 cup chopped fresh cilantro
1 tablespoon lime juice
1/4 teaspoon salt
1/8 teaspoon pepper
20 Hawaiian sweet rolls, split and toasted

Steps:

  • Place onion in a 5-qt. slow cooker. Cut roast in half; place over onion. In a small bowl, combine chipotle peppers, adobo sauce, barbecue sauce, water, garlic, cumin, salt and pepper; pour over meat. Cook, covered, on low 8-10 hours or until meat is tender., Remove roast; cool slightly. Skim fat from cooking juices. Shred pork with 2 forks. Return pork to slow cooker; heat through. , For coleslaw, in a large bowl, combine cabbage, mango, pineapple, cilantro, lime juice, salt and pepper. Place 1/4 cup pork mixture on each roll bottom; top with 2 tablespoons coleslaw. Replace tops.

2 cups GOYA® Mojo Criollo Marinade
1 cup sodium-reduced chicken broth
2 chipotle peppers from 1 can (12 oz.) GOYA® Chipotle Peppers in Adobo Sauce, finely chopped, plus 2 tbsp. chipotle sauce from can
2 tbsp. GOYA® Turbinado Brown Sugar
1 tbsp. GOYA® Minced Garlic
⅓ cup GOYA® Mayonnaise

Steps:

  • Step 1 Pulled Pork: In large resealable bag, combine pork and marinade; refrigerate for at least 2 hours or up to 24 hours. Step 2 Add pork roast to insert of slow cooker. In separate medium sized bowl, combine broth, chipotles, brown sugar and garlic; pour over roast. Cover and cook on Low setting for 6 to 8 hours or High setting for 3 to 4 hours or until meat is tender. (Alternatively, cook pork in Instant Pot: Cover and lock to seal. Pressure-cook on High for about 1 hour or until very tender. Carefully release pressure according to manufacturer's instructions before removing lid.) Step 3 Transfer meat to cutting board; let stand for 15 minutes. Shred pork using two forks. Meanwhile, transfer sauce from slow cooker or Instant Pot to saucepan set over high heat. Skim fat from top; cook for 10 to 12 minutes or until thickened. Return pork and sauce to slow cooker, tossing well. Set on Warm setting to serve. 1/4 cup soy sauce

Steps:

  • For the pulled pork: Sprinkle the pork with salt and add to a 6- to 7-quart slow cooker, along with the ketchup, soy sauce, honey, ginger, sesame oil and garlic. Cook on low until completely tender, about 8 hours.
  • Shred the pork into small pieces and toss in the sauce to coat. Add salt to taste.

But treat those same drumsticks to a long, slow, moist braise in barbecue sauce, and the meat falls off the bones, revealing tough tendons so numerous, you won't believe it.

2 1/2 to 3 pounds turkey drumsticks
1 medium onion, chopped
2 tablespoons olive oil
Salt
2 garlic cloves, finely chopped
1 tablespoon chili powder
1 teaspoon ground cumin
1/2 cup ketchup
1/3 cup cider vinegar
1 to 3 tablespoons finely chopped chipotle chiles in adobo, including some sauce (see Cooks' Notes)
1 tablespoon Worcestershire sauce
1 tablespoon molasses
1/2 cup water
Freshly ground black pepper
16 slider rolls (or other small, soft buns), split
Brussels Sprout Slaw
Special Equipment
A 3 1/2- to 5-quart wide Dutch oven or other wide heavy pot with tight-fitting lid

Steps:

  • Preheat oven to 325°F.
  • Remove turkey skin.
  • Cook onion in oil with 1/2 teaspoon salt in Dutch oven over medium heat, covered, stirring occasionally, until well softened, about 10 minutes.
  • Add garlic and spices and cook, stirring, 1 minute.
  • Stir in ketchup, vinegar, chiles, Worcestershire sauce, molasses, and 1/2 cup water and simmer mixture, stirring, 1 minute.
  • Add drumsticks and cover pot, then braise in oven, turning drumsticks over once, until meat is very tender, about 2 hours.
  • Transfer drumsticks to a bowl and cool. Discard bones, tendons, and any remaining skin, and pull meat with forks or fingers into coarse shreds.
  • Stir meat into sauce remaining in pot. Thin, if necessary, with water to desired consistency and season with salt and pepper. Reheat over medium heat until hot.
  • Spoon mixture into slider rolls and top with slaw.

2 teaspoons salt
2 teaspoons garlic powder
1 1/2 teaspoons ground mustard
3 teaspoons chili powder
1 boneless pork shoulder (3 lb), trimmed of fat
1 can (8 oz) tomato sauce
2 canned chipotle chiles, finely chopped
1 tablespoon adobo sauce from canned chipotle chiles
20 burger buns, split
5 medium avocados, pitted, peeled and thinly sliced

Steps:

  • Spray 4- to 5-quart slow cooker with cooking spray. In small bowl, mix brown sugar, salt, garlic powder, mustard and chili powder. Rub seasoning mixture over pork. Place pork in cooker. Sprinkle any remaining seasoning mixture that doesn't stick to pork over top of pork in cooker.
  • Cover; cook on Low heat setting 7 to 8 hours.
  • Remove pork from cooker; place on cutting board. Remove liquid from cooker; skim fat from liquid and reserve liquid. Cool pork slightly. With 2 forks, shred pork. Return to cooker. Stir tomato sauce, chipotle chiles and adobo sauce into shredded pork. If desired, stir in some of the reserved cooking liquid for desired moistness.
  • Increase heat setting to High. Cover; cook 15 to 30 minutes longer or until hot. Spoon about 1/3 cup pork mixture into each bun. Place a few slices of avocado over pork in each bun. Pork mixture can be kept warm on Low heat setting up to 2 hours; stir occasionally.
