1/2 ounce simple syrup
2 ounces gin (such as Hendrick's)

  • Add the cucumber wheels and simple syrup into a shaker and muddle.
  • Add the gin, the lime juice and ice and shake until well-chilled.
  • Strain into a coupe glass.
  • Garnish with a cucumber wheel.

  • Peel, seed and chop 6 English cucumbers. Puree, then strain through a sieve into a bowl, pressing to extract the juice. Chill. Combine 1/3 cup lemon juice, 8 sprigs mint and 1/4 cup sugar in a pitcher; muddle with a wooden spoon. Stir in 2 cups gin, the cucumber juice and some cucumber and lemon slices. Divide among 6 to 8 ice-filled glasses.

NOTE: I really liked this one. . .very faint cucumber taste but great fresh cucumber smell. I used 1.5 packets of stevia instead of sugar with great results. I also served mine over ice as it was a bit too potent for me as written!!!

1 teaspoon sugar

Steps:

  • Muddle the cucumber with the sugar in the bottom of a cocktail shaker. Add in the rest of the ingredients and 1/2 cup of ice.
  • Shake vigorously for 10 seconds and strain into a birdbath champagne glass or martini glass.
  • Garnish with a slice (or ribbon) of cucumber or a lime wedge.

4 1/2 cups Cucumber Gin (or 2 oz.), how-to follows
2 1/4 cups fresh lime juice (or 1 oz.)
1 cup plus 2 tablespoons Mint Simple Syrup (or 1/2 oz.), how-to follows
Cucumber peels, for garnish
Fresh mint sprigs, for garnish
Steep 2 1/2 cups diced, peeled cucumber in 4 1/2 cups gin, covered and chilled, 8 hours to 4 days (or 1/2 cup cucumber in 1 cup gin). Strain; store indefinitely in the refrigerator.
Heat 1 cup sugar and 1 cup water over medium-high heat, stirring until dissolved. Add 1 cup mint leaves; remove from heat. Cover; steep 30 minutes to 1 hour. Strain; discard mint. Refrigerate up to 2 months.

Steps:

  • In a 2-quart pitcher, stir gin, lime juice,and syrup. Refrigerate. To serve, pourinto a cocktail shaker filled with ice,shake vigorously, and divide amongice-filled 10-ounce glasses. (For a singledrink, mix in a cocktailshaker filledwith ice, and shake.) Garnish each withcucumber peel and mint.

Number Of Ingredients 8

1/2 cup sugar
1/4 cup plus 1 tablespoon water
1/4 cup mint leaf, fresh and coarsely chopped
2 teaspoons lime zest, finely grated
1/4 cup lime juice, fresh
1/4 cup gin
1 cucumber, peeled, seeded and pureed (12-ounces or approx. 1 1/4 cups)
1/2 teaspoon gelatin, unflavored powdered

Steps:

  • In a small saucepan, combine the sugar with the 1/4 cup of water and the mint and bring to a boil. Cover, remove from the heat and let stand for 15 minutes. Strain the mint syrup into a large bowl and let cool to room temperature. Whisk in the lime zest, lime juice, gin and cucumber puree.
  • In a microwave-safe bowl, sprinkle the gelatin over the remaining 1 tablespoon of water and let stand until softened, 5 minutes. Microwave the mixture at high power for 8 seconds, until the gelatin dissolves. Whisk the gelatin into the cucumber mixture.
  • Arrange ten 2-ounce paper cups on a baking sheet. Pour the popsicle mixture into the cups and freeze for 1 hour, until partially frozen. Insert a stick in the center of each cup and freeze for 30 minutes longer, until fully frozen. Tear off the paper and serve. Or you can use a standard popsicle mold, and double/triple the recipe.
