WATERMELON-CUCUMBER MARGARITAS
Very refreshing summer drink. Also yummy as a Mojito (sub Rum for the tequila) or non-alcoholic (sub club soda for alcohol). I'm not sure where I found this recipe, maybe Gourmet or Bon Appetit.

Steps:
- Place first three ingredients in a medium bowl. Press firmly on solids with a muddler or the back of wooden spoon until mashed.
- Mix in tequila, lime juice, Simple Syrup, and Cointreau, then 1 cup ice.
- Stir to blend well.
- Divide remaining ice between two tall glasses.
- Strain Margarita mixture into glasses.
- Garnish with watermelon skewers and mint sprigs.
- Note: To make your own Simple Syrup, stir together one cup sugar and one cup water in a saucepan over medium heat. Bring to a boil, then reduce heat and simmer about three minutes, until sugar is dissolved. Cool before using.

FROZEN WATERMELON MARGARITAS
Steps:
- Place watermelon in a food processor and process until smooth. Pour the pureed watermelon into 2 empty ice cube trays and freeze until firm, at least 4 hours. Place 8 martini glasses in the freezer to chill.
- Place 2 cups of the watermelon ice cubes and the remaining ingredients in a blender and blend until smooth. Pour into 4 glasses and repeat with the remaining ingredients. Garnish each glass with a watermelon wedge.

- Combine water and sugar in a saucepan over medium heat; stir until sugar has dissolved, 5 to 7 minutes. Remove from heat and pour into a container. Place simple syrup in the freezer to quickly chill, about 15 minutes.
- Meanwhile, peel 3 cucumbers and place into a juicer; process to yield about 2 cups juice. Run through a strainer to remove excess pulp. Combine cucumber juice, tequila, lime juice, and chilled simple syrup in a large pitcher. Chill in the refrigerator for at least 1 hour.
- Slice remaining cucumber for garnish. Moisten rims of glasses using lime wedge. Pour salt into a small plate and dip each glass to coat rims. Place about 3/4 cup ice into a cocktail shaker. Stir cucumber mixture, pour some into the shaker, and shake for 10 seconds. Pour into prepared glasses. Repeat with remaining mixture. Garnish glasses with cucumber slices.

WATERMELON MARGARITA
Mixing cocktails may seem intimidating, but it's actually quite intuitive once you understand how to balance the alcohol, sweetness and acidity. In "3-Ingredient Cocktails" (Ten Speed Press, 2017), Robert Simonson presents the formula for a perfect margarita: 1½ ounces tequila, 1 ounce Cointreau and 3/4 ounce lime juice, shaken and served. Even easier to memorize, this version uses 6 ounces fresh watermelon juice - a sweet but subtle nod to summer - and 2 ounces each tequila, Cointreau and lime juice. Be sure to taste and add more watermelon juice if your margarita is too boozy, and extra lime juice or even a pinch of salt if it's too sweet.

- Prepare the salted rim, if using: In a small shallow bowl or plate, combine the sea salt and Tajín. Set aside.
- In a shaker filled with ice, combine the watermelon juice, tequila, Cointreau (if using), lime juice and jalapeño (if using). Shake to combine. (Note: The watermelon flavor shines brighter without the Cointreau, but the liqueur takes the drink into more traditional margarita territory. If you'd like to compare, first try the mixture without, the liqueur, then add 1 ounce of it per serving.)
- Using one of the squeezed lime halves, run it along the rim of two rocks glasses, then dip the rims into the salt mixture. Fill the glasses with ice, then strain the margaritas into the glasses and enjoy immediately.

FROZEN WATERMELON ROSEMARY MARGARITAS

- Bring 1 cup water and 1/3 cup sugar to a boil in a small saucepan, stirring occasionally to dissolve sugar. Stir in chopped rosemary. Let steep for1 hour.
- Strain rosemary syrup into a blender. Add watermelon and lemon juice. Purée until smooth, about 30 seconds. Strain lemonade mixture, then freeze in ice cube trays until solid, 8 hours or overnight.
- Mix together salt and remaining 1 tablespoon sugar in a small shallow dish. Lightly dampen rims of 4 (12-ounce) glasses with a wet paper towel. Roll glass rims in salt-sugar mixture until coated.
- Working in batches, blend half of the frozen watermelon-lemonade cubes and 4 ounces tequila in a blender or food processor until slushy, adding 1 to 2 tablespoons of water as needed to help blend mixture. Pour into prepared glasses. Repeat with remaining watermelon-lemonade cubes and remaining tequila. Garnish with rosemary sprigs and watermelon wedges.
