This is my favorite gelatin salad recipe! Quick and easy.

1 (6 ounce) package orange flavored Jell-O® mix
2 cups boiling water
1 cup cold water
1 cup orange juice
1 (15 ounce) can red grapefruit, drained
1 (11 ounce) can mandarin oranges, drained
1 (8 ounce) container frozen non-dairy whipped topping, thawed
1 (8 ounce) jar mayonnaise

Steps:

  • Dissolve orange gelatin in boiling water in a large bowl, stirring for about 3 minutes; mix cold water and orange juice into gelatin. Pour gelatin mixture into a glass serving dish. Stir red grapefruit and mandarin oranges into mixture and refrigerate until set, about 4 hours.
  • Whisk topping and mayonnaise in a bowl until smoothly combined; serve gelatin salad with a spoonful of dressing over each portion.

3 tablespoons olive oil
1 tablespoon orange juice
2 teaspoons honey
1 1/2 teaspoons champagne vinegar
1 teaspoon Dijon mustard
6 to 7 oranges, preferably a mix of regular and blood oranges (or just regular oranges)
4 limes
12 radishes, sliced
Handful fresh mint leaves

Steps:

  • For the dressing: Add the oil, orange juice, honey, vinegar and mustard to a mason jar and shake to mix.
  • For the citrus salad: Carefully cut off the peel of the oranges and limes to remove the pith, then slice.
  • Layer the orange and lime slices on a plate and sprinkle over the radishes. Drizzle with some of the dressing and top with the mint leaves.

1 large orange, peeled and ends trimmed
1 grapefruit, peeled and ends trimmed
1 large or 2 small fennel bulbs, thinly sliced
1/4 cup extra-virgin olive oil
1/4 cup packed fresh basil leaves
Kosher salt and freshly ground black pepper
1/3 cup chopped walnuts, toasted

Steps:

  • Place a sieve over a medium bowl. Hold an orange over the bowl, and using a paring knife, cut along the membrane on both sides of each segment. Free the segments and let them fall into the sieve. Repeat with the grapefruit. Squeeze the membranes over the bowl to extract as much juice as possible, reserving the juices in the bottom of the bowl. Place the fruit segments and fennel in a salad bowl.
  • In a blender or the bowl of a small food processor, blend together the oil, basil and 3 tablespoons of the reserved juice until smooth. Season with salt and pepper, to taste. Pour over the fruit and fennel. Add the chopped walnuts and toss until all the ingredients are coated.

7 (3 ounce) packages assorted fruit flavored Jell-O® mix
4 ½ cups boiling water, divided
4 ½ cups cold water, divided
1 (12 fluid ounce) can evaporated milk, divided
1 (8 ounce) container frozen whipped topping, thawed

Steps:

  • Coat a 9x13 inch dish with cooking spray.
  • Dissolve one package of gelatin in 3/4 cup boiling water. Stir in 3/4 cup cold water. Spoon into pan and refrigerate until almost set, 45 minutes.
  • Dissolve another package of gelatin in 1/2 cup boiling water. Stir in 1/2 cup cold water and 1/2 cup evaporated milk. Spoon over first layer and refrigerate until almost set, 45 minutes.
  • Repeat steps 2 and 3 until all gelatin is used. Just before serving, top with whipped topping.

1 envelope unflavored gelatin
1/4 cup cold water
1 can (20 ounces) crushed pineapple
1/4 cup sugar
1/4 teaspoon salt
1/2 cup orange juice
1/4 cup vinegar
1 cup grated carrots

Steps:

  • In a bowl, sprinkle gelatin over cold water; let stand for 1 minute. Drain pineapple, reserving 1 cup juice (discard remaining juice or save for another use). Set the pineapple aside. , In a saucepan, bring reserved juice to a boil. Remove from the heart. Stir in sugar, salt and gelatin mixture until dissolved. Add orange juice and vinegar. Refrigerate for 2 hours or until partially set. Fold in the carrots and pineapple. Transfer to a 4-cup mold coated with cooking spray. Refrigerate until firm. Unmold onto a serving platter.

