UNIVERSALLY USEFUL BLUE CHEESE DRESSING



Universally Useful Blue Cheese Dressing image

6 ounces (1 1/2 cups) crumbled blue cheese
1 teaspoon Worcestershire sauce (recommended: Lea and Perrins)
1 teaspoon steak sauce (recommended: A1)
1/3 cup buttermilk
3 tablespoons whole milk
1 teaspoon apple cider vinegar, good white wine vinegar, or white balsamic vinegar

Steps:

  • I promised a trio of sauces, but I just had to get this in under the wire. If you like blue cheese - as I, swooningly, do - then know that this, dribbled over sliced, sweet tomatoes along with a torn-off log of baguette is a perfect enough supper just as it is. And you can make a fabulously retro steakhouse-style starter, by cutting a head of iceberg lettuce into wedges and dribbling each crunchy wedge with this plus, perhaps, a scattering of crisp-fried bacon crumbles. And it makes a fabulous dressing to dribble over leftover rare roast beef.
  • Put the crumbled cheese into a bowl, add the Worcestershire sauce, steak sauce, buttermilk, milk and the vinegar and mix gently until well combined. Thin if necessary with a little iced water. Chill until needed.
  • Make Ahead Note: The dressing will keep for 3 to 4 days in covered container in fridge - store in cold part of fridge rather than in the door.

1 cup mayonnaise
1/2 cup buttermilk
1/2 cup sour cream
3 dashes Worcestershire sauce
4 ounces blue cheese crumbles
2 tablespoons chopped chives
1 dash salt, plus more if needed
1/2 teaspoon freshly ground black pepper, plus more if needed
Olive oil, for drizzling
Salt and freshly ground black pepper

2 boneless, skinless chicken breasts, sliced in half down the middle (you should be left with 4 very thin breast-shaped pieces)
2 heads Bibb lettuce, cored and leaves separated
2 heads romaine lettuce, chopped
1 head iceberg lettuce, cut into chunks
1 pound crispy-fried thin bacon
8 ounces red grape tomatoes, halved
6 hard-boiled eggs, peeled and sliced
2 avocados, diced
1/3 cup blue cheese crumbles
3 scallions, chopped
Freshly ground black pepper

Steps:

  • For the blue cheese dressing: In a bowl, whisk together the mayonnaise, buttermilk, sour cream and Worcestershire until smooth. Stir in the blue cheese crumbles, chives, salt and pepper. Taste and add more seasoning if needed. Cover and refrigerate for at least 2 hours before serving; the flavors deepen as it chills!
  • For the chicken: Heat a grill pan or heavy skillet over medium-high heat. Drizzle on a small amount of olive oil.
  • Salt and pepper the chicken, then grill until totally done, 2 to 3 minutes per side. Remove from the pan and set aside to cool.
  • For the salad: Arrange the Bibb, romaine and iceberg lettuce in a large bowl or on a large platter in 3 separate sections. Arrange the bacon, tomatoes, eggs and avocados in different piles. Pile the blue cheese crumbles in the center, scatter over the scallions and sprinkle the whole salad with a little black pepper.
  • Drizzle the blue cheese dressing all over the salad and serve.

1 cup 4% cottage cheese
1/2 cup crumbled blue cheese, divided
1/4 cup mayonnaise
1/4 cup plain yogurt

2 garlic cloves, minced
1/4 teaspoon salt
1/4 teaspoon white pepper
SALAD:
12 cups torn Bibb or Boston lettuce
2 cups cherry tomatoes
1 small red onion, sliced
1 can (2-1/4 ounces) sliced ripe olives, drained
2 cups seasoned salad croutons

  • In a blender, combine the cottage cheese, 1/4 cup blue cheese, mayonnaise, yogurt, vinegar, garlic, salt and pepper. On a recent visit to South Carolina, I was lucky enough to visit Clemson University to try some of its famous blue cheese. The university first started making its tangy, marbled cheese in the 1940s, when a dairy professor realized that the cool, dank tunnel of an unfinished local railway line would make the perfect curing environment. Although the operations have since moved indoors, Clemson continues to make its Roquefort-style cheese in small batches using the same artisanal methods (see Sources, page 377). At the campus cafes, you can try everything from blue cheese pizza to blue cheese milkshakes. This rich, creamy dressing was inspired by the flavor of Clemson blue cheese-but in a pinch, any Roquefort-style cheese will do.

Yield makes about 2 cups

Number Of Ingredients 9

1 cup (4 ounces) crumbled blue cheese
3 tablespoons sherry vinegar
1 small shallot, minced
3/4 cup well-shaken buttermilk
1/4 cup your favorite or Homemade Mayonnaise (page 280)
1/4 cup Greek yogurt
1 tablespoon chopped fresh chives
1 teaspoon dried marjoram or basil
Sea salt and freshly ground black pepper

Steps:

  • Place the blue cheese, vinegar, and shallot in a small bowl and mash the cheese into the vinegar with the back of a fork to blend. Whisk in the buttermilk, mayonnaise, yogurt, chives, and marjoram until well combined. Season with salt and pepper to taste and refrigerate in an airtight container until ready to use, or for up to 1 week.
  • Re-create classic sports bar flavors by serving this thick, piquant dressing as a cooling dipping sauce for barbecued chicken and fresh celery, cucumber, and carrot sticks. It's also great drizzled over a wedge of crisp iceberg or Bibb lettuce.
