SOUTHERN FRIED CABBAGE WITH SAUSAGE
This is a family favorite cabbage recipe. The cabbage is cooked down with tomatoes, seasonings and smoked sausage for a hearty and delicious meal-in-itself. Serve with cornbread.

Steps:
- Chop/slice the sausage, cabbage, and onion.
- In a large non-stick skillet, pre-cook the sliced sausage about 3 minutes to render some of the fat out. Remove sausage from skillet and drain on paper towels if needed. Set aside. Wipe the skillet clean.
- In the same skillet, melt the butter. Add cabbage and onion and cook and stir on medium-high for about 5 minutes, until cabbage starts to wilt.
- Add remaining ingredients, and the sausage.
- Cover the skillet and cook for about 10 minutes.
- Uncover, and finish cooking until cabbage is desired tenderness and most of liquid has been reduced.

- Place the bacon and vegetable oil into a large pot over medium heat. Season with salt and pepper. Cook for about 5 minutes, or until bacon is crisp. Add cabbage, onion, and sugar to the pot; cook and stir continuously for 5 minutes, until tender.

- Start by slicing the bacon into pieces that are just over a half inch, and give it a couple twists of fresh cracked pepper. Using a large skillet on medium high heat, fry up the bacon, and remove to paper towels when done.
- Using the bacon fat, add the onion and let it cook a minute or two before adding the garlic. Immediately stir in half the chopped cabbage and season with salt, pepper, onion powder, and paprika or Cajun seasoning. Stir and flip it over to get it all coated with the oil. Let the cabbage cook down for a few minutes. Add the rest of the cabbage and stir all together.
- Reduce heat and add bacon to cabbage, stir, and let simmer about 20-25 minutes stirring occasionally.

SWEET AND SPICY JERK PORK
Steps:
- Preheat oven to 400F
- Wash, rinse, and drain the pork pieces with salt and lemon juice.
- Use a paper towel to pat the meat dry. Transfer meat to a large bowl, add jerk seasoning, onions, scallions, ginger, cilantro, accent, parsley, and browning sauce.
- Using gloves or a mixing spoon combine all ingredients and place the seasoned meat into a baking pan.
- Cover with aluminum foil and bake for about 2 hours or until meat is fork-tender.
- Sweet Jerk Glaze
- Combine the sauce ingredients, and add to a saucepan, simmer on low heat until sauce the thickens. If the sauce isn't thick enough combine cornstarch with water and add to the sauce.
- Drizzle unto Jerk Pork, combine and serve.

Steps:
- Heat an iron skillet over medium heat.
- Add the chopped bacon pieces and cook until crispy. Remove the bacon once cooked and set aside to use as garnish later.
- Remove and discard any undesirable outer leaves from the cabbage.
- Cut the cabbage into strips or chop into smaller pieces if desired.
- Add the cabbage to the skillet and turn to coat with the bacon drippings.
- Season with salt and cracked black pepper.
- Cook until tender, turning occasionally.
- Use reserved bacon pieces as garnish or add back to the cooked cabbage, mix and serve.

- In a large skillet over medium heat, cook the bacon until crisp. Remove the bacon from the pan using a slotted spoon and allow the bacon fat to remain in the skillet.
- Add the onion to the pan. Cook until translucent - about 5 minutes.
- Add the cabbage and cook, stirring occasionally, for about 10 minutes. Add the chicken broth, salt, and pepper and cook, stirring occasionally, until the cabbage is tender to your liking. Add the bacon back to the skillet and stir to combine. Serve immediately.
