Steps:

  • In a medium bowl, combine first six ingredients. Microwave on high until heated through, about 5 minutes. Sprinkle on coconut, if desired. Serve.

1 medium spaghetti squash (about 2 3/4 pounds)
1 tablespoon olive oil or unsalted butter
2 teaspoons finely grated ginger
1 teaspoon garam masala
2 tablespoons lemon juice
4 teaspoons honey
1/4 teaspoon kosher salt, plus more for seasoning
1/2 cup coarsely chopped cilantro leaves

Steps:

  • Cut the squash in half lengthwise and scoop out the seeds. Place the cut-side down in a microwave-safe baking dish (the halves can overlap one another a bit) and add 1 cup water. Cover with plastic wrap and microwave until very tender and a knife easily pierces the skin of the squash, 15 to 18 minutes. Let stand 5 minutes. Carefully uncover and let stand until cool enough to handle but still warm.
  • Meanwhile, heat the oil in a small nonstick skillet. Add the ginger and garam masala until fragrant. Stir in the lemon juice and honey. Season with the salt. The sauce should be sweet and sour.
  • Scrape the flesh of the squash into a bowl, using a fork, to make long noodle-like strands. Toss with the sauce and cilantro. Season with additional salt.

  • Preheat oven to 375°F

My own delicious variation of a curried squash-based soup using the acorn variety. With careful thought and care, I've created a smooth and invigorating soup that would provide a perfect dinner starter to any party or social gathering. Certainly a multi-purpose dish that would work well anywhere. Perfect in your favorite mug for chilly rainy days. When with friends, I like to serve it with baked honey ham and salad (just an idea). You'll have everyone asking you where you learned to cook so well, I promise!

2 large acorn squash - peeled, seeded, and cut into 1-inch cubes
3 tablespoons all-purpose flour
2 tablespoons curry powder
1 teaspoon ground ginger
1 teaspoon brown sugar
4 tablespoons salted butter
1 medium onion, finely chopped
1 stalk celery, finely chopped
½ medium carrot, finely chopped
4 cloves garlic, finely chopped, or more to taste
½ cup heavy whipping cream, or more to taste
2 tablespoons olive oil
3 teaspoons red wine vinegar
1 cube chicken bouillon
salt and ground black pepper to taste
¼ cup chopped fresh cilantro, or to taste

Steps:

  • Place squash into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, 10 to 15 minutes. Drain.
  • Combine flour, curry powder, ginger, and brown sugar in a small bowl; mix loosely to combine.
  • Melt 1/2 of the butter in a deep pan over medium-high heat. Add onion, celery, carrot, and garlic; saute for 2 minutes. Add 1/2 cup whipping cream, remaining butter, olive oil, vinegar, and bouillon cube. Add flour mixture; cook and slowly stir for 15 seconds, then reduce heat to medium or medium-low. Cover with a lid and cook until veggies are cooked through, about 3 minutes.
  • Add cooked squash on top of the veggies, and season generously with salt and pepper; do not stir. Cover and cook until squash is heated through, about 1 minute.
  • Fill blender halfway with squash mixture. Cover and hold lid down with a potholder; pulse a few times before leaving on to blend until mostly smooth. Pour into a pot. Repeat with remaining squash mixture.
  • Reheat soup if needed. Put into a large serving bowl or separate serving dishes, garnish with cilantro, and drizzle with cream.

6 medium acorn squash
3 (14 ounce) cans chicken broth
3/4 teaspoon ground ginger
3/4 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon ground cinnamon
1 1/2 cups half-and-half or 1 1/2 cups light cream
3/4 cup sour cream (optional)
fresh thyme sprig (optional)

Steps:

  • Halve squash and remove seeds.
  • Place squash halves, cut sides down, on a baking dish.
  • Bake in a 350 degree F oven for 30 minutes. Turn cut sides up. Bake, covered, 20 to 25 minutes or until squash is tender.
  • Scoop squash pulp out of the peel using a spoon; discard peel.
  • Place pulp in batches in a blender container or food processor bowl.
  • Cover and blend or process until squash is smooth, adding some of the chicken broth if the mixture is too thick.
  • Stir together pureed squash and remaining chicken broth in a large saucepan.
  • Stir in ginger, salt, pepper, and cinnamon. Bring mixture to boiling.
  • Reduce heat and stir in half-and-half or light cream.
  • Heat through, but do not boil.
  • If desired, garnish each serving with sour cream and thyme sprigs.

