ALMOND BUNDT CAKE WITH WHITE CHOCOLATE GLAZE

Moist and fluffy almond bundt cake covered with white chocolate glaze. The chocolate is also added to the batter, so the cake tastes amazing and is rich and moist. You can really taste the almond flavor! The cake is sprinkled with caramelized flaked almonds, which are seriously addicting!

½ cup butter (1 stick, 4 oz / 115g + 1 Tbsp for greasing the pan)
4 oz white chocolate (115g)
½ cup sour cream 12% (4 oz / 115g, at room temperature!)
2 and 2/3 cup flour (330g, spoon and leveled)
1 cup ground almonds (100g (without skin))
1 teaspoon baking powder
4 large eggs (at room temperature!)
pinch of salt
1 cup superfine sugar (200g, caster sugar)
2 tablespoons amaretto (almond liqueur)
2 teaspoons vanilla extract
6.5 oz white chocolate (185g)
3 tablespoons sour cream 12% (or heavy cream)
2 tablespoons superfine sugar (or granulated sugar)
4 heaped tablespoons flaked almonds (25g)
1 tablespoon butter

Steps:

  • Sour cream and eggs should be at room temperature (it's enough to place them in a bowl with warm water for 15-30 mins).
  • Generously butter a 8-inch / 21 cm bundt cake pan. Set aside.
  • Add the cubed butter into a small pot, cook, stirring, until melted, take off the heat. It should be very warm, but not boiling. Add the chopped chocolate, stir until melted. Then whisk in the cream until smooth. Set aside.
  • In a big bowl, mix the flour with ground almonds and baking powder together (if you're grinding the almonds yourself - they don't have to be ground very finely like almond flour). Set aside.
  • Preheat the oven to 325°F / 160°C / Gas Mark 3, no fan (if you have a convection oven, reduce the temperature by 25°).
  • Separate the eggs. Add the egg whites into a large, clean and dry bowl. Whisk with a pinch of salt until stiff.
  • In a separate bowl, beat the egg yolks with sugar until pale and fluffy, about 2-3 minutes (you can use the same whisk attachment that was used to whisk the egg whites).
  • Add the chocolate mixture to the egg yolk-sugar mixture, mix until combined. Then add the amaretto liqueur and vanilla extract, mix.
  • Add the flour mixture and whisk until just combined (don't overmix the batter!).
  • Add 1/3 of the whipped egg whites, fold in. Now carefully fold in the rest of the egg whites until smooth batter forms (be careful not to overmix the batter).
  • Pour the batter into the prepared pan, smooth the surface (try to apply a little more batter at the edges than in the center of the pan). Gently tap the pan on the counter.
  • Put in the oven and bake for about 50 minutes. A cake tester / w wooden stick stuck in the center of the cake should be clean / almost clean. The baking time may slightly vary, depending on the oven.
  • Place the bundt cake in the pan on a cooling rack, leave for 10 minutes, then place on a serving plate and lift the cake pan.
  • Chocolate glaze: chocolate must be melted using the double broiler method. In a small pot, bring water to a boil, remove the pot from the heat (steaming water is enough to melt the chocolate). Place a small bowl over the pot, it should not touch the surface of the water. Add the chopped chocolate and sour cream to the bowl (it's good to press the cream through a sieve to ensure it's not lumpy). Stir until the chocolate is melted. Drizzle the glaze over the bundt cake.
  • Caramelized flaked almonds: Sprinkle the sugar in an even layer on a pan, heat over medium heat until caramelized (it should be syrupy and golden, but not burned!), add the almond flakes and butter, mix until combined. Transfer the almonds onto a piece of baking paper and leave to cool, then break into smaller pieces. Sprinkle over the bundt cake.
  • Serve and enjoy!

