6 hard-boiled large eggs
3 tablespoons reduced-fat mayonnaise
2 tablespoons mango chutney
1 tablespoon chopped green onion
1/8 teaspoon salt
1/8 teaspoon pepper
Chopped cashews and paprika, optional

Steps:

  • Cut eggs in half lengthwise. Remove yolks; set aside egg whites., In a large bowl, mash yolks. Stir in mayonnaise, chutney, green onion, salt and pepper. Stuff or pipe into egg whites. If desired, garnish with cashews and paprika. Chill until serving.

Here's a zesty variation on an old favorite that your guests will look forward to every time they visit. Bacon and chutney are the keys to these flavor packed eggs.

12 eggs
¼ cup chutney
6 slices bacon
3 tablespoons mayonnaise
1 tablespoon chopped almonds

Steps:

  • Place eggs in a medium saucepan and cover with cold water. Bring water to a boil and immediately remove from heat. Cover and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, cool and peel. Cut in half lengthwise. Remove and reserve yolks.
  • Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown; drain and crumble.
  • In a medium bowl, mash egg yolks and mix with bacon, chutney, mayonnaise and almonds. Fill the egg whites with the mixture.

6 hard-cooked large eggs
1 1/2 tablespoons mayonnaise
1 1/2 tablespoons plain yogurt
1 1/4 teaspoons curry powder
1/4 teaspoon ground cumin
1 teaspoon bottled Major Grey's chutney, large pieces minced
1 scallion, chopped fine
1/2 teaspoon fresh lime juice
Tabasco to taste
Garnish: thinly sliced scallion green

Steps:

  • Cut a paper-thin slice off both ends of eggs and halve eggs crosswise. Force yolks through a sieve into a bowl (or mash with a fork) and stir in remaining ingredients and salt and pepper to taste. Transfer filling to a pastry bag fitted with a large ribbon or other decorative tip and pipe into whites, mounding it. The stuffed eggs may be made 6 hours ahead and chilled, covered.
  • Just before serving, garnish eggs.

2 tbsp white wine vinegar
12 quail's eggs at room temperature (see tip below)
500g sausagemeat
10 thyme sprigs , leaves picked and roughly chopped
75g caramelised onion chutney
50g plain flour
2 hen's eggs
100g fresh breadcrumbs
vegetable oil or sunflower oil, for frying

Steps:

  • Fill a large pan with water and bring to the boil. Fill a bowl with cold water and add the vinegar. Lower the quail's eggs into the boiling water with a slotted spoon and cook for 2 mins. Scoop out the eggs, plunge them into the vinegar water and leave to cool for at least 20 mins, or drain and chill for up to 24 hrs.
  • In a large bowl, mash the sausagemeat, thyme and chutney until well combined. Drain and carefully peel the eggs. They should be softly boiled, so will be delicate - try not to break the egg white as you peel them.
  • Spread the flour over a plate. Whisk the hen's eggs in a wide, shallow bowl and tip the breadcrumbs into a third dish. Divide the sausage mixture into 12 patties. Take one patty and flatten it in the palm of your hand. Put a peeled egg in the centre and carefully wrap the patty around the egg to completely enclose it. Roll in flour, then egg, then the breadcrumbs. Continue with the remaining 11 eggs, then chill for at least 30 mins, or overnight.
  • Half-fill a large pan with oil, heat to 180C on a thermometer, or until a cube of bread browns in 45 secs. Gently drop in a few eggs, making sure you don't overcrowd the pan, and cook for 3 mins or until deep golden brown and crisp. Remove with a slotted spoon onto a tray lined with kitchen paper, and sprinkle with flaky sea salt. Serve warm or cold. Will keep in the fridge for 1 day.

Bulgur & spinach fritters with eggs & tomato chutney image

A better-for-you alternative to hash browns or potato cakes - topped with eggs and served with a fresh flavoured relish

100g bulgur wheat
250g spinach
2 tsp ground cumin
1 onion , finely chopped (reserve 2 tbsp for the chutney)
1 garlic clove , chopped
85g fresh breadcrumb
5 eggs , 1 beaten
1 tbsp vegetable oil , plus extra
5 tbsp sugar
50ml white wine vinegar
2 tbsp finely chopped onion (see above)
250g cherry tomato , halved or quartered
salad leaves , to serve

Steps:

  • First make the chutney. In a small saucepan, heat the sugar, vinegar and some salt. Boil for 1 min, then add the onion and tomatoes. Simmer for 1 min, then remove from the heat and set aside.
  • Boil the bulgur wheat in plenty of water until tender - about 5 mins. Drain well and tip into a bowl. Put the spinach in a colander and pour over boiling water from the kettle to wilt. Cool under the cold tap, then squeeze out as much water as you can. Chop and add to the bulgur with the cumin, onion, garlic and breadcrumbs. Tip half into a food processor and blitz until it forms a chunky paste. Return to the remaining half with the beaten egg and some seasoning. Mix together, then shape into 8 patties and chill until ready to cook.
  • Heat oven to 200C/180C fan/gas 6. Heat the oil in a wide frying pan, preferably non-stick, and fry the fritters in two batches until crisp on both sides. Meanwhile, lightly oil a 4-hole Yorkshire pudding tin and put in the oven to warm up for a few mins. Remove and carefully crack the remaining eggs into the holes, then bake for 3-4 mins until done to your liking. Use the tip of a knife to help lift out the eggs, then serve with the fritters, chutney and some salad leaves.
