Easy Cheesy Spinach image

2 tablespoons unsalted butter
1 medium white onion, finely chopped
1 cup (8 ounces) cream cheese, softened
2 (10-ounce) boxes frozen spinach, thawed and squeezed dry
1 teaspoon freshly grated nutmeg
Kosher salt and ground white pepper

Steps:

  • Heat the butter in a 12-inch saute pan over moderate heat. Add the onions and cook until soft, about 8 minutes. Whisk in the cream cheese and let melt. Fold in the spinach until evenly combined. Add up to 3 tablespoons water if the mixture seems too dry. Sprinkle the nutmeg on top and season with salt and pepper.
  • BYOC: Lemon zest and juice would bring a little bit of sunshine to this dish. Just add with the salt and pepper.

Steps:

  • Cook tortellini according to package directions.

  • Gently mix in tortellini and cherry tomatoes with skillet contents; warm through, and serve.

1 tablespoon canola oil
3 garlic cloves, minced
1-1/2 cups ricotta cheese
1 cup shredded part-skim mozzarella cheese, divided
4 ounces cream cheese, softened
6 tablespoons grated Parmesan cheese, divided
1 teaspoon Italian seasoning
1/2 teaspoon pepper
1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry
8 manicotti shells, cooked and drained
1 jar (26 ounces) spaghetti sauce

Steps:

  • In a small skillet, saute onion in oil for 3 minutes. Add garlic; cook 1 minute longer. Set aside. , In a large bowl, combine the ricotta, 1/2 cup mozzarella cheese, cream cheese, 4 tablespoons Parmesan cheese, Italian seasoning and pepper; beat until smooth. Stir in onion mixture and spinach. Stuff into the manicotti shells., Pour half of the spaghetti sauce into a greased 13x9-in. baking dish. Arrange shells over sauce; top with remaining sauce., Cover and bake at 350° for 25 minutes. Uncover; sprinkle with remaining mozzarella and Parmesan cheeses. Bake 5-10 minutes longer or until cheese is melted.

1 shallot, minced
2 teaspoons fresh thyme
3 tablespoons unsalted butter
2 tablespoons all-purpose flour
1 cup low-sodium chicken broth
1 cup milk
Freshly ground pepper
2 cups shredded rotisserie chicken
1 10-ounce package frozen chopped spinach, thawed and squeezed dry
1 cup shredded gruyère cheese
Toasted breadcrumbs, for topping

Steps:

  • Bring a pot of salted water to a boil. Add the pasta and cook as the label directs, then drain.
  • Meanwhile, melt the butter in a large saucepan over medium heat. Add the shallot and thyme and cook until softened. Whisk in the flour and cook, whisking, for 2 minutes, then whisk in the broth and milk. Season with 1/2 teaspoon salt and a few grinds of pepper. Cook, whisking, until thickened, about 5 minutes.
  • Stir in the chicken, spinach and pasta and cook to heat through. Stir in the gruyère and season with salt and pepper. Divide among 4 bowls and top with toasted breadcrumbs.

This delicious pasta is very simple to make, yet it tastes as though it took hours. There are many variations of this recipe, but I've found this to be the easiest and best tasting. It is by no means a low-fat meal, but if you go for a nice big walk after you eat, you will think this pasta was worth the extra exercise! Serve it with a crisp salad and some crusty bread (for mopping up any excess sauce!).

12 ounces pasta, Bow-Tie or 12 ounces penne
1 lb hot Italian sausage, ground
1/2 cup onion, diced
2 garlic cloves, minced
10 medium cremini mushrooms, sliced
1 (16 ounce) can diced and peeled tomatoes, drained
1 cup heavy cream
2 tablespoons butter
1 teaspoon rosemary
1 teaspoon thyme
1/2 cup parmesan cheese, freshly grated

Steps:

  • In a large skillet over medium heat, melt butter and cook onions until they start to soften, stirring frequently.
  • Add mushrooms and garlic to skillet. Cook, stirring frequently, until mushrooms soften and onions begin to turn translucent (about 5 minutes).
  • At this point, bring water to boil in a large pot. Add pasta and cook according to package directions. Shoot for an al dente pasta, as it will hold up better in the sauce.
  • Add ground sausage to skillet and, using a spatula, break it into chunks as it cooks. Adjust temperature as needed to thoroughly cook the sausage.
  • When sausage is browned, drain any drippings off of the skillet. Return to medium heat and add drained tomatoes.
  • When tomatoes have heated through, add cream, thyme and rosemary. Bring to a simmer and reduce heat to med-low.
  • Simmer until sauce thickens (about 5 minutes). Remove from heat and add cheese, stirring until melted into the sauce.
  • Add cooked pasta to skillet and toss with sauce. Adjust the amount of pasta added to the skillet according to how 'saucy' you like your dish.
  • Season with salt, fresh ground pepper to taste. Garnish with additional grated parmasean and fresh parsley.

You can make the sauce with almost any cheese that you like. I used these two just because I had them on hand. Each cheese will give a different taste to the dish. Baby Bella mushrooms also work instead of Creminis.

2 tablespoons butter
1 teaspoon garlic, minced
1 teaspoon dried onion flakes
2 -3 tablespoons flour
2 cups skim milk
1/2 teaspoon salt
1/2 teaspoon pepper, freshly ground
1/4 teaspoon lemon pepper
1/8 teaspoon red pepper flakes
1/2 cup white cheddar cheese, grated
1/4 cup parmesan cheese, freshly grated
4 chicken sausage, fully cooked
1 tablespoon butter
1 cup cremini mushroom, sliced
4 cups egg noodles, cooked
1/4 cup parmesan cheese, freshly grated (optional)

Steps:

  • In a large saucepan, melt 2 Tbsp butter over medium heat. When bubbles form around edges, add garlic and onion flakes. Saute until golden.
  • Add flour and stir until all ingredients have come together (start with smaller amount of flour and add more if needed). Stir in milk slowly, whisking constantly. If some lumps form, just keep whisking as sauce comes to temperature. Add seasonings as sauce comes to a simmer.
  • Slowly add cheeses and whisk in as they melt. Taste and add more seasonings if desired. Simmer until desire consistency. Set aside on low heat.
  • Slice chicken sausage into desired sized rounds. In a separate skillet, saute sausage rounds until sides have browned. Add sausage rounds to sauce and toss to coat.
  • In the same skillet that sausage was cooked in, melt 1 Tbsp butter. Add sliced cremini mushrooms. Saute until golden. Add mushrooms to sauce and toss to coat.
  • Add cooked egg noodles to sauce mixture and warm over low heat until desired temperature. Serve with Parmesan cheese on top.
