CHOCOLATE CINNAMON BALLS
If you're thinking up new ways to eat chocolate, here's another. Cinnamon and chocolate work beautifully together in these dainty little truffles that are easy to make and so decadent. Recipe courtesy of Hari Ghotra.

Steps:
- Break up the chocolate and place in a small bowl.
- In a saucepan, heat the cream when it is just boiling remove from the heat and add the butter.
- Pour the hot cream over the chocolate and add a pinch of cinnamon powder and salt.
- Stir to melt the chocolate then let it sit and stir again.
- Once it has all melted leave it to cool then cover with clingfilm and refrigerate until it has set for about an hour.
- Put the cocoa in bowl for rolling.
- Scoop out teaspoons of the set truffle mixture and roll them in your hands to make a ball.
- Coat them with the cocoa.
- Put them in the fridge to firm up for about 30 minutes then dust them in cinnamon before serving.

CHOCOLATE CINNAMON MUD BALLS
A friend's mother who knows I love to cook shared this recipe. These delicious candies won a blue ribbon at our local fair!

Steps:
- Butter the sides of a heavy saucepan; add the first five ingredients. Cook and stir over medium-high heat until sugar is dissolved. Cook, without stirring, until a candy thermometer reads 238° (soft-ball stage). Remove from the heat. Cool, without stirring, until mixture reaches 110°. , Transfer to a large bowl; add the cinnamon, vanilla and salt. Beat until light-colored and stiff enough to knead, about 2 minutes. Knead mixture in bowl for 2 minutes or until smooth. Roll into 1-in. balls; cover and freeze for 20 minutes. , In a microwave, melt chips and shortening; stir until smooth. Dip balls in chocolate; allow excess to drip off. Roll in nuts if desired. Place on waxed paper; let stand until set.

CHOCOLATE COCONUT BALLS
Steps:
- In a bowl mix together the nuts, condensed milk, almond extract and coconut. Using your fingers, press the mixture into balls about 3/4-inch round. Place onto sheet trays and let rest at room temperature for 4 hours or in the refrigerator for 1 hour.
- After the balls have set up, melt the chocolate and shortening until smooth. Dip into the chocolate to coat evenly and lightly. Place onto a parchment or foil lined sheet pan to dry.
SWEDISH CHOCOLATE BALLS (OR COCONUT BALLS)
This is a classic Swedish recipe, beloved by every Swede. It is one of the first things children learn to make, and it's enjoyed greatly by all ages. - Mix the oats, sugar, and cocoa together in a bowl. Add the butter, and use your hands to mix the ingredients together to make a thick dough. Mix in the coffee, vanilla, and chocolate until thoroughly blended.
- Place the coconut flakes in a small bowl. Pinch off small amounts of dough and roll between your hands to make small balls, about 1-1/2 inches in diameter. Roll the balls in the coconut flakes. Balls are ready to eat, or may be refrigerated 2 hours to become firmer.

- Heat oven to 400°F. In large bowl, mix flour, 1/2 cup powdered sugar, 1 1/2 teaspoons cinnamon and the salt. Cut in butter, using pastry blender or fork, until mixture looks like coarse crumbs. Stir in chocolate chips and vanilla (mixture will be crumbly).
- Using hands, shape dough into 1-inch balls. On ungreased cookie sheets, place balls 1 inch apart.
- Bake 6 to 8 minutes or until set but not brown. Immediately remove from cookie sheets to cooling racks. Cool slightly, about 20 minutes.
- In small bowl, stir together 1/2 cup powdered sugar and 1 teaspoon cinnamon. Roll cookies in sugar mixture, shaking off excess back into bowl. Cool completely, about 30 minutes.

- Preheat oven to 375 degrees F (190 degrees C). Grease 2 baking sheets. Whisk together 2 cups sugar and the cinnamon, reserve.
- Beat together 1 cup sugar, margarine, eggs, milk, flour, and baking powder in a large bowl to form a dough. Divide dough into 10 balls. Spread the prepared cinnamon and sugar mixture onto work surface. Use a rolling pin to roll each dough ball out on the cinnamon sugar, forming each into a 14 inch circle. Cut each circle into 8 wedges. Roll each wedge into a crescent, starting at the wide side and rolling toward the tip. Place rolls on prepared baking sheets.
- Bake crescents in preheated oven until set and lightly browned, about 20 minutes.
- While crescents are baking, mix together 2 cups sugar, vanilla, 2 cups water, and the cornstarch in a saucepan. Bring to a boil, and cook until thick. Brush glaze on baked crescent rolls. Allow glaze to set for 5 minutes. Drizzle melted chocolate over glazed crescents. If desired, serve warm.
