¼ cup orange juice
2 tablespoons honey
2 tablespoons soy sauce
1 tablespoon white vinegar

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Place game hen halves with skin sides up into a 9x13-inch roasting pan.
  • Roast hens in the preheated oven for 35 minutes.
  • Stir orange juice, honey, soy sauce, and vinegar together in a small bowl; brush mixture over hens.
  • Roast hens for 5 more minutes and baste again with orange juice mixture. Roast until skin is browned and meat is no longer pink inside, about 10 more minutes.

1/4 cup butter, melted
1 teaspoon salt
1/2 teaspoon pepper
3/4 cup orange juice
1/2 cup packed brown sugar
1/2 cup Madeira wine, sherry or chicken broth
2 tablespoons lemon juice
1 teaspoon ground mustard
1/4 teaspoon ground allspice

Steps:

  • Preheat oven to at 350°. Tie legs of each hen together; turn wing tips under backs. Place on a greased rack in a roasting pan. Brush with butter; sprinkle with salt and pepper. Bake, uncovered, for 1 hour., Meanwhile, in a saucepan, combine the remaining ingredients; bring to a boil. Reduce heat; simmer, uncovered, until thickened, 15 minutes. Spoon over hens. Bake until a thermometer reads 170°, about 15 minutes longer.

4 Rock Cornish hens (about 2 lb each)
2 tablespoons roasted garlic-flavored vegetable oil or plain vegetable oil
1 teaspoon salt
1 teaspoon dried thyme leaves
1/2 teaspoon pepper
1 can (16 oz) whole berry cranberry sauce
3 tablespoons sweet orange marmalade
2 teaspoons grated gingerroot
1 clementine tangerine, peeled, sectioned
Thyme sprigs, if desired

Steps:

  • Heat oven to 350°F. On rack in shallow roasting pan, place hens, breast sides up. Brush with oil. Sprinkle inside and out with salt, dried thyme and pepper. Insert meat thermometer so tip is in thickest part of inside thigh and does not touch bone.
  • Bake uncovered 1 hour to 1 hour 15 minutes until juice of hens is clear when thickest pieces are cut to bone (at least 165°F).
  • Meanwhile, in 1-quart saucepan, heat cranberry sauce over low heat, stirring constantly, until melted. Stir in marmalade, gingerroot and clementine sections. Cook 1 minute.
  • To serve, cut each hen in half along backbone and breastbone from tail to neck, using kitchen scissors. Serve hens with warm sauce. Garnish with thyme sprigs.

Finish the hens on a preheated grill for another 7 minutes, turning and brushing with more sauce to glaze.

8 Cornish hens 1-pound thawed (if birds are slightly larger, use 4 and cut in half)*
Salt and pepper
1/2 cup butter or margarine, melted
1/2 cup water
Orange-Ginger Sauce:
1/2 cup orange rind shredded
3 tablespoons lemon peels grated
1 1/2 cups orange juice concentrate
4 tablespoons lemon juice fresh
2 cups red currant jelly
1 cup madeira wine (dry)
2 teaspoons dry mustard
1 teaspoon ginger ground (use 1 tablespoon grated fresh ginger
1/2 teaspoon salt
dash hot sauce

Steps:

  • Heat oven to 450°. Sprinkle cavity and outside of each hen with salt and pepper. Tie legs together and arrange breast side up in buttered, shallow roasting pan. Brush with butter or margarine. Roast uncovered for 15 minutes, then reduce oven heat to 375°. Turn birds breast side down and add 1/2 cup water and cover with foil loosely. Bake for 30 minutes. Turn breast side up and baste with drippings in pan. Continue basting from time to time and roast for another 15 minutes.To make sauce, combine orange and lemon peels and orange and lemon juices in small saucepan. Bring to boil and cook over medium heat, uncovered, 15 minutes or until peel is tender. Add jelly, wine, mustard, ginger, salt and pepper sauce. Bring to boil, stirring reduce heat and continue cooking at a simmer for another 10 to 15 minutes to reduce and thicken sauce. It should be like heavy cream.To serve, arrange whole birds on platter and remove string from legs. Spoon sauce over them and serve. Any sauce remaining can be served separately.* If 4 birds are used, split and cook them cut side down in roaster. Baste the last 15 minutes of cooking period. The halves should not take more than 45 minutes total cooking time. Test to be sure.

4 Cornish hens, thawed, rinsed and patted dry
4 oranges
salt
pepper
parsley
cornstarch

Steps:

  • Preheat oven to 500°F.
  • Prepare hens by rubbing mixture of salt and pepper into skin liberally.
  • Place on cookie sheet, breast side up.
  • Roast for 15 minutes at 500°F.
  • Remove from oven and turn breast down; pour 1 1/2 cups water over hens.
  • Turn oven down to 425°F and continue to cook for 1/2 hour.
  • Meanwhile, use a zester to obtain orange peel without cutting into pith of fruit.
  • Slice oranges in half and squeeze juice.
  • Place juice in saucepan with zest and heat thoroughly (do not boil).
  • Remove hens from oven and turn breast-side up and continue cooking for additional 1/2 hour (total cooking time is 1 hour 15 minutes).
  • Blend cornstarch with orange juice/zest mixture and heat to thicken, stirring constantly.
  • To serve: Place hen on plate and pour sauce over. Sprinkle with additional orange zest and parsley.

3 small onions, quartered
12 garlic cloves, crushed
1 bunch watercress

Steps:

  • Preheat oven to 400°F. Whisk first 6 ingredients in medium bowl. Pour 2 cups sauce into medium saucepan. Reserve remaining 1 cup sauce.
  • Rinse hens inside and out. Pat hens dry with paper towels. Cut and scrape off any visible fat from hens. Sprinkle inside and out with salt and pepper. Place 3 onion quarters and 3 garlic cloves in cavity of each hen. Arrange hens on rack on large rimmed baking sheet.
  • Roast hens 10 minutes. Baste with reserved 1 cup sauce. Continue roasting until hens are golden and juices run clear when thickest part of thigh is pierced, basting often with pan juices and reserved 1 cup sauce, about 45 minutes longer.
  • Transfer hens to cutting board; tent with foil to keep warm. Transfer pan juices to 4-cup glass measuring cup. Spoon fat off top of pan juices. Pour pan juices into 2 cups sauce in saucepan. Boil until sauce is reduced to 1 1/2 cups, about 12 minutes.
  • Discard onions and garlic from hen cavities. Using poultry shears, cut hens in half lengthwise. Remove backbones. Spoon some sauce onto plates. Place hens atop sauce. Garnish with watercress. Serve with remaining sauce.
