Homemade Deviled Ham Spread image

I searched for a recipe for this on this site and couldn't find one, so I winged it and it turned out very nicely. I had to make a second batch to take to the New Year's Eve party because the first batch disappeared. A great way to use leftover ham from holiday dinner to make a great spread for hearty crackers or rye toast points. Also good as a sandwich.

1 ½ cups cubed cooked ham
3 tablespoons mayonnaise
2 teaspoons prepared mustard
5 drops hot pepper sauce
1 teaspoon garlic powder
1 teaspoon onion powder
½ teaspoon celery salt
½ teaspoon ground black pepper
½ teaspoon paprika
1 pinch caraway seeds, or to taste
¼ cup finely chopped onion
¼ cup finely chopped celery

Steps:

  • Place ham, mayonnaise, mustard, hot pepper sauce, garlic powder, onion powder, celery salt, black pepper, paprika, and caraway seeds in a large mixing bowl. Stir to combine.
  • Use an immersion blender or food processor to puree the ingredients to your desired texture; stir in onion and celery. Chill before serving.

1/2 cup chopped onion

3 tablespoons maple syrup
2 tablespoons hot sauce (recommended: Tabasco)
1 tablespoon Worcestershire sauce
2 teaspoons paprika
1 teaspoon mustard powder

Steps:

  • Combine all ingredients in a food processor and blend until smooth. Use as a sandwich filling or spread on crackers for a snack.

Might refer to this as a retro recipe. We had these on a regular basis growing up. Since I can't find anyone here in Virgina who knows what they are, it may be a Midwest thing. Mom said that you always served them at parties in the 50's & 60's because the boys liked them so much. They became legendary in my group of friends when Mom made them one evening for dinner. The guys kept asking where the tops to their burgers were to get under Mom's skin. It worked (she threatened to never cook for them again) and they still laugh about it today. Boys are rotten. We love them anyway. They did like the burgers! Note: You must use a lean ground beef or there is a tendency to end up with a soggy, greasy bun. Not good.

1/3 cup chili sauce
1 1/2 teaspoons mustard
1 teaspoon onion, finely chopped
1 1/2 teaspoons Worcestershire sauce

4 hamburger buns, total of 8 bun halves (or 8 slices of bread)

Steps:

  • Combine all ingredients and mix.
  • Divide equal portions of mixture between the eight bun halves and spread on top.
  • Make sure to spread mixture out to the edge of the bun as any portion of the bun exposed to the broiler has a tendency to brown too much.
  • Place under the broiler for 6-8 minutes.

  • In a food processor grind the ham until it is minced, add the mustard, the butter, the honey, and the cloves, and blend the mixture until it is smooth. 8 tablespoons dry bread crumbs, divided
1-1/2 teaspoons ground mustard
10 ounces ground fully cooked ham
2 to 4 tablespoons whole milk, optional
3 tablespoons butter

Steps:

  • In a large bowl, combine the egg, pickle relish, 6 tablespoons bread crumbs and mustard. Crumble ham over mixture and mix well. Gradually add milk if mixture is too thick. Shape into four patties. Sprinkle each side with remaining bread crumbs. , In a large skillet, cook patties over medium heat in butter for 4-5 minutes on each side or until a thermometer reaches 160°.

I don't know how this recipe came to be, but we know my great-grandmother made this. It is made with diced ham in the oven and covered in bread crumbs. After shaping them, you can put cheese or anything you want into the middle for a filling. I personally like cream cheese or Cheddar cheese in mine but you can put whatever you want in the middle.

Steps:

  • Pulse 8 ounces coarsely chopped country ham or good deli ham in a food processor until finely chopped. My all-time favorite hamburger patty for making American style burgers. I found the original recipe in the Better Homes and Gardens Barbecue Book back in the 70's and this is the only recipe I ever use. It has been modified somewhat, but it retains most of the original ingredients. I always have a bottle of chili sauce in the refrigerator at all times for making these. Although you can perhaps substitute ketchup for chili sauce the taste will not be the same. You need to mix this meat mixture thoroughly. I use circular motion to get fat from ground beef and egg emulsified. The original recipe is for 4 hamburger patties but I usually make 5 patties because I like my patties smaller than quarter pounder.
