CORNMEAL POPOVERS RECIPE BY TASTY

Here's what you need: large eggs, unsalted butter, kosher salt, milk, all-purpose flour, cornmeal

4 large eggs
4 tablespoons unsalted butter, 1/2 stick, melted, plus 2 tablespoons, softened for greasing
2 teaspoons kosher salt
3 ½ cups milk
1 ½ cups all-purpose flour
1 cup cornmeal, finely ground

Steps:

  • In a large bowl, combine the eggs, melted butter, salt, and milk. Whisk well.
  • Sift in the flour and cornmeal and slowly whisk to incorporate. Let the batter sit for at least 30 minutes, or up to 4 hours.
  • Preheat the oven to 400˚F (200˚C). Place 2 12-cup muffin tins in the oven as it preheats.
  • Remove the hot muffin tins from the oven and brush with butter, then return to the oven for 5 minutes.
  • Remove the muffin tins from the oven and distribute the batter evenly among the muffin cups, filling them almost to the rim.
  • Bake for 15 minutes, then reduce the oven temperature to 350˚F (180˚C) and bake for 15 minutes more, until the popovers are lightly browned and puffed.
  • Serve immediately.

1 stick (8 tablespoons) unsalted butter, at room temperature
2 tablespoons mascarpone cheese, at room temperature
1/2 teaspoon freshly grated lemon zest (from about 1 lemon)
1/4 teaspoon kosher salt
1 cup all-purpose flour
1/2 cup fine cornmeal
1/2 teaspoon kosher salt
1/4 teaspoon ground fennel seed
1 3/4 cups whole milk
3 large eggs
4 tablespoons unsalted butter, melted

Steps:

  • For the lemon butter: In a medium bowl using a rubber spatula, combine the butter, mascarpone, lemon zest and salt. Set aside.
  • For the popovers: Position an oven rack in the lower third of the oven and preheat to 450 degrees F. Once preheated, place a 12-cup muffin tin on the lower rack for at least 10 minutes.
  • In a medium bowl, whisk together the flour, cornmeal, salt and fennel seed. Make a well in the center of the dry ingredients and add the milk, eggs and 2 tablespoons of the melted butter. Starting with the wet ingredients in the center, whisk together to combine. Whisk until smooth. Allow the mixture to sit for 10 minutes to allow the cornmeal to soften.
  • Remove the muffin tin from the oven, brush the cups with the remaining 2 tablespoons of butter and divide the batter among the cups, filling them three-quarters of the way. Return to the oven and bake until puffed and deep golden brown, about 20 minutes. Serve immediately with the lemon butter.

1 tablespoon fresh chives, snipped
1 tablespoon butter, melted and cooled to room temperature

3 eggs
1/4 cup sugar
1/2 teaspoon almond extract
1 pinch salt
1 cup milk (2% is fine)
1 cup flour
3 tablespoons butter
1/2 cup blueberries
1/2 lemon
powdered sugar

Steps:

  • Preheat oven to 450 degrees.
  • Mix eggs and sugar well. Whisk in milk, then almond extract and pinch of salt. Whisk in flour, mixing until almost all the lumps are gone and the batter resembles thick cream. Set aside. In fact, let the batter rest for an hour, if you have the time - although it doesn't matter that much. Popovers will rise slightly more if batter has rested.
  • Place 1/2 tablespoon of cold butter in each cup of a six-muffin pan (for large muffins). When the oven has preheated, place the pan in the oven, directly on the middle oven rack. (Remove any rack that is above the pan.) Heat the pan for 3 minutes.
  • Remove hot pan from oven. Whisk batter, briefly, and pour into muffin pan. Add blueberries, dividing evenly among the muffins. Use a knife or fork to make sure berries are covered - even if only a little - by the batter.
  • Bake at 450 degrees for 12 - 15 minutes. Reduce temp to 350 degrees and bake for another 20 minutes.
  • Remove from oven and squeeze lemon juice over the tops; sprinkle with powdered sugar. Serve immediately.

2011-01-05 The old Cocke 'n Kettle restaurant in Uxbridge, Massachusetts managed to keep its feet in both of those decades. A fixture in the Blackstone Valley for almost forty years, the Cocke 'n Kettle closed in 2008. Before that happened, however, people came for the famous popovers and the plentiful hors d'ouevres in the cocktail lounge.

BASIC POPOVERS WITH VARIATIONS | OREGONIAN RECIPES
2017-01-03 Place milk in glass measuring cup and heat in microwave until just room temperature. Measure ½ tablespoon oil in each cavity of popover pan. With a pastry brush, thoroughly brush oil up all the sides and over the rims of the pan. Place the pan in the oven. In a medium-sized bowl, combine eggs, milk and salt and whisk until just combined.

2022-01-20 Preheat your oven to 450°F. Grease six 6-ounce custard cups or popover pans with butter and set aside. Place the eggs into a medium bowl and beat until light and fluffy. Add in the flour, milk, vanilla and salt, then mix until just smooth. Don't overmix! Place the popover pans into the oven and heat for 2 minutes.
