CLEMENTINE JELLY

Clementine jelly image

Christmas in a glass. You can use virtually any type of juice for jelly but clementines are delicious this time of year.

Provided by Jamie Oliver

Categories     Desserts     Jamie's Family Christmas     Fruit     Christmas     Dinner Party     Romantic meals     British

Time 10m

Yield 6

Number Of Ingredients 8

800 ml clementine juice, (from about 30 clementines)
white sugar, to taste
small piece of fresh ginger
2 gelatine sachets, (23g in total, see tip)
2 fresh clementines
1 big tsp vanilla syrup, (see tip) or a few drops of vanilla extract
200g plain yoghurt
good-quality dark chocolate

Steps:

  • Pour the clementine juice into a pan on a high heat to warm through - don't let it boil. Add a little sugar to sweeten - not too much, you still want that zippy clementine flavour.
  • Peel the ginger and grate a tiny bit into the pan. Grate a bit more onto a chopping board, then squeeze it over the pan of juice so you get a few drips of ginger juice in there. Take the juice off the heat.
  • Sprinkle the gelatine over the juice, then whisk in quickly.
  • Arrange 6 small serving glasses on a tray. Peel the clementines, slice into thin rounds and put 2 in each glass. Sieve the juice mix into each glass, allow to cool, then refrigerate for about 3 hours, or until set.
  • To serve, mix the vanilla into the yoghurt and dollop a spoonful on top of each jelly, then grate or shave a few pretty bits of chocolate on top.

CLEMENTINE & PROSECCO JELLIES

Clementine & prosecco jellies image

James Martin's glamorous and refreshingly light dessert will be right at home at a festive dinner party

Provided by James Martin

Categories     Dessert

Time 4h25m

Number Of Ingredients 4

7 leaves gelatine
600ml clementine juice (from about 14 clementines)
300ml prosecco
1 sheet edible gold leaf (available from squires-shop.com)

Steps:

  • Put the gelatine sheets into a bowl of cold water to soften for a few mins. Put 100ml clementine juice into a small pan and gently heat. When the gelatine feels soft and the juice is just simmering, remove the juice from the heat and squeeze out any excess water from the gelatine sheets. Drop the sheets into the hot juice and swirl to melt. Make sure there are no visible lumps of gelatine before you move onto the next stage.
  • Stir the hot juice into the rest of the juice with the prosecco, then transfer to a jug. Pour between 6 small glasses. Sit the jellies in a small tray or dish, cover with a sheet of cling film and chill for at least 4 hrs (or up to 48 hrs) until set.
  • When ready to serve, use a pair of tweezers to carefully put a piece of gold leaf on the surface of each jelly.

CLEMENTINE MARMALADE

Clementine Marmalade image

Make and share this Clementine Marmalade recipe from Food.com.

Provided by Debber

Categories     Oranges

Time 12h45m

Yield 5 one-pint jars, 16 serving(s)

Number Of Ingredients 4

16 clementines, whole
4 cups water
1 lemon, halved
7 cups sugar

Steps:

  • Scrub & rinse clementines, place in water in a large soup pot (NOT aluminum).
  • Squeeze lemon - reserve juice. Bundle the lemon seeds with cheesecloth and tie it off. Add bundle of seeds and the halved lemon to pot.
  • Cover the pot and simmer for 2-3 hours until fruit is soft.
  • Remove pot from heat, cool overnight; discard bundle of lemon seeds, do not strain liquid.
  • Scoop fruit out of the liquid into a large bowl. Halve the clementines, scoop pulp and seeds (if any) into a strainer set over the pot that was used to boil the fruit. Save all peels. Rub pulp through strainer.
  • Add sugar and lemon juice to pot. Heat gently, stirring until sugar dissolves, then boil for a few minutes.
  • Meanwhile, finely slice clementine peel then stir into boiling sugar-lemon syrup. Continue boiling until marmalade reaches setting point (220*F at sea level) then remove pot from heat, skim foam, and let pot sit for 10-15 minutes to distribute peel evenly.
  • Fill hot, sterilized jars; seal with two-part lids; process in boiling-water bath for 15 minutes (sea level).
  • Label jars; store in cool, dark place.
  • SUGGESTION: Use small decorative jars and make Gift Baskets (along with other kitchen preserves or mixes).

CRANBERRY & CLEMENTINE JELLY

Cranberry & clementine jelly image

Tangier than red current jelly, this fruity condiment works well cold cuts, or to enrich gravy. It also makes a great Christmas gift.

Provided by Sara Buenfeld

Categories     Condiment

Time 1h50m

Yield Makes 1.6kg

Number Of Ingredients 4

1kg fresh or frozen cranberry
3 clementines , chopped, peel and all
700g jam sugar
3 tbsp port

Steps:

  • Tip the berries and clementines into a preserving pan, and pour in 1 litre of water. Gently heat, stirring frequently, for 30 mins until the berries are soft. As the mixture softens, lightly crush to release all the juice from the berries. You can do this with a potato masher.
  • Cool the mixture, then tip it into a jelly bag suspended over a large bowl, or into a large plastic sieve lined with muslin. You need a plastic sieve, as the acidity in the fruit will affect anything metal. Leave overnight so that the juices run through.
  • The next day, measure the liquid. You should end up with 1.4 litres. If you have less, make up the mixture with water. If more, boil to evaporate the excess. Meanwhile, sterilise your jars and put a small plate in the freezer to chill.
  • Return the liquid to the pan and add the sugar. Heat until dissolved, then bring to the boil, skimming off any scum that rises to the surface, and allow to cook for about 20 mins. Use a sugar thermometer to take the temperature up to 105C or, after 15 mins, start checking it's set by dropping the mixture onto a chilled plate. When it is ready, the mixture will appear set when you push your finger through. The drips that come off the spoon will also look syrupy. Spoon off any remaining scum and stir in the Port. Pot into the jars, then leave to set. Will keep for at least a year.
