BEST CHEESE BALL RECIPE

- Place the softened cream cheese in a mixing bowl and stir or beat with an electric mixer until smooth and creamy.
- Add the diced pastrami, green onions, Worcestershire sauce, garlic powder, and sea salt. Mix well with a spatula. (You don't want to use the mixer for this part, it might break down the meat and onions too much.)
- Use the spatula to form the mixture into a ball in the bowl as best as you can. Lay out a large sheet of plastic wrap, place the chopped pecans in the middle and gently move the cheese ball onto the pecans.
- Gently use the plastic wrap to press the pecans into the cheese ball and help form a more rounded ball shape. Wrap the cheese ball tightly and refrigerate for at least 2 hours.
- Serve with your favorite crackers, pita chips, or pretzel crisps.

- In the container of a food processor, combine the Cheddar cheese, sour cream, butter, horseradish, hot mustard, chipotle sauce, garlic and port wine. Pulse until smooth. You can use a potato masher in a large bowl but it will take longer.
- Line a bowl with plastic wrap, and fill with the cheese mixture. Cover and refrigerate for at least 2 hours, or overnight.
- Toast the sesame seeds in a dry skillet over medium heat just until fragrant, about 3 minutes. Gather the plastic wrap around the cheese mixture and form into a ball. Remove the plastic wrap and roll the ball in sesame seeds to coat. Place in the center of a platter and surround with your favorite chips or crackers.

MY DAD'S FAMOUS MEATBALLS
I grew up on these meatballs. My dad use to make them all the time and now I do for my family and friends and everyone loves them. We make a lot so we can have spaghetti one night and the meatball subs the next! To be honest I made the measurements as best I could but it goes by your own judgment. Once the eggs and bread crumbs are mixed you just shake the spices over the meat to cover evenly.

- Place the ground beef ( 7% fat is best ) in a large mixing bowl.
- Preheat oven to 375°F.
- Then place eggs and bread crumbs in and mix well with your hands.
- Then put in all spices. The best thing to do is sprinkle them over the mixture evenly. I made the measurements the best I could, but I have never really measured before. I only went by my own judgment.
- Using a broiling pan so that the grease drips down inside of it, roll your meatballs according to size.
- Bake for about 20 minutes, turning the meatballs half way through.

- Combine all ingredients except for almonds and mix well. You may need to use your hands to do this! You want to make sure all the flavors are well mixed.
- Cover with plastic wrap and store in refrigerator over night.

- In a large bowl or stand mixer, add the cream cheese and mix until smooth.
- Add the next 6 ingredients to the bowl and mix until everything is incorporated.
- Ladle the cream cheese mixture onto some foil or saran wrap. Fold in the sides of the foil/saran wrap and form into a ball. Once it's in a ball make sure to cover the ball completely.
- Place in the refrigerator for at least 1 hour.
