5 slices of turkey pepperoni
A sprinkle of parsley or dried basil

Steps:

  • Dice Mini Babybel. Top the cucumber slices with the pepperoni and then the Mini Babybel. Sprinkle with parsley.

This is such a yummy blend of cucumbers and onions in a sweet creamy sauce. When I was young my Grandma would make this for me all the time. That was over 30 years ago. It is a wonderful go to recipe for those hot summer days when you don't want to cook. I prefer using Vadalia onions, but any yellow onion will do. I try not to use too big of cucumber (diameter) because there are too many seeds. I have even substituted splenda for the sugar and light miracle whip with good results. (However, the juice doesn't flavor as long with the splenda). Finally, the cook time is the refrigerator marinate time. I hope you enjoy.

3 -4 large cucumbers
1 large yellow onion
1 cup Miracle Whip
1/2 cup sugar
1/4 cup white vinegar
1/4 teaspoon salt (or to taste) (optional)
1/4 teaspoon pepper (or to taste) (optional)

Steps:

  • Peel and slice cucumber and onions thinly. The best results are even slices. I use a mandolin for this step.
  • Place sliced cucumber and onions in a medium bowl that has a lid.
  • In a small bowl mix together the Miracle Whip, sugar, vinegar. Add salt and pepper if using. Pour over top of the cucumbers/onions. Place the lid on the bowl and give it a shake or two.
  • Marinate 6 hours or overnight in the refrigerator.
  • Do not add more liquid. Juice will keep for a long time. Just keep adding onions and cucumber as they get low until you no longer get the wonderful flavor on the cucumbers. Then it is time for a new batch.

1 tablespoon canola oil
2 medium cucumbers, thinly sliced
1 medium onion, thinly sliced
1-1/2 cups sugar
1 cup water
3/4 cup white vinegar
1 tablespoon prepared mustard
1 tablespoon dried parsley flakes
1 teaspoon salt
1 teaspoon pepper
1/2 teaspoon garlic salt

Steps:

  • Cook pasta according to package directions; drain and rinse in cold water. Place pasta in a large bowl; stir in the oil, cucumbers and onion. , In a small bowl, whisk the remaining ingredients. Pour over salad; toss to coat. Cover and chill for 4 hours, stirring occasionally. Serve with a slotted spoon. Refrigerate leftovers.

½ cup butter or margarine, melted
1 (8 ounce) package cream cheese, room temperature

1 cup frozen whipped topping, thawed
2 (3.5 ounce) packages instant coconut cream pudding mix
2 cups milk
3 cups frozen whipped topping, thawed
½ cup chopped pecans

Steps:

  • Preheat the oven to 350 degrees F (175 degrees F). In a medium bowl, stir together the flour, 1/2 cup pecans and melted butter or margarine. Press into the bottom of a 9x13 inch baking dish. Bake for 15 minutes in the preheated oven, then chill until cold.
  • In a medium bowl, mix together the cream cheese and confectioners' sugar until smooth. Stir in the whipped topping. Drop spoonfuls onto the chilled crust, and spread evenly. Return to the refrigerator while you prepare the next layer.
  • In a medium bowl, mix together the pudding mixes and milk. Yes this is half as much milk as the package states. Spread over the cream cheese layer. Chill until set.
  • Spread remaining whipped topping over the top, and garnish with chopped pecans.

2 tablespoons unsalted butter
2 tablespoons finely chopped fresh mint
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 teaspoon finely grated fresh lemon zest
1 teaspoon fresh lemon juice

an adjustable-blade slicer with 1/4-inch julienne blade

Steps:

  • Adjust blade of slicer to 1/8-inch-thick setting. Using slicer, cut each cucumber lengthwise into long 1/8-inch-thick julienne strips, slicing until you reach core, then rotate cucumber a quarter turn and continue slicing and rotating until left with nothing but core. Blanch cucumber "noodles" in a 4-quart pot of boiling salted water 1 minute, then drain in a colander. 1 (1 ounce) packet hidden valley ranch dressing mix
4 cucumbers (Really depends on how thick you want your slices)
2 loaves French baguettes

Steps:

  • In a medium bowl, combine softened cream cheese and ranch dressing mix packet. Stir until well-blended.
  • Slice cucumbers into relatively thin slices (I cut mine to approximately 1/4").
  • Slice baguette into medium slices (mine were about 1/2"). For a "daintier" sandwich, trim off crusts.
  • Spread cream cheese mixture onto one slice of bread. (I prefer a generous layer of the cream cheese mixture!).
  • Place 4-5 cucumber slices on top of cream cheese.
  • Spread cream cheese mixture onto a second piece of bread and place the bread on top of the cucumbers, cream cheese side down.
  • Repeat!
  • NOTE: I recently made this recipe for a bridal shower bruch I hosted. I knew the morning of the shower would be crazy, so I sliced the cucumbers and mixed up the cream cheese spread the night before. It tasted great and made things so much easier on the morning of the shower!

1/3 pound smoked salmon, chopped

1 tablespoon capers
1 pound fusilli pasta
1 tablespoon salt for the pasta, plus more to taste
Freshly ground black pepper to taste
1/4 cup fresh mint leaves, sliced into chiffonad

Steps:

  • Place the ricotta cheese in a serving bowl and beat with a fork until smooth. Stir in the garlic, cucumbers, salmon, parsley and capers.

1 (9 inch) pie shell, baked

  • In a saucepan, combine egg yolks, brown sugar and flour. Mix in the cream. Cook, stirring constantly, until thickened. Remove from heat and stir in butter. Pour into pre-baked pie shell.

1 package Kraft Good Seasons Italian Dressing Mix - dry
Dry dill weed
1 loaf small square Rye party bread

Steps:

  • Peel the skins on the cucumbers to form a stripe (i.e. peeled, skin, peeled, skin) and slice them into small pieces. In a small mixing bowl, place the cream cheese in and empty the Good Seasons package and mix together well.
  • Take one piece of bread and place one piece of cucumber on it. Evenly spread the cream cheese mixture and sprinkle some dill weed on top. Repeat process for all of the slices of bread and cucumbers.
  • Place on a dish single layered, and place into the refrigerator for approximately 30 minutes or so. Remove from fridge, serve and enjoy.

  • Start water on high heat in large pot and add pasta when it comes to a rolling boil. Cook pasta for 8-10 minutes. When pasta is done drain it and then put all pasta into the empty pot.While pasta is cooking add olive oil and garlic to pan on high heat, quickly add chicken cutlets and cook for 5 minutes on each side or until firm.
  • Turn oven on to warm setting. Take the chicken out of the pan and place it on a sheet tray. Place the sheet tray in oven.
  • Add chopped onion and mushrooms and into the hot pan and cook. When onions become transparent add heavy cream. Once heavy cream becomes warm (should take 3 minutes on high heat) add Parmesan cheese and flour. Stir for another 3 minutes and then add pasta to pan and fold into the sauce.
  • Serve and Enjoy!