2/3 cup nonfat milk
2 tablespoons chopped fresh thyme or 2 teaspoons dried
Nonfat plain yogurt
Fresh thyme sprigs

Steps:

  • Heat olive oil in heavy large saucepan over medium-high heat. Add chopped onion and sauté until translucent, about 5 minutes. Add butternut squash and sauté until beginning to brown, about 10 minutes. Add tomatoes and Sherry. Boil until almost all liquid evaporates, about 30 seconds. Stir in 2 1/2 cups vegetable broth. Bring to boil. Reduce heat, cover and simmer until squash it very tender, stirring occasionally, about 30 minutes.
  • Puree soup in blender in batches until smooth. Return soup to same saucepan. Stir in milk and chopped thyme. Bring to simmer. Season soup to taste with salt and pepper. (Can be prepared 1 day ahead. Cover tightly and refrigerate. Bring soup to simmer before serving, thinning with more broth, if desired.)
  • Ladle soup into bowls. Top with dollop of yogurt. Garnish with thyme sprigs.

1 head cauliflower
2 tablespoons canola oil
1 medium onion, sliced
2 small cloves garlic, chopped
1 tablespoon curry powder
1 1/2 cups low-fat milk
Salt and freshly ground black pepper
1 teaspoon grated fresh ginger
3 tablespoons very finely minced fresh coriander leaves
1/3 cup plain fat-free yogurt

Steps:

  • Trim the leaves off the cauliflower, coarsely chop the florets and stems and rinse them. Bring two quarts of water to a boil, add the cauliflower and cook until tender, about 10 minutes. Drain and set aside.
  • While the cauliflower is cooking, heat the oil in a large heavy saucepan, add the onion and saute until tender, about eight minutes. Add the garlic, saute another few seconds, then stir in the curry powder. Cook, stirring, for two minutes. Add one-half cup of the milk and stir.
  • Place the cauliflower and the contents of the saucepan in a food processor, blender or food mill and process to make a smooth puree. Return the puree to the saucepan, add the remaining milk and bring to a simmer. Season to taste with salt and pepper.
  • Mix the ginger and coriander with the yogurt.
  • To serve the soup, reheat it, spoon it into bowls and float some of the seasoned yogurt on each portion.

WINTER SQUASH AND WILD MUSHROOM CURRY

This is comfort food, Indian-style, adapted from a recipe by Madhur Jaffrey. It's also vegan, and perfect for a fall evening. Use a mixture of cultivated mushrooms; they come in all shapes and sizes. Look for royal trumpets, a large, meaty type of oyster mushroom; shiitakes, and small portobellos. Use some wild mushrooms too, if you can, like golden chanterelles, lobster or hen of the woods. You can make this as spicy as you wish, but be sure to include some cayenne and green chile, to complement and play off the creamy coconut milk sauce. Serve with basmati rice, rice noodles or mashed potatoes.

Steps:

  • In a wide skillet, heat oil over medium-high. When hot, add squash cubes in one layer. Season with salt and pepper. Cook for about 2 minutes, letting cubes brown slightly, then flip and cook for 2 minutes more. Use a slotted spoon to lift squash out, and set aside.
  • Cut a lengthwise slit in each chile to open it, but leave whole. (This helps the chiles heat the sauce without making it too spicy.)
  • Add shallots, salt lightly and cook, stirring, 1 minute. Add mustard seeds, cumin seeds and curry leaves, if using, and let sizzle for 30 seconds, then add garlic, coriander, cayenne, turmeric and chiles. Stir well and cook for 30 seconds more.
  • Add mushrooms, season with salt and toss to coat. Cook, stirring, until mushrooms begin to soften, about 5 minutes.
  • Return squash cubes to skillet, stir in coconut milk and bring to a simmer. Lower heat to medium and simmer for another 5 minutes. If mixture looks dry, thin with a little water. Taste and season with salt.
  • Before serving, stir in lime juice. Transfer to a warm serving dish and garnish with cilantro.
