Water, vegetable oil and eggs as called for on brownie mix box
1 teaspoon ground cinnamon
1/2 to 3/4 teaspoon chipotle chile powder
2 cups powdered sugar
1/4 cup dulce de leche (from 13.4 oz can)
2 tablespoons butter or margarine, softened
2 tablespoons milk
1 teaspoon vanilla

Steps:

  • Heat oven to 350° F (325° F for dark or nonstick pan). Grease or spray bottom of 8-inch pan.
  • Make brownie batter as directed on box, using water, oil, and eggs, adding cinnamon and chipotle powder until well blended. Spread into pan. Bake 39 to 42 minutes or until toothpick inserted 2 inches from edge comes out almost clean. Cool completely.
  • In medium bowl, beat powdered sugar, dulce de leche, butter, milk, and vanilla with electric mixer on low speed until smooth and creamy. Spread onto cooled brownies.

5 ounces high quality dark chocolate (at least 72 percent cacao), finely chopped
10 tablespoons (1 stick plus 2 tablespoons) butter, plus extra for greasing
2 tablespoons guajillo or aleppo chile, freshly ground
1 teaspoon ground cinnamon
1 teaspoon kosher salt
1 3/4 cups sugar
3 eggs
1 cup flour

Steps:

  • Adjust oven rack to middle position and preheat oven to 350°F. In a small saucepan over low heat (or in a bowl over a pot of boiling water), melt the chocolate and butter with the chile, cinnamon, and salt, stirring occasionally. Set aside to cool.
  • Line a 9" x 9" metal baking pan with parchment paper or aluminum foil. Use enough to create a lip over the sides of the pan. If using foil, lightly grease with butter.
  • In a mixing bowl, combine the melted chocolate mixture with the sugar. When combined, add the eggs. Mix till smooth, then fold in the flour. Transfer to the baking pan. Bake until the brownies feel firm and a paring knife poked into the center comes out clean (you still want a few crumbs to stick), about 30 minutes.
  • Using the parchment or foil lip, remove the brownies from the pan and cool completely. To greatly improve the texture and flavor, wrap the brownie slab in plastic and let it sit for several hours or up to overnight at room temperature. Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line a 12x15-inch baking pan with parchment paper, leaving about 3 inches of paper overhanging 2 sides to use as handles.
  • Place the butter in a microwave-safe bowl, and cook on Medium until the butter is about half melted, about 1 minute. Mash the butter with sugar until well combined, and stir in eggs one at a time, incorporating each one before adding the next. Mix in vanilla extract.
  • Sift the cocoa, flour, cinnamon, pequin pepper, salt, and baking powder into a bowl. Sprinkle in any salt caught in the sifter. Mix the flour mixture into the butter mixture, stirring to blend well, and pour the batter into the prepared baking pan.
  • Bake in the preheated oven until a toothpick inserted into the center comes out with moist crumbs, 20 to 25 minutes. Let cool in the pan, and use parchment paper handles to remove the brownies for slicing.

3 tablespoons unsalted butter
2 shallots, minced
2 large leeks, white parts only, washed and thinly sliced
4 cups cleaned and coarsely chopped Swiss chard leaves without veins
2 cups washed baby spinach
3/4 cup good-quality bourbon
Salt and freshly ground black pepper

Steps:

  • TO PREPARE THE RIB CHOPS: Preheat the grill to medium. Combine the ingredients for the glaze and mix well. Grill the chops, brushing well with glaze, for about 6 minutes on each side. You can also roast the chops in a preheated 425 degree oven for 10 to 12 minutes, brushing often with glaze, to an internal temperature of about 130 degrees for medium rare, which is suggested.
  • TO PREPARE THE GREENS: Melt the butter in a large saute pan over medium heat. Add the shallots and leeks and cook gently for 10 minutes without browning. Add the chard and spinach, cover, and steam for 2 minutes. Uncover, stir well, and cook off the moisture. Deglaze over high heat with bourbon. Season with salt and pepper and serve with grilled chops.

Steps:

  • Preheat oven to 325 degrees F
  • Line a 11 X 7 inch baking pan with foil and then spray with cooking spray
  • Heat the sticks of butter and unsweetened chocolate in a medium sauce, stirring constantly, until melted. In a medium bowl, stir together flour, sugar, cinnamon, and ground chipotle. 3/4 cup all-purpose flour, plus additional for the pan
1/4 cup plus 1 tablespoon pure chile powder
1 teaspoon baking powder
1 teaspoon salt
12 tablespoons (1 1/2 sticks) unsalted butter, plus additional for the pan, at room temperature
5 ounces bittersweet or semisweet chocolate, chopped, or semisweet chocolate chips
5 ounces unsweetened chocolate, chopped
1 1/4 cups sugar
3 large eggs, at room temperature

Steps:

  • 1. Position the rack in the lower third of the oven. Preheat the oven to 350°F. Butter and flour a 9x13-inch baking pan; set it aside.
  • 2. In a medium bowl, whisk the flour, chile powder, baking powder, and salt until well combined. Set aside.
  • 3. Place the butter and both kinds of chocolate in the top of a double boiler set over simmering water. If you don't have a double boiler, place the butter and both kinds of chocolate in a heat-safe bowl that fits snugly over a small pot of simmering water. Stir constantly until half the butter and chocolate is melted. Remove the top of the double boiler or the bowl from the pot; then continue stirring, away from the heat, until the butter and chocolate are completely melted. Transfer to a large bowl and allow to cool for 10 minutes.
  • 4. Beat the sugar into the melted chocolate mixture with a whisk or with an electric mixer at medium speed; continue beating until smooth and silky, about 5 minutes by hand or 2 minutes with a mixer. Beat in the eggs until well incorporated.
  • 5. With a wooden spoon or a rubber spatula, stir in the flour mixture just until incorporated. Do not beat. Spoon the batter into the prepared pan, spreading it gently to the corners.
  • 6. Bake for 20 minutes, or until a toothpick or cake tester comes out with a few moist crumbs attached. Set the pan on a wire rack to cool for at least 30 minutes.
  • 7. Cut the brownies into 24 pieces while they're still in the pan. Carefully remove them with an offset spatula. Serve immediately, or let cool completely before covering with plastic wrap for storage at room temperature. They will stay fresh for up to 3 days. The brownies can be tightly wrapped in wax paper, sealed in a freezer-safe bag, and frozen for up to 2 months; allow them to thaw at room temperature before serving.
  • To vary this recipe

Steps:

  • Set oven to 350 degrees.
  • Set oven rack to second-lowest position.

  • For brownies: mix the flour, cinnamon and salt in a small bowl.

  • Cool completely in pan on a rack.
  • For ganache: Whisk all ingredients in a small saucepan over medium-low heat until melted and smooth.
  • Pour evenly over top of brownies.
  • Chill brownies until ganache is set (about 2 hours).
  • Store covered in the refrigerator.
