Steps:
- Sift together the flour, baking soda, and salt; set aside. In a medium bowl, cream butter with 1/4 cup white sugar and brown sugar. Mix in egg and vanilla. Add the sifted dry ingredients, and mix until well blended. Divide dough into 3 equal portions. Roll into logs 2 inches in diameter, wrap, and refrigerate for 3 to 4 hours. These logs can be frozen for up to 6 weeks.
- Preheat oven to 350 degrees F (175 degrees C). Mix 1/2 cup sugar and cinnamon on a flat plate or a piece of wax paper. Unwrap dough logs, and roll in the cinnamon mixture. Cut into 1/4 inch slices, and place 2 inches apart onto ungreased cookie sheets.
- Bake 12 to 15 minutes in the preheated oven. Remove from baking sheets to cool on wire racks. Baked cookies can be kept in an airtight container for up to 2 weeks.

- Preheat oven to 325 degrees F (165 degrees C). Line baking sheets with parchment paper.
- Sift together the flour, 1 1/2 teaspoon cinnamon, baking powder and salt, set aside. In a medium bowl, cream together the 2/3 cup sugar and butter. Beat in 1 egg, egg yolk and vanilla. Stir in the dry ingredients.
- On a lightly floured surface, divide dough into two pieces. Roll each piece into a log about 9 inches long and 1 1/2 inches wide. Place logs on the prepared baking sheet and flatten slightly. Brush with the beaten egg.
- Bake for 25 to 30 minutes in the preheated oven, until golden and firm to the touch. Cool for 15 minutes.
- On a cutting board, slice each log crosswise at a diagonal into 1/2 inch slices, using a serrated knife. Place back on the baking sheet, cut side down, and sprinkle with a mixture of the remaining cinnamon and sugar. Return to the oven for an additional 15 to 20 minutes, until toasted. Cool on wire racks, and store in an airtight container.

- Arrange racks in upper and lower thirds of oven; preheat to 400°F. Line 2 rimmed baking sheets with parchment. Mix sugar, cinnamon, and salt on a large plate. Fill a small bowl or glass with cold water.
- Roll out pastry between 2 sheets of parchment until short side is 10" long and dough is about 1/8" thick. Freeze dough 5 minutes. Using a pizza cutter or sharp knife, cut dough crosswise into 1" strips. Transfer half of strips to refrigerator. Working one at a time, brush strip lightly with water (or use your fingertips), then immediately transfer to sugar mixture and turn to coat.
- Starting from the middle, use both hands to twist dough to the ends. Transfer to prepared sheet, arranging twists vertically. Repeat with remaining dough. Freeze 10 minutes.

- Preheat oven to 350 degrees.
- In a small mixer bowl beat egg whites till you form soft peaks, gradually add sugar till you form stiff peaks.
- Stir together the flour and cinnamon.
- fold into egg whites.
- Stir together oil of cinnamon and margarine or butter; fold into egg white mixture.
- Drop batter by 2 level measuring teaspoons onto a greased cookie sheet and spread with a spatula to a 3-inch circle, baking 2 or 3 cookies at a time allowing room to spread.
- Bake for 6-7 minutes or till golden around the edges.
- Let cool for only 2 0r 3 seconds, then loosen and quickly roll around a wooden spoon handle (a chopstick works well too).
- Slid cookie onto a cooling rack and continue with other cookies.
- Repeat with remaining batter, using a clean greased cookie sheet for each batch.
- NOTE: If the cookie becomes too stiff to roll return to the oven for one minute.

I wanted to make some cinnamon rolls for Christmas morning but didn't have much time. So I took a few cans of biscuits, some cinnamon/sugar, and leftover Buttercream icing and threw these together. They were so yummy and everyone wanted the recipe right away!

- Preheat the oven to 375°F.
- Mix sugar and cinnamon together.
- Cut biscuits in half.
- Roll each biscuit half in the cinnamon sugar mixture.
- Place in a greased dish (square or rectangle--I used one size smaller than a 9x13).
- You can crowd them together; they will bake up nice and fluffy.
- Top with butter pats randomly across the top.
- Bake for 10-20 minutes, depending on how well-done you like your rolls.
- Watch them closely.
- If you want a really good treat, top these with Buttercream Icing (Recipe #95416 is GREAT!) once they are right out of the oven.
- It will melt all over the rolls.
- Make the icing ahead of time and store in the fridge, then soften it in the microwave.
- Storebought icing could also be used.