1 cup (2 sticks) unsalted butter
½ cup HERSHEY'S Cocoa
½ teaspoon salt
2 teaspoons vanilla extract, divided
2 cups plus 2 tablespoons all-purpose flour, divided
1-1/2 cups granulated sugar
1-1/2 teaspoons baking soda
1 cup chocolate milk
2 eggs, lightly beaten
½ cup sour cream
1 package (8 oz.) cream cheese, softened
⅔ cup powdered sugar
1 egg yolk
1 cup MOUNDS Sweetened Coconut Flakes
⅔ cup heavy whipping cream
1 cup HERSHEY'S Semi-Sweet Chocolate Chips
1 tablespoon toasted sliced almonds*
1 tablespoon toasted coconut*

Steps:

  • Heat oven to 350° F. Grease 12-cup fluted tube pan and dust with cocoa. Remove wrappers from 3 candy bars; chop and set aside.
  • Melt butter in small saucepan over medium heat. Add cocoa and salt, whisking until smooth. Remove from heat; stir in 1 teaspoon vanilla. Set aside to cool 5 to 10 minutes.
  • Stir together 2 cups flour, granulated sugar and baking soda. Slowly beat in melted butter mixture until moist crumbs form. Gradually add chocolate milk and eggs, beating well after each addition. Stir in sour cream; set aside.
  • Beat cream cheese in separate bowl until smooth. Gradually beat in powdered sugar, egg yolk, remaining 2 tablespoons flour and remaining 1 teaspoon vanilla. Stir in coconut and chopped candy bars.
  • Pour about ¾ of chocolate batter (about 4 cups) into prepared pan. Spoon cream cheese mixture down the middle of batter being careful not to go to edges of pan. Pour the remaining chocolate batter over cream cheese mixture.
  • Bake 45 to 55 minutes or until wooden pick inserted into center of cake comes out clean. Cool in pan on wire rack about 20 minutes. Remove from pan to wire rack. Cool completely.
  • Place chocolate chips in heat proof bowl. Heat whipping cream until hot, but not boiling; pour over chips. Allow to sit for about 5 minutes; whisk until chips are melted and mixture is smooth. Cool 10 to 20 minutes or until mixture is cool and slightly thickened. Meanwhile, remove wrappers from remaining 2 candy bars and chop. Pour mixture over top of cake, allowing some to go down sides. Sprinkle top of cake with remaining chopped candy bars, almond slices and coconut. (If ganache is too warm it will not be thick enough to hold the toppings and they will slide off cake.)
  • Store cake, covered in refrigerator. For best flavor allow cake to come to room temperature before serving.

180g butter, softened, plus extra for greasing
225g caster sugar
¾ tsp almond extract
2 tsp baking powder
180g plain flour
75g ground almond
3 large eggs
2 tbsp milk
3 tbsp cocoa powder mixed with 3 tbsp hot water to make a paste
100g dark chocolate chip
30g icing sugar, to dust
1.5l (or bigger) bundt cake tin

Steps:

  • Heat the oven to 180C/160C fan/gas 4. Thoroughly brush a 1.5 litre bundt tin with melted butter.
  • Cream the butter and sugar together until light and fluffy. Stir in the almond extract.
  • Mix together the baking powder, flour and ground almonds. Beat in one egg at a time, adding a spoonful of the flour mixture in between. Repeat until all three eggs have been added, then fold in the remaining flour mixture and stir in the milk.
  • Spoon half of the cake batter into a separate bowl and mix in the cocoa paste. Add the chocolate chips to the other half of the mixture. Add spoonfuls of each of the batters alternately to the tin and drag the handle of a teaspoon through the mixture to create a marbled effect.
  • Bake for around 40 minutes and then test the cake to see if a skewer inserted into the deepest part comes out clean. The cake will take 40 - 50 mins, depending on the proportions of your bundt tin.
  • Let the cake cool in the tin for 10 minutes before turning out onto a cooling rack. Once cooled, dust the cake with a little icing sugar.

  • Bake cake until tester inserted into center comes out with moist crumbs attached, about 1 hour 10 minutes. Cool cake in pan on rack (center will fall). Press edges down with fork to level top. Cover; refrigerate at least 2 hours and up to 1 day.
  • Cut around cake; remove pan sides. Beat cream in large bowl to firm peaks. Mound cream atop cake; sprinkle with remaining 1/4 cup almonds.
