2 medium zucchini (about 1-1/2 pounds), shredded
2-1/2 teaspoons salt, divided
6 large eggs
2 medium ears sweet corn, husked
6 tablespoons butter
2 green onions, chopped
6 tablespoons all-purpose flour
1/4 teaspoon pepper
1-1/4 cups 2% milk
1/2 cup shredded Swiss cheese

Steps:

  • Place zucchini in a colander over a plate; sprinkle with 1 teaspoon salt and toss. Let stand 30 minutes. Rinse and drain well; blot dry with paper towels. Meanwhile, separate eggs; let stand at room temperature 30 minutes. Grease a 2-1/2-qt. souffle dish; dust lightly with flour., Preheat oven to 350°. Place corn in a large saucepan; add water to cover. Bring to a boil. Reduce heat; cook, covered, 3-5 minutes or until crisp-tender; drain. Cool slightly. Cut corn from cobs and place in a large bowl., In a large skillet, heat butter over medium-high heat. Add green onions and zucchini; cook and stir until tender. Stir in flour, pepper and remaining salt until blended; gradually stir in milk. Bring to a boil, stirring constantly; cook and stir 1-2 minutes or until sauce is thickened. Add to corn; stir in cheese., Stir a small amount of hot zucchini mixture into egg yolks; return all to bowl, stirring constantly. Cool slightly., In a large bowl, beat egg whites on high speed until stiff but not dry. With a rubber spatula, gently stir a fourth of the egg whites into zucchini mixture. Fold in remaining egg whites. Transfer to prepared dish. , Bake 45-50 minutes or until top is puffed and center appears set. Serve immediately.

¼ cup butter
½ small white onion, finely diced
3 small zucchinis, diced
3 ears corn, husks and silk removed
sea salt to taste
freshly ground black pepper to taste

Steps:

  • Heat butter in a skillet over medium heat, stirring occasionally, until lightly browned, 1 to 2 minutes. Cook and stir onion in the melted butter until translucent, about 5 minutes. Cut kernels from the ears of corn. Add zucchini and corn; cook and stir until zucchini is tender, about 8 minutes. Season with sea salt and pepper.

1 teaspoon baking powder
4 eggs
½ cup vegetable oil
1 onion, chopped
2 pounds zucchini, peeled and diced

  • Preheat the oven to 350 degrees F (175 degrees C).

5 large eggs
1/2 Teaspoon salt
1/3 cup sliced green onions
3 Tablespoons butter
2/3 cup milk
1 cup sharp cheddar cheese, grated
2 cups fresh corn kernels
1 1/2 cups shredded zucchini
1/4 cup Parmesan Cheese, grated
pinch of Cayenne Pepper
pinch of ground nutmeg
1 1/2 cups grape tomatoes
1/2 cup green onions, sliced
3 Tablespoons lime juice
3 Tablespoons fresh cilantro
2 Tablespoons seeded and finely chopped Jalapeno Pepper
1/2 Teaspoon salt
1/2 Teaspoon cumin

Steps:

  • For The Tomato Relish : Place all the Tomato Relish ingredients in to a bowl and toss them gently. Serve with slices of the Zucchini and Corn Souffle.
  • For The Zucchini and Corn Souffle:
  • The first step in in making Zucchini and Corn Souffle is preheating the oven and greasing a 10 inch round baking dish that holds 2 quarts with butter. Beat the egg whites in a large bowl with a 1/2 Teaspoon of salt until stiff peaks form. Set the whites to the side. Place the egg yolks in a medium bowl and beat them slightly, set the bowl aside.
  • Place the sliced green onions and butter in a medium size saucepan, cook and stir the onions and butter for 1 minute. Stir the flour into the ingredients in the saucepan. Add the milk all at once to the pan.. Cook and stir the ingredients until they are thick and bubbly.
  • Stir about half the mixture we just made with the milk ,into the bowl with the egg yolks. After the egg yolk and milk mixture is stirred together, place it back into the pan with the rest of the green onion/milk mixture. Stir the shredded Cheddar Cheese, Cayenne pepper and nutmeg into the pan. Cook and stir the ingredients until the cheese melts. When the cheese has melted remove the pan from the heat.
  • Fold about a half cup of the egg whites to the sauce to lighten it. Gently fold the egg white and sauce mixture into the remaining egg whites. Fold the corn and shredded zucchini into the bowl. Spoon the mixture into your buttered baking dish and sprinkle with grated Parmesan Cheese. Bake the dish for about 25 minutes or until a knife inserted into the center comes out clean.
  • For The Tomato Relish - Place all the Tomato Relish ingredients together in a bowl and stir to combine them. Serve with your gorgeous Zucchini and Corn Souffle

2 tablespoons unsalted butter
4 sprigs green onions, chopped with tops
1 (14-ounce) can white cream-style corn
1 (14-ounce) can yellow cream-style corn
1 tube (1/4-pound) "unsalted" soda crackers, pulverized
2 eggs, lightly beaten
1/4 cup milk
3 tablespoons all-purpose flour
1/2 teaspoon baking powder
5 ounces chopped roasted red peppers
1/4 cup chopped flat-leaf parsley
Salt and pepper
Ground paprika, for garnish

Steps:

  • Preheat oven to 350 degrees F.
  • Heat a medium skillet over a medium/high flame and melt the butter. Add the onions and sweat until limp but not browned. In a large bowl combine the corn, broken-up crackers, eggs, milk, flour, baking powder, red peppers, parsley and cooked onions and stir well to combine. Season mixture with salt and pepper and scrape into a prepared 9 by 13-inch glass or ceramic casserole that has been sprayed with no-stick. Garnish with paprika, to taste. Cover with foil and bake for 25 minutes, then remove the foil and continue to bake for 30 minutes more. The souffle is ready when the top is golden brown and springs back to the light touch. Cool for 5 to 10 minutes and serve immediately, or reheat in a slow, 250 degrees F for 10 to 15 minutes.

