Curried Quinoa Salad With Yogurt Cumin Dressing Recipe

  1. water
  2. quinoa
  3. curry powder
  4. green onions
  5. chickpeas
  6. carrots
  7. dried cranberries
  8. plain nonfat yogurt
  9. cilantro
  10. lemon juice
  11. lemon zest
  12. hot chili sauce
  13. ground cumin


  1. in a small bowl , mix together all the dressing ingredients
  2. refrigerate
  3. heat the water to a boil in a large saucepan
  4. add the quinoa and curry powder or garam masala , lower heat to a simmer , cover and cook for 20 minutes
  5. meanwhile , combine the green onions , chickpeas , carrots and cranberries in a large bowl
  6. when the quinoa is done , either toss with the veggies or place on plates and top with the veggies
  7. serve drizzled with the dressing
