This rosemary vodka gimlet is a lovely combination of sweet and sour with an earthy essence and wonderful herbal aroma. It truly smells divine. I prefer vodka in this cocktail because I think the juniper berries in gin would overwhelmingly compete with the delicate rosemary notes, but feel free to experiment!

1 c sugar
1/2 c water
2 sprigs rosemary (lightly crushed)
2 oz vodka
3/4 oz rosemary simple syrup
1/2 oz fresh squeezed lime juice
ice (as needed)
soda water (optional)
1 fresh rosemary sprig (for garnish)

Steps:

  • Make the rosemary simple syrup. Combine the sugar and water in a small pot over high heat, whisking constantly until the sugar is completely dissolved and the syrup turns clear. Continue to heat until the syrup comes to a boil, then remove from heat. Gently crush the rosemary sprigs between your fingers, then to the simple syrup and stir. Steep at room temperature at least 2 hours, and up to four. Makes approximately 1/2 cup simple syrup; leftovers will keep in the fridge for up to a month.
  • To serve straight up: combine the vodka, lime juice and simple syrup in a cocktail shaker. Fill shaker with ice. Stir until condensation forms on the outside of the shaker. Cover the shaker and strain into a coupe glass. Garnish with a rosemary sprig.
  • To serve on the rocks: combine the vodka, lime juice, and simple syrup in a cocktail shaker. Fill shaker with ice. Stir until condensation forms on the outside of the shaker. Fill a rocks glass with ice, then pour the cocktail over the ice. Top with soda water. Garnish with a rosemary sprig.
  • To make a large batch (serves about 10): make a double batch of simple syrup. Combine 2.5 cups vodka, 1 cup simple syrup, and 5 ounces lime juice in a pitcher. Chill at least 4 hours, or until throughly chilled. Place the pitcher into a larger container, then fill container with ice (like a bucket). Set out coupe glasses and fresh rosemary sprigs and allow guests to self-serve cocktails into the glasses, or pour over ice topped with soda water.

7 oz diet tonic water or soda water
1 small cucumber
1 small lime
2 sprigs fresh rosemary
2 oz vodka
ice (large cube)

Steps:

  • Cut 2-3 thin slices off the end of the cucumber. Use a vegetable peeler to create thin slices from the long end of the cucumber.
  • Cut the lime wedges, then gently roll the cucumber slices around the lime wedge or into a rolled shape. Thread onto a toothpick to garnish your drink.
  • Add the cucumber slices and fresh rosemary to your glass. If desired, clap the sprig of rosemary between your hands to release a stronger aroma and flavor. Add the ice, diet tonic or soda water, and vodka, if using. Gently stir, garnish with the lime-cucumber toothpick, then serve immediately.

An evolution of soda water with bitters, think of this as a spin on the gin and tonic. Vegetal cucumber and herby mint replace the botanicals in the gin. If tonic water is too bitter for you, swap in soda water instead. And, if you're eschewing alcohol in all its forms, skip the bitters. (They do contain alcohol, though it's diluted here.)

1/2 cucumber, preferably hothouse
4 thin slices of lime
2 sprigs mint
Tonic or soda water, to taste
Peychaud's bitters, to taste (optional)

Steps:

  • Using a vegetable peeler, peel the cucumber lengthwise until you have long, wide ribbons.
  • Place a few slices of lime and mint leaves in the bottom of a Collins glass, or other tall glass, and, using a wooden spoon, lightly muddle them to release the juices in the lime and oils in the mint. Add a few strips of cucumber and fill the glass with ice (crushed, if you've got it).
  • Top with tonic water and a few dashes of bitters, if using.
