THE BEST CHOCOLATE FUDGE FROSTING

Steps:
- In a saucepan, over low heat, melt butter. Stir in cocoa powder. Mixture will resemble a thick paste.
- Transfer chocolate mixture to a large mixing bowl. With mixer on low speed, add in powdered sugar and milk, alternating the two. Reserve a few tablespoons of milk. If frosting is thick, add in remaining milk. Add vanilla extract.
- Turn mixer to medium high speed and beat about 5 minutes, until frosting is smooth and creamy.
- Frost cake or cupcakes as desired.
FROSTED FUDGE BROWNIES
A neighbor brought over a pan of these rich fudge brownies along with the recipe when I came home from the hospital with our baby daughter. - In a saucepan, melt butter. Remove from the heat. Stir in cocoa; cool. In a large bowl, beat eggs and sugar until blended. Combine flour, baking powder and salt; gradually add to egg mixture. Stir in vanilla and the cooled chocolate mixture until well blended. , Spread into a greased 13x9-in. baking pan. Bake at 350° until a toothpick inserted in the center comes out clean, 25-28 minutes (do not overbake). Cool on a wire rack. , For frosting, in a large bowl, cream butter and confectioners' sugar until light and fluffy, 5-7 minutes. Beat in cocoa and vanilla. Add enough milk for the frosting to achieve spreading consistency. Spread over brownies. Cut into bars.

COCOA FUDGE FROSTING
this is a frosting i came up with,,, I dont like SWEET icings and most i've tried are just that. it you like sweeter you can always use semi sweet chocolate instead of dark, and or add more sugar. you get between 4-6 cups of frosting, ive never measured. as a side note I take the left over frosting and fold some whipped topping into,, makes a good mousse.

- put chocolate chips,butter, peanut butter, and sour cream in pan and melt. once melted stir and transfer to a bowl.
- with a hand mixer, mix in cocoa and sugar. mix for 1 -2 min ( at this point it becomes crumbly,, and looks oily,,,,, dont worry it comes together.)
- add vanilla and irish cream, mix well.
- add heavy cream a little at a time while mixing ( this is when it transforms into a very smooth fudgy frosting.) beat til desired consistency.

- In a heavy medium saucepan, combine the sugar, cocoa, and salt, and stir or whisk to mix everything well.
- Add the butter and place over medium heat, stirring to melt the butter and mix everything together into a smooth, brown sauce.
- Add the milk, stir well, and bring the frosting to a boil, stirring often and adjust the heat to maintain an active but gentle boil, and cook for 5 minutes, stirring often.
- When the frosting begins to thicken, remove it from the heat and stir in the vanilla and set it aside to cool for about 20 minutes.
- Beat the frosting just until it thickens and looks shiny, and then spread it over the cake or the layers you want to ice.
COOKED FUDGE FROSTING
A Tradition in the South. Pour this frosting over a cooled yellow cake in which holes have been poked to allow all the goodness to saturate the cake. The frosting firms up after cooling and makes a wonderful cake topping.
