Creamy Salmon Pasta with Peas, Dill and Creme Fraîche image

This quick and easy Creamy Salmon Pasta with Peas, Dill and Creme Fraîche is a deliciously simple weeknight dinner requiring only a few ingredients.

8 ounces uncooked pasta
2 tablespoons butter
2 cloves garlic, sliced
1 cup frozen peas
1/2 cup creme fraîche (I use low fat)
1-2 tablespoons half and half
1/4 cup finely chopped fresh dill (or 1/2 teaspoon dried)
1/2 cup shredded Parmesan
12 ounces canned salmon, drained

Steps:

  • Bring a pot of water to a boil and add the pasta. Continue to boil until the pasta is tender, following package instructions. Drain and set aside.
  • Meanwhile, to a large skillet add the butter and garlic. Sauté the garlic over medium heat one to two minutes, or until soft but not brown. Reduce heat, add creme fraîche, 1 to 2 tablespoons of half and half to loosen it up, and the peas; gently simmer 2 to 3 minutes more. Add the salmon and dill; heat through and let the sauce thicken slightly.
  • Toss cooked pasta in the skillet with the sauce to coat. Season with salt and pepper to taste and top with shredded Parmesan. Stir gently to melt the cheese. Serve warm.

0.25 cup butter (divided)
1 medium onion (peeled and thinly sliced)
1.333 cups milk
4 strips Salmon fillet (about 675 g)
3 Tbsps all-purpose flour
2 tsps fresh lemon zest
1 Tbsp fresh lemon juice
1 Tbsp fresh, snipped Dill
1 cup frozen peas
salt (to taste)
freshly ground Black pepper (to taste)

Steps:

  • Melt half of the butter in a skillet set over medium heat and saute the onions until soft and translucent. Add the milk and salmon. Bring to a gentle boil, reduce heat, and simmer for 5 to 7 minutes. Remove the skillet from the heat and cool for 3 to 4 minutes.
  • Lift the fish out of the milk and peel away the skin, set aside, reserving the milk and onions.
  • In a separate skillet, melt the remaining butter and whisk in the flour. Gradually add the milk mixture and bring to a boil, stirring frequently until thick and creamy. Add the lemon zest, lemon juice, dill and peas. Carefully add the salmon back into the skillet and cook until the peas are tender and the salmon is heated through, about 3 to 4 minutes. Season with salt and pepper and divide among serving plates. Serve.

Pan Seared Salmon with Creamy Peas image

750 g (1½lb) Salmon fillets
1 tsp Salt
2 tsp olive oil
1 Shallot (finely chopped)
3 Garlic cloves (crushed)
750 g (1½lb) baby peas
2 tsp fresh dill (finely chopped (or 1 tsp dried dill) )
1 cup Cream
2 tbsp Sour cream
2 tsp Lemon juice
salt and pepper (to taste )

Steps:

  • Pat salmon fillets dry with paper towels. If you're using frozen salmon, allow to thaw in the fridge overnight.
  • Drizzle with a few teaspoons of olive oil and season with salt.
  • Place a large skillet or frying pan over medium-high heat and allow to preheat for a minute or two.
  • Place the salmon into the pan, skin-side down, and allow to sear for 2-3 minutes until the skin is crisp and golden.
  • Carefully flip over and allow to sear for another 2-3 minutes or until cooked to your preference.
  • The salmon is cooked when the flesh easily flakes apart. Remove the salmon from the pan and set aside.
  • In the same pan, add another tablespoon of oil then add the finely chopped shallot and garlic.
  • Sauté for a minute or two then add the peas and dill. Pour in the cream and add the sour cream.
  • Season with salt and pepper then bring to a simmer.
  • Cook for 5 minutes or until the peas are cooked. Add a squeeze of lemon juice and stir into the sauce.
  • Place the salmon back into the pan and allow to reheat.
  • Serve the salmon and peas with lemon wedges.

2 tablespoons all-purpose flour
1 1/4 cups milk
salt and pepper
14 3/4 ounces salmon, drained and picked free of bones and skin
1 cup canned peas
1 teaspoon lemon juice
1/4 teaspoon dried dill

Steps:

  • Melt butter in a large pan, add flour and cook over medium heat until light brown and pasty (1-2 minutes).
  • Slowly add milk and whisk until all flour bits are broken up. Continue to whisk while milk comes to a boil and thickens, and add salt and pepper to taste.
  • When cream sauce is slightly thickened, add salmon and peas and continue to cook until sauce is thickened up and the salmon and peas are heated through. Stir in lemon juice and dill.