Homemade tomato relish tops a cheesy summer soufflé full of fresh corn and shredded zucchini.

5 eggs
½ teaspoon salt
⅓ cup sliced green onions
3 tablespoons butter
1 tablespoon all-purpose flour
⅔ cup milk
1 cup shredded sharp cheddar cheese (4 ounces)
Dash cayenne pepper
Dash ground nutmeg
2 cups fresh corn kernels
1 ½ cups shredded zucchini
¼ cup finely shredded Parmesan cheese
1 Tomato Relish
¼ cup shaved Parmesan cheese(optional)

Steps:

  • Preheat oven to 400 degrees F. Grease a 2-quart shallow round (10-inch diameter) with butter; set aside. In large mixing bowl beat whites and 1/2 teaspoon salt until stiff peaks form; set aside.
  • Place yolks in bowl; beat lightly. Set aside. In medium saucepan cook and stir onions in butter 1 minute. Stir in flour. Add milk all at once. Cook and stir until thickened and bubbly. Stir about half the mixture into yolks. Return all to saucepan. Stir in cheddar, cayenne, and nutmeg until cheese melts. Remove from heat.
  • Add about 1/2 cup of the egg whites to the sauce to lighten. Gently fold whites-sauce mixture into remaining whites. Fold in corn and zucchini. Spoon into dish. Sprinkle with Parmesan. Bake uncovered, 22 to 25 minutes or until a knife inserted near center comes out clean. Let stand 10 minutes. Serve with Tomato Relish and, if desired, Parmesan shavings.

Zucchini and Red Pepper Souffle (Served Individual) image

These are light and airy and a perfect side dish. Don't expect something too spicy, because zucchini by nature tends to have mild or almost "bland" flavor as some call it. But if you are a zucchini lover, this is definitely for you. Feel free to add a bit more spice, but I enjoy these as is. There is just a subtle flavor with the red pepper and a little cheese. I originally baked these in a regular muffin pan, but I prefer to use the larger muffin pan now, but you can easily use 13x9" pan. Feel free to change this up by adding chopped mushroom, scallions, green or yellow pepper, olives, or different cheeses.

2 1/2 lbs zucchini, peeled and grated
1 medium onion, fine diced
1/2-2/3 cup diced red pepper
2 teaspoons garlic, minced
2 tablespoons fresh parsley, chopped fine (1 for the mix, 1 for the topping)
1/2 teaspoon dried oregano
1 tablespoon butter (to saute the vegetables)
paprika (sprinkled on top to finish)
salt
pepper
4 extra large eggs (extra large is what I used)
4 ounces monterey jack cheese, grated (approximately 1 cup grated)
1 cup flour
1 teaspoon baking powder
1/3 cup vegetable oil (don't use olive oil)

Steps:

  • Vegetable Base -- In a medium size saute pan, I like non-stick for this, but use what you have, add the butter and bring to medium heat. Then add in the onion, garlic and red pepper and cook 1-2 minutes, next -- add the zucchini and cook another 1-2 minutes. You just want to the vegetables to get a head start, you don't want them all the way done. Remove from the heat, transfer to a small bowl and season with parsley, oregano, salt and pepper.
  • Flour Base -- In a small bowl add the eggs and beat using a whisk until the eggs are light and fluffy, it should take about 1 minute.
  • Then in a large bowl, add the flour and baking powder and mix well. Then add the oil, cheese and egg and again -- mix well. Lastly, add in the vegetables and fold in so everything so it is well combined.
  • Bake -- Middle shelf of your oven and the temp should be at 350 degrees. Make sure that either your muffin pan or 13x9" pan is sprayed well with a non-stick spray. Pour the mixture in your pan or muffin tins and sprinkle with a little paprika and the remaining 1 tablespoon parsley. For the 13x9" pan, bake 50-60 minutes, a dark based pan will cook a bit quicker than a glass pan. If using muffin tins, it depends if they are the small or large muffins. The smaller ones should take around 20-30 minutes and the larger ones, 30-40 minutes. (oven times can vary).
  • Just check. Since it has an egg base, use the knife trick for testing cake. Stick the knife in the middle and if it comes out clean, they are done. Make sure to let them rest 5 minutes before serving.
  • Serve -- I like to run my knife around the edge of the muffins as well as the sides of the 13x9" pan first. Then flip the pan over if using the muffin pan and they will come right out. Otherwise, you can scoop or cut into squares. and serve. It is the perfect side dish ENJOY! It is light, airy, a great summer flavor.
  • And don't forget, mushrooms, peppers, even chopped tomatoes (as long as they were seeded and chopped fine) would be a great addition. Provolone, cheddar, swiss would all be nice. Use your imagination, or just clean out your refrigerator.
