CHIPPED BEEF ON TOAST

Steps:
- In a small pan, melt 2 tablespoons of the butter and add the flour. Cook, stirring, until the mixture begins to turn a light brown color, about 4 minutes. Remove from the heat.
- In a large saucepan, melt the remaining 2 tablespoons butter. Cook the garlic, rosemary and shallots until the shallots are translucent. Add the cream and bring to a boil. Add the butter-flour mixture, reduce the heat and simmer for 10 to 15 minutes, stirring occasionally. Add the salt and pepper and strain.
- For each serving, heat 1 cup of sauce to a simmer, add 2 ounces chipped beef and bring to a boil. Pour the mixture over two to three slices sourdough toast and garnish with parsley and paprika.
CREAMED CHIPPED BEEF
Creamed chipped beef served on buttered toast --- a great breakfast! This is affectionately known in the military as SOS, "$#@& on a shingle." You may vary ingredients to suit your taste. Don't over thicken the gravy, it should drop off the spoon.

- Melt butter in a saucepan over medium-high heat. Once melted, add flour and stir to mix a roux.
- Slowly whisk milk into roux mixture. Slice the beef into squares if not already done so. Add salt, pepper, and beef to the pot. Bring to a simmer for 2-3 minutes and then remove from heat to allow gravy to thicken.
- Toast bread and serve the gravy over top in an open sandwich style.

- Pour the flour into a bowl, make a well in the middle, then add the yoghurt. Use your clean hands to mix it together, until you have a dough.
- Wash and dry your hands, then dust your work surface and hands with flour. Split the dough into 2 equal pieces. Stretch the dough with your hands or roll it out with a rolling pin to about ½cm thick.
- Put a large non-stick frying pan on a medium-high heat - make sure you've got an adult around.
- Once the pan is hot, carefully add the dough to the dry pan and cook for 2 or 3 minutes, or until golden and puffed up. Use tongs to turn the flatbreads over, and cook for the same time on the other side.
- Remove the flatbreads from the pan and spread a little knob of butter on top, moving it about with the back of a spoon until it's melted. You can have your flatbreads simply with honey or jam, you can top them with eggs, or serve them with a curry. You can do anything with them!

CREAMED CHIPPED BEEF ON TOAST (S.O.S.)
Steps:
- Rinse the slices of dried beef really well - they are VERY salty! Once you have rinsed well, pat dry with a paper towel.
- Chop the beef into small bite-sized pieces. Set aside.
- Heat the butter in the large saucepan over medium heat.
- Add the flour and pinch of cayenne pepper to the melted butter and whisk until well combined and cooked through, about 45 seconds.
- Very slowly add the milk while whisking continually.
- Once the milk has all been added, add the chopped dried beef.
- Cook, stirring occasionally, for a few minutes until thickened.
- Taste and season with sea salt and freshly cracked pepper, to taste, if needed.
- Serve on top of dry toast immediately. Enjoy.