1 pound salmon fillet, skin removed
3/4 teaspoon salt, divided
1/4 teaspoon black pepper, divided
6 ounces farfalle pasta
1 1/2 cups frozen peas
1 1/2 cups 1 percent milk,divided
3 tablespoons all-purpose flour
3 ounces Neufchaåtel
2 tablespoons chopped fresh dill, divided
1 tablespoon fresh lemon juice
1 teaspoon grated lemon zest

Steps:

  • Heat broiler to low. Coat a baking sheet with cooking spray. Season salmon with 1/2 teaspoon salt and 1/8 teaspoon pepper. Broil until cooked through, 5 minutes per side. Let cool; cut salmon into bite-size pieces. Cook pasta as directed on package; add peas 3 minutes before end of cooking time; drain. Whisk 1/4 cup milk and flour in a small saucepan until smooth; whisk in remaining 1 1/4 cups milk, remaining 1/4 teaspoon salt and remaining 1/8 teaspoon pepper. Cook over medium heat, whisking, until as thick as heavy cream, 10 minutes. Remove from heat; add Neufchaåtel and 1 tbsp dill; whisk until cheese melts. Toss pasta and peas with sauce and salmon; drizzle with juice. Garnish with zest and remaining 1 tablespoon dill.

2 -4 tablespoons all-purpose flour
2 -4 teaspoons canola oil or 2 -4 teaspoons olive oil
1 (16 ounce) can salmon, reserve liquid
1 cup instant mashed potatoes
1/4 cup onion, grated or diced
2 teaspoons lemon juice
1/4 teaspoon ground black pepper
2 large eggs
2 tablespoons butter
2 tablespoons all-purpose flour
1/2 teaspoon dried dill weed
1/2 teaspoon seasoning salt
3/4 cup milk (skim, 2% or whole)
1 (8 ounce) package frozen green peas

Steps:

  • PATTIES: Drain liquid from salmon and reserve for sauce.
  • Remove bones and skin, and flake salmon.
  • Mix all patty ingredients together.
  • Form into 4 patties.
  • Dip both sides in flour.
  • In frying pan, heat oil and fry patties over medium heat until lightly browned on both sides- about 10 minutes.
  • SAUCE: While patties are cooking, place peas in colander and rinse with hot water to defrost.
  • Drain In saucepan or skillet, melt butter; with whisk, stir in flour.
  • Gradually whisk in 1/4 cup reserved salmon liquid and milk, whisking to form a creamy sauce.
  • Add dill, salt and pepper, stirring constantly over medium heat until mixture gently boils and thickens.
  • Stir in the pea and cook 30 seconds to warm.
  • Do not cook peas.
  • Place patties on individual plates and spoon the sauce over.
  • ***Note: If you prefer, you can place the salmon mixture in 4 greased muffin cups and bake at 350 degrees for 25-30 minutes.
  • If using this method, omit the first two recipe ingredients (oil and flour).
  • VARIATION: You can substitute lightly steamed fresh asparagus for the peas.
  • If using asparagus, do not put in sauce.
  • Place asparagus over salmon patties and spoon sauce over both.

1 salmon fillet (about 2 pounds)
1 to 1-1/2 teaspoons lemon-pepper seasoning
1 teaspoon onion salt
1 small onion, sliced and separated into rings
6 lemon slices
1/4 cup butter, cubed
DILL SAUCE:
1/3 cup sour cream
1/3 cup mayonnaise
1 tablespoon finely chopped onion
1 teaspoon lemon juice
1 teaspoon prepared horseradish
3/4 teaspoon dill weed
1/4 teaspoon garlic salt
Pepper to taste

Steps:

  • Line a 15x10x1-in. baking pan with heavy-duty foil; grease lightly. Place salmon skin side down on foil. Sprinkle with lemon pepper and onion salt. Top with onion and lemon. Dot with butter. Fold foil around salmon; seal tightly,, Bake at 350° for 20 minutes. Open foil carefully, allowing steam to escape. This is a wonderful (and easy) recipe I got from my Aunt. The flavors of lemon and dill really complement the fish. I like to use wild Alaskan salmon for this recipe, but any salmon will work. I usually don't measure, so these are all estimates. Play with the ingredients to suit your own tastes!
