Braised Collard Greens with Turkey Bacon image

This lightened up version of collard greens has a lot of flavor but light on the fat and calories.

2 Tablespoons olive oil
4 strips of turkey bacon (chopped)
2 cloves garlic (minced)
1 very large bunch collard greens (stemmed and sliced into bite size strips)
1 cup low sodium chicken stock (plus extra if needed)
3 Tablespoons cider vinegar
1 Tablespoon sugar
1/2 teaspoon cayenne pepper
salt (to taste)

Steps:

  • Heat the oil on medium heat in a medium size sauce pan. Add the bacon and saute for a few minutes or until starting to crisp, then set aside on paper towels, leaving the oil in the pan.
  • Add the garlic and saute until fragrant. Add the collard greens and cook until they begin to wilt.
  • Pour in the stock, vinegar, sugar and pepper. Cover and lower the heat to a simmer. Let cook until the greens are tender, about 40 minutes.
  • Uncover, add the bacon, raise the heat to medium-high, and reduce the liquid until there is barely any left. Season with salt if necessary.

Good ole country collard greens with bacon and onion. These are so hearty and satisfying, even those who say "I don't like greens" will eat these up! You might even get a "Wow!" after the first bite and a "not at all like I remember them tasting". You can eat them alone but they're best with hot buttered cornbread. Mustard and turnip greens are great this way too. Enjoy!

½ pound bacon ends and pieces
1 large white onion, chopped
1 tablespoon minced garlic
¼ teaspoon red pepper flakes, or to taste
¼ teaspoon salt
¼ teaspoon ground black pepper
4 cups water
2 bunches collard greens, coarsely chopped

Steps:

  • Place bacon in a heavy pot and cook over medium-high heat, turning occasionally, until fat begins to render, about 5 minutes. Drain off 1/2 of the bacon grease.
  • Reduce heat to medium and add onion. Cook, stirring often, for about 5 minutes. Add garlic, red pepper flakes, salt, and pepper; cook and stir for 2 minutes.
  • Increase heat to high and immediately pour in 3 cups water. Bring to a boil, stirring to scrape up browned bits from the bottom of the pot. Add chopped collard greens and 1 more cup of water. Bring back to a boil. Reduce heat and simmer until greens are tender, about 1 hour.

These pork-free collards are a combination of different ingredients that I have tried in my greens over the years trying to perfect them. This is what I finally came up with. Everyone loves them!

¼ cup olive oil
¼ pound turkey bacon, chopped
¼ pound bulk turkey sausage
1 medium onion, thinly sliced
5 tablespoons chopped garlic
2 pounds collard greens, rinsed and trimmed
2 cups chicken stock
½ cup white wine
½ cup white sugar
1 teaspoon molasses, or more to taste
1 teaspoon apple cider vinegar, or to taste
1 teaspoon liquid smoke, or to taste
salt and ground black pepper to taste

Steps:

  • Heat olive oil in a large skillet over medium heat. Add bacon, sausage, onion, and garlic; saute until sausage is browned and crumbly, 7 to 10 minutes.
  • Meanwhile cut collards into thin strips; add to sausage mixture. Pour in chicken stock and wine. Add molasses, vinegar, liquid smoke, salt, and pepper. Cover and cook, stirring every few minutes, until most liquid is evaporated and collards are tender, about 45 minutes.

1 (12 ounce) package smoked turkey bacon, chopped
8 cups water
1 ½ cups chicken broth
1 tablespoon sea salt
1 teaspoon ground black pepper
1 pinch ground cumin
1 pinch cayenne pepper
1 pinch celery seed
1 pinch dried dill weed
1 tablespoon salted butter
2 medium leeks, chopped
2 cloves garlic, minced, or more to taste
2 pounds collard greens, rinsed and trimmed

Steps:

  • Cook bacon in a large skillet over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels.
  • Bring water to a boil in a large pot with chicken broth, salt, pepper, cumin, cayenne, celery seed, and dill.
  • While the mixture comes to a boil, melt butter in a small pan over medium-high heat. Saute leeks and garlic in the hot butter until garlic is lightly browned, 3 to 4 minutes. Add to the pot of water.
  • Cut collard leaves in half and stir into the boiling mixture. Add cooked turkey bacon and cook over high heat for 30 minutes. Reduce heat and simmer, stirring occasionally, until greens are tender and flavors have melded, about 1 hour.
  • Serve hot with or without some of the juice, adding more salt and pepper to taste.