3 tablespoons apple cider vinegar
1 teaspoon Dijon mustard
1/2 cup extra-virgin olive oil
3 tablespoons orange juice
1 tablespoon honey
Pinch garlic powder
Pinch kosher salt
Pinch freshly ground black pepper
One 14-ounce bag multicolor coleslaw mix with carrots
1 cup shredded kale
1/2 cup sliced almonds
1/2 cup crispy onions (or you can substitute raw onions)
3 clementines, peeled and separated

Steps:

  • For the vinaigrette: Combine the apple cider vinegar and mustard in a small bowl, then slowly whisk in the olive oil (this step is called emulsifying). Make sure it's fully incorporated. Whisk in the orange juice, honey, garlic powder, salt and pepper, then set aside or refrigerate.
  • For the salad: Combine the coleslaw mix, kale, almonds, onions and clementines in a large salad bowl. Toss with the vinaigrette and serve.

2 cups jarred citrus salad of orange and grapefruit sections, drained - fresh oranges and grapefruits may also be used but to supreme fruit (method below*) takes extra time
2 tablespoons marmalade
2 tablespoons white wine or cider vinegar
1/3 cup extra-virgin olive oil
Salt and pepper
2 tablespoons chopped or snipped chives

Steps:

  • Chop lettuce. Arrange lettuce on platter and top with pieces of grapefruit and orange.
  • *To supreme fresh oranges and/or grapefruits instead, cut off ends then remove skin in strips working all the way around the fruit from top to bottom. Cut along the side of the membrane to remove the sections of the citrus fruit.
  • Combine marmalade with 2 splashes of vinegar and stream in extra-virgin olive oil. Pour dressing over the salad and season with salt and pepper. Garnish platter with chopped or snipped chives.

1/2 cup crumbled feta or goat cheese
2 cloves garlic, minced
1/4 cup extra-virgin olive oil
1 tablespoon honey
1 tablespoon whole-grain mustard
1 tablespoon sherry vinegar (or use your favorite vinegar)
Kosher salt and freshly ground black pepper

Steps:

  • Combine the tangerines, grapefruits, endive and red onion on a serving platter. Sprinkle with the almonds, pomegranate seeds and cheese. Set aside.
  • Whisk together the garlic, olive oil, honey, mustard and vinegar in a small bowl. Season with salt and pepper. Drizzle the dressing over the salad and serve.

1 ½ cups miniature marshmallows
½ cup sugar
3 tablespoons cornstarch
⅔ cup orange juice
¼ cup lemon juice
1 ½ cups reduced-fat whipped topping

Steps:

  • In a bowl, combine gelatin and cold water; let stand for 1 minute. Add sugar and boiling water; stir until sugar and gelatin are dissolved. Stir in lemon juice and food coloring if desired; set aside. Layer pineapple, banana and marshmallows in a 13-in. x 9-in. x 2-in. dish. Pour gelatin mixture over top. Cover and refrigerate overnight.
  • In a saucepan, combine sugar and cornstarch. Gradually stir in juices until smooth. Bring to a boil; cook and stir for 2 minutes or until thickened. Remove from the heat; cool to room temperature. Transfer to a mixing bowl; add whipped topping. Beat until blended. Spread over gelatin layer. Cover and chill for 1 hour or until serving.   • In a small saucepan, sprinkle gelatin over cold water; let stand 1 minute. Heat and stir over low heat until gelatin is completely dissolved. Stir in sugar, orange juice and lemon juice; cook and stir 6-8 minutes or until sugar is dissolved., Transfer to a bowl; refrigerate, covered, until slightly thickened, about 1-1/2 hours. This is a wonderful side dish! I have made this twice, given some to several of my neighbors, and the general consensus is that they all love it! It's almost a dessert!! Now, there's an idea! It's better to make this in the morning of the day you want to serve it. Overnight is always better, for me anyway with Jello. Cooling time is cooking time.

1 (3 ounce) package lemon gelatin
8 ounces bottle 7-up
8 ounces cream cheese, softened
0.5 (7 ounce) jar marshmallow creme
0.5 (8 ounce) container frozen whipped topping (small)
1/2 cup Miracle Whip
2/3 cup chopped nuts
1 (13 ounce) can crushed pineapple

Steps:

  • Bring 7-Up to a boil and pour over gelatins.
  • Mix well to dissolve gelatin. Cool.
  • Add cream cheese and blend. Blend in the whipped topping.
  • Add salad dressing and marshmallow creme, blend.
  • Mix in pineapple with juice.
  • Add nuts and mix inches Pour into an 11 x 7-inch pan.
  • Chill several hours or overnight before serving.
