SWEET POTATOES WITH RAISINS AND CINNAMON

Steps:
- Put the oil in a wide sauté pan or large frying pan and set over medium high heat.
- When hot, put in cinnamon stick and the onion.
- Sauté for about 3 minutes, or until the onion has lost much of its water.
- Add the sweet potatoes and stir.
- Continue to sauté another 6 to 7 minutes or until the onion begins to turn light brown and the sweet potatoes have picked up a little color.
- Add 3/4 cup of water the salt, ginger, raisins cayenne, and sugar.
- Bring to a boil.
- Turn the heat down to low,cover, and cook gently for 7 to 9 minutes or until sweet potatoes are tender.
- There should be almost no liquid left in the pan, except for a little oil (if there is, uncover and boil the liquid off). Serve hot.

BAKED SWEET POTATOES WITH RAISINS AND PECANS
A fresh alternative to a classic Thanksgiving side dish. I do not take credit for this recipe, I did not create it. I found this recipe online years ago and have been making it ever since. I have used both Yams and Sweet Potatoes. Yams give a little more color contrast to the dish. This recipe can easily be made Vegan by omitting the butter :-)

Steps:
- Preheat oven to 400 degrees.
- Spread sweet potatoes in a single layer in a 9x13 inches baking dish.
- Sprinkle with raisins and chopped pecans.
- In a small bowl, mix butter, syrup and water together.
- Pour mixture over over potatoes.
- Cover baking dish with aluminum foil.
- Bake for 50-60 minutes, until potatoes are tender.

- Preheat oven to 350 degrees F (175 degrees C). Spray a baking sheet with cooking spray.
- Arrange sweet potato slices on the baking sheet. Brush with 1/2 the butter. Mix the sugar and cinnamon in a small bowl, and sprinkle 1/2 over the potatoes.
- Bake 15 minutes in the preheated oven. Turn, brush with remaining butter, and sprinkle with remaining cinnamon and sugar. Continue baking 15 minutes, or until tender.

- Place raisins into a bowl, cover with boiling water, and let stand to plump.
- Place sweet potatoes into a saucepan, cover with 2 cups water, and bring to a boil.
- Add honey, butter, salt, cinnamon, black pepper, turmeric, and saffron to potatoes; reduce heat to low.
- Simmer until potatoes are tender but not mushy, 8 to 10 minutes.
- Drain raisins and stir into sweet potato mixture.
- Continue to simmer until mixture has thickened, about 10 more minutes.
- Let cool before serving.

Slices of sweet potato baked with cinnamon and brown sugar. The caramelized brown sugar make these potatoes taste like candy! I attended a catered dinner and the caterer served these with a beautiful turkey dinner. I begged for the recipe, been making it ever since.

- Preheat the oven to 375 degrees F (190 degrees C). Pour the oil into a 9x13 inch baking dish, and place in the oven until hot, about 5 minutes.
- Add potatoes to the oiled dish, and bake for 20 minutes in the preheated oven, turning after 10 minutes. In a small bowl, mix together the brown sugar, cinnamon, salt, and pepper.
- After the 20 minutes is up, remove the potatoes from the oven, and sprinkle with the brown sugar mixture. Stir to coat. Return to the oven, and roast for another 10 minutes, or until potatoes are tender and golden brown. Stir potatoes as necessary to allow them to brown evenly.
- Remove potatoes to paper towels to drain, then transfer to a serving dish, and sprinkle with lime juice.

- Preheat oven to 350 degrees.
- Mash sweet potatoes; stir in 1 1/4 cups sugar and butter until smooth. Add eggs; blend well and set aside.
- In a separate bowl, mix together flour, baking powder, salt, nutmeg and 1 teaspoon cinnamon. Add to sweet potato mixture, alternating with milk; stir just until moistened.
- Fold in raisins and walnuts.
- Fill 24 paper-lined muffin cups 3/4 full. Mix remaining sugar and cinnamon; sprinkle over top.
- Bake for 25 to 30 minutes, until a toothpick inserted in center tests done. Serve warm.