2 large bunches collard greens
4 ounces thick-cut bacon, chopped
1 yellow onion, thinly sliced
Pinch red pepper flakes
1 tablespoon canola oil, if needed
6 cloves garlic, minced
2 cups low-sodium chicken broth
1/4 cup dry white wine
1/4 cup freshly squeezed lemon juice
Kosher salt and freshly cracked black pepper

Steps:

  • Cut and trim the collard greens, removing the tough stems. Roughly chop the trimmed greens into 1/2-inch ribbons.
  • Cook the bacon in a large skillet over medium heat until crispy, 8 to 10 minutes. Transfer to a plate with a slotted spoon to leave behind all of the delicious bacon fat to cook the collard greens in.
  • Add the onions and red pepper flakes to the same skillet. Depending on the bacon you use, you may need more fat in the pan, so add the canola oil if needed. Saute until the onions are softened, fragrant and beginning to brown, 5 to 7 minutes. Add the garlic and sweat 30 seconds. Then add the collard greens, stirring constantly until softened. Pour in the chicken broth and wine and bring to a simmer. Reduce the heat to medium-low, cover and cook until the greens are tender, 30 to 35 minutes.
  • Once the greens are tender, return the bacon to the pan, add the lemon juice and season with salt and pepper.

4 slices of bacon, uncooked and chopped up
Oil (I used Avocado Oil, but Olive oil would work just fine)
1 cup diced sweet onion
1 pound collard greens, washed and sliced into 2-3 inch pieces
1 tablespoon minced garlic
1 teaspoon salt
1 teaspoon black pepper
Pinch of red pepper flakes (optional)
3 cups chicken broth
White vinegar (optional)

Steps:

  • Add a little bit oil to the pot of your Instant Pot and set to medium saute.
  • Yes, this bacon is not chopped up - but it cooks a lot faster and easier when it is ???? I ended up chopping it up after I took this picture.
  • Once the oil is heated, add bacon and cook until done. Remove and put in a bowl.
  • Remove and cook onions in the bacon grease and oil for about five minutes. Add garlic at the end and cook for about one minute - stir the entire time to prevent burning.
  • Remove onion and garlic and deglaze the bottom of the pan with a couple of splashes of water
  • Add the collards into the pot along with the bacon, onion, garlic and a little extra oil and saute until wilted
  • Add salt and pepper.
  • Add chicken broth and stir with the wilted collards.
  • Put the lid on the pot, seal it, and set to five minutes on the steam setting.
  • Once the timer goes over, quick pressure release all the pressure
  • Serve immediately - use a slotted spoon to serve. There will be a lot of liquid, so the slotted spoon is essential!
  • Save
  • Add a little vinegar if you desire!

UPDATE: I just made them without bacon since I didn't have any and just added a smoky hot sauce and they were still good. Some sort of fat just makes them extra good though.

4 slices thick-sliced bacon, sliced crosswise into 1/2-inch pieces
1 small yellow onion, chopped
2 garlic cloves, minced
1 -2 tablespoon maple syrup
1 teaspoon salt
1/2 teaspoon fresh ground black pepper
3 dashes hot sauce
1/4 cup apple cider vinegar
2 lbs collard greens, stems removed, sliced into 3-inch-wide strips (can substitute kale or chard)
1 cup chicken broth

Steps:

  • Heat a large skillet on medium heat. Cook the bacon in the skillet until it just begins to brown around the edges, stirring occasionally. Don't overcook the bacon. It should be barely brown around the edges and still somewhat raw-looking in the middle.
  • Add the garlic, salt, pepper, syrup and hot sauce. Cook until the garlic becomes fragrant, about a minute. Add the vinegar, bring to a simmer, and cook until the amount of liquid is reduced by half, stirring and scraping up any browned bits from the bottom of the pot.
  • Add the collard greens and the chicken broth (or water) and bring to a simmer. Reduce the temp to medium-low. Cook, stirring occasionally, until the collard greens have wilted and have lost their brightness. Season to taste with additional vinegar and hot sauce.
