DEWBERRY PIE
This is a very easy and delicious berry pie. Since dewberries are related to the blackberry, feel free to substitute. Dewberries are plentiful "where I come from" and this is an old family recipe.

Steps:
- Preheat oven to 450 degrees F.
- Line 9" pie pan with half the pastry.
- Combine berries, sugar, flour and lemon juice (being careful not to mash berries).
- Spoon berry mixture into pie shell, and dot with butter.
- Cover with top crust and slash in several places to allow steam to escape. (I usually brush top crust with a slightly beaten egg white).
- Bake at 450 degrees for 15 minutes. Reduce heat to 350 degrees and continue baking for 30 to 40 minutes, or until browned.

SKINNY MIXED BERRY PIE
This Keto mixed berry pie has all the comfort of a proper berry pie, but my version is skinny because it doesn't have a base! Basically, it's a mix between a berry crumble and a pie. You'll love the crispy fathead lattice top!

Steps:
- Add the frozen berries, sweetener, lemon juice, zest and cinnamon to a pan. Cook on a medium heat for about 7 minutes, stirring occasionally.
- Stir through the ground chia. Heat for 2 minutes then remove from the heat and allow to cool to thicken for about 30 minutes. Taste and adjust the sweetness to taste and add more chia if you like it thicker.
- Meanwhile make the dough. Melt the mozzarella in the microwave on high for 60 seconds, stir with a rubber spatula and heat for another 30 seconds. Add the almond flour and egg. Mix. You may need to get your hands involved here!
- Roll out the dough between 2 sheets of parchment paper and place in fridge for 20 - 30 minutes to chill. Then cut into strips on a diagonal using a pizza cutter or sharp knife about 1 cm in thickness.
- To make the lattice, lay the bottom strips on top of the berries then starting at one side add a strip perpendicular and just lift the bottom ones up and under. Trim at the edges, then brush with a little egg white and sprinkle with low carb sweetener.
- Preheat the oven to 400F / 200C conventional / 180 fan.
- Bake for 15 - 25 minutes until golden on top.

SEEDLESS RASPBERRY/BLACKBERRY PIE
Steps:
- Put berries and sugar into a saucepan, and gently cook until boiling, stirring constantly to prevent burning. Once it boils, take it off the stove. Pour the berries through a sieve to remove the seeds. Let juice sit a bit to cool off so that you can put the cornstarch in it without any problems.
- Pour the juice back into the pan, add the cornstarch, and mix well. Put it back onto the stove, bring gently to a boil, stirring constantly to keep the bottom mixed up (can't let it settle!) Boil one minute to set the cornstarch. Remove from the stove, add the cinnamon, and mix well.
- Then pour it into the pie shell, set it aside to cool down, then cover with plastic and put into the refrigerator. It should set up within three or four hours. Serve with whipped cream.

BERRY STREUSEL PIE

- For crust:
- Blend flour, sugar, and salt in processor. Add butter and shortening; using on/off turns, cut in until mixture resembles coarse meal. Add 5 tablespoons ice water and process until moist clumps form, adding more water by teaspoonfuls if mixture is dry. Gather dough into ball; flatten into disk. Wrap in plastic and chill at least 1 hour.
- For topping:
- Combine all ingredients in processor. Process until moist clumps form. (Dough and topping can be made 1 day ahead. Cover topping and chill; keep dough chilled. Soften dough slightly at room temperature before rolling out.)
- For filling:
- Mix sugar, tapioca, and lemon juice in large bowl. Add berries and toss gently to combine. Let stand until tapioca softens slightly, stirring occasionally, about 45 minutes. Preheat oven to 400°F. Roll out dough on lightly floured surface to 15-inch round. Transfer to 9-inch-diameter glass pie dish. Trim dough overhang to 1 inch. Fold overhang under and crimp decoratively, forming high-standing rim. Freeze crust 20 minutes.
- Spoon filling into crust. Crumble topping evenly over filling. Bake pie until crust and topping are golden brown and filling is bubbling, covering loosely with sheet of foil if topping browns too quickly, about 55 minutes. Transfer pie to rack and cool at least 3 hours. (Can be made 8 hours ahead. Let stand at room temperature.) Cut pie into wedges and serve.
OLD FASHIONED STRAWBERRY PIE
This is a two crust strawberry pie that has a thick juice. Any fresh berries can be substituted.

- Preheat oven to 425 degrees F (220 degrees C). Place one crust in a nine inch pie pan.
- Mix together sugar, flour, and cinnamon. Mix lightly through the berries. Pour filling into pastry lined pan, and dot fruit with butter or margarine. Cover with top crust, and cut slits in the top. Seal and flute the edges.
- Bake for 35 to 45 minutes, or until the crust is slightly browned.

DEWBERRY JELLY
Dewberries grow wild in my part of the country. They are very similar to blackberries, but larger and sweeter. This is the my DH's favorite jelly. You can use this same recipe using blackberries or boysenberries. The times listed in the recipe DO NOT INCLUDE the straining time.

Steps:
- Place berries in large boiler with enough water to almost cover berries.
- Bring to a boil, turn down, and simmer berries for 5 to 10 minutes.
- Allow to cool slightly, then pour through fine sieve type strainer and allow to drain overnight (this time can be shortened, but I love for it to strain a long time in order to get all of the juice out of the berries).
- You should now have 3 3/4 cups juice (if necessary you can add up to 1/2 cup of water to give you a full 3 3/4 cups).
- Place the juice in a large boiler with the package of pectin and bring to a full rolling boil (one that cannot be stirred down).
- Stir often.
- While this is coming up to a boil, measure sugar into a bowl.
- When the juice is at a full rolling boil, add the sugar quickly and stir constantly.
- Bring back to a full rolling boil and cook for exactly 1 minute, stirring constantly.
- Remove from heat and ladle into jars that have been prepared and sterilized.
- Wipe rims of jars with damp, clean rag and place lids and rings on jars.
- Process in a water bath for 10 minutes.

DELUXE BLACKBERRY PIE
Deluxe Blackberry Pie, nice and thick, made the old-fashioned way.

Steps:
- Puree two cups of the blackberries in a blender until liquid. Strain out the seeds, and pour into a saucepan. Whisk in 1 1/4 cups sugar. Cook over a medium heat until boiling, stirring constantly and scraping bottom. Keep at a boil for 5 minutes, and then remove from heat.
- Mix cornstarch and brandy in a cup. When well mixed, whisk into pan; stir until mixture returns to a boil. Remove from heat. Stir in the nutmeg and cinnamon. Check the consistency of the mixture; it should be like a thin pudding. If necessary, add cornstarch and water mixed at a 2:1 ratio to thicken.
- Fill the pie shell with the remaining two cups of blackberries. Pour the blackberry puree over the fresh berries, covering evenly. Use either strips of dough criss crossed to cover, or cover with a solid sheet of dough with slits cut in it. Dust with sugar on top.
- Bake in a preheated 400 degrees F (205 degrees C) oven for 35 minutes, or until crust is browned.
