Chocolate Coconut Chunks Recipe

  1. flour
  2. baking soda
  3. sweet butter
  4. dark brown sugar
  5. eggs
  6. vanilla extract
  7. shredded coconut
  8. white chocolate
  9. macadamia nuts


  1. preheat the oven to 300 degrees f
  2. in a small bowl , combine the flour and the baking soda
  3. in a medium bowl , cream the butter and sugar with an electric mixer
  4. beat in the eggs and the vanilla extract
  5. beat in the flour mixture , but be careful , dont overmix it
  6. stir in the coconut , white chocolate and macadamias
  7. drop the dough by rounded tablespoons about 2 inches apart on an ungreased cookie sheet
  8. i like to line the cookie sheet with parchment paper
  9. bake for 18-20 minutes
  10. transfer to a wire rack to cool

I also used Trader Joes dark chocolate chunks. I would definitely make these again. The coconut oil addition really brings out the toasted coconut flavor without being overbearing.
