This is a nice change from the ordinary vegetable salads to accompany a turkey or ham dinner. The dressing on this salad makes a delicious marinade for broiled or grilled meats.

1 (10.75 ounce) can condensed tomato soup
¼ cup white sugar
½ cup white vinegar
¼ cup canola oil
1 teaspoon prepared mustard
1 teaspoon Worcestershire sauce
½ cup chopped celery
½ cup chopped green onion
1 green bell pepper, seeded and cut into strips

Steps:

  • Bring a large pot of water to boil, add carrots and simmer until tender, approximately 3 to 5 minutes. Drain and set aside.
  • In a large bowl, whisk together the soup, sugar, vinegar, oil, mustard and Worcestershire sauce. Add carrots, celery, onion and pepper and toss to coat. Cover and refrigerate at least 4 hours to allow carrots to marinate.

4 cups thinly sliced carrots
3/4 cup water
1 tablespoon butter
1/2 teaspoon salt
1/4 teaspoon sugar

Steps:

  • In a saucepan, combine carrots, water, butter, salt, sugar and pepper. Cover and simmer until carrots are crisp-tender, about 10 minutes. Drain liquid into a small saucepan; set the carrots aside and keep warm. Bring liquid to a boil. In a small bowl, combine flour and cream until smooth; slowly add to liquid, stirring constantly. 1/4 cup extra-virgin olive oil
3 tablespoons fresh lemon juice
1/4 teaspoon fine grain salt
1/2 cup thinly sliced shallot
more olive oil (for cooking, or ghee)
2 cups sliced carrots, cut 1/4-inch thick on deep bias
3 cups cooked white beans
scant 1/4 cup chopped fresh dill
2 tablespoons brown sugar (or honey)
1/3 cup sliced almonds, toasted

Steps:

  • Combine the olive oil, lemon juice, salt and shallots in a small bowl. Stir and set aside.
  • In your largest skillet over medium high heat, toss the carrots with a splash of olive oil. Let them cook in a single layer - they'll give off a bit of water at first.
  • Keep cooking, tossing gently every three or four minutes until the carrots are deeply browned. All told, about twelve minutes.
  • Add the beans and dill to the skillet and cook for another five minutes, or until the beans as well heated through.
  • If you are using beans that weren't canned you can allow them to brown a bit as well (just cook a bit longer, and stir less frequently) - they can handle this in a way that most canned beans can't. If you need to add a bit more olive oil to the pan - do so.
  • Place the contents of the skillet in a large mixing bowl, sprinkle with the brown sugar and pour the 3/4 of the lemon-olive oil mixture over the top. Toss gently.
  • Let sit for ten minutes. Toss gently once again, taste and adjust with more salt or sugar or lemon juice if needed to balance the flavors.
  • Serve warm or at room temperature and finish by sprinkling with the almonds just before serving.
  • Serves 6 - 8 as a side.

These lemony carrots taste lovely just as the recipe is written, perfumed with toasted cumin and coriander, a hint of garlic, and a touch of cayenne. This recipe draws its inspiration from Moroccan carrot salads, many of which use cooked vegetables, but this version uses slivered raw carrots instead. But if you want to splash out, try a pinch of cinnamon, and top with lots of fluffy chopped cilantro and thinly sliced jalapeño. Or add crumbled feta and olives. For the best-looking salad, use the julienne blade of a food processor, or cut the carrots into thin matchstick shapes with a sharp knife. The large holes of a box grater will work, too, but the result won't be quite as attractive. (But avoid those supermarket bags of pre-grated carrots. They're not suitable here.)

3 pounds carrots (about 4 bunches)
4 garlic cloves, unpeeled
1/4 cup extra-virgin olive oil
Coarse salt
1 pound orzo (Greek pasta)
Grated zest and juice of 2 lemons
4 scallions, white and light-green parts, roughly chopped
1/2 cup loosely packed fresh dill, roughly chopped
Freshly ground pepper

Steps:

  • Preheat oven to 450 degrees with a rack in lower shelf. Cut carrots diagonally into 2-inch pieces. On a rimmed baking sheet, toss carrots and garlic with 2 tablespoons oil and a pinch of salt. Roast until carrots are tender and browned, about 15 minutes. Transfer sheet to a wire rack to cool. Squeeze garlic cloves from skins; mince to form a coarse paste. Set aside.
  • Bring a large saucepan of water to a boil; add salt. Stir in orzo; cook until it is al dente according to package instructions, about 7 minutes. Drain; while still hot, transfer orzo to a large bowl, and toss with remaining 2 tablespoons oil. Let cool slightly, and add roasted carrots.
  • Meanwhile, in a small bowl, mix together lemon zest, lemon juice, scallions, and roasted garlic. Add dill, and pour mixture over orzo mixture. Stir to combine; season with salt and pepper. Serve, or store, covered with plastic wrap, in refrigerator up to 1 day; bring to room temperature before serving.

2 cups organic carrots, unpeeled and sliced lengthwise in half and then crosswise in half (orange, white, rainbow, indigo, etc.)
1/2 cup thinly sliced shallots (for a less pronounced onion taste use shallots) or 1/2 cup red onion, diced small (for a less pronounced onion taste use shallots)
1 tablespoon extra virgin olive oil
2 tablespoons red wine vinegar (experiment with another flavored vinegar)
2 -3 tablespoons fresh dill, chopped (FRESH!)
salt and black pepper, to taste

Steps:

  • Note: If the carrots are large you'll need to quarter then lengthwise.
  • Lightly steam or parboil the carrots until just tender but still crisp. (It's better to steam than to parboil to maintain the nutrients.).
  • Drain and then immediately rinse with cold water to stop the carrots from cooking. Set aside to drain.
  • Meanwhile, whisk together the olive oil, vinegar, salt and pepper.
  • Place the drained carrots and onions on a serving platter or in a large salad bowl.
  • Pour the dressing over the carrots and onions. Toss.
  • Cover and chill at least 3 hours.

1 large bunch of carrots , peeled and cut into diagonal slices (approx. 500g/1lb 2oz)
5 banana shallots , quartered
4 garlic cloves , lightly crushed
1 tsp fennel seeds
1 tbsp olive oil
300g pearl barley
small pack parsley , roughly chopped
½ small pack dill , roughly chopped
140g blue cheese , crumbled
a few fennel tops or dill, to serve (optional)
2 tbsp olive oil
1 tbsp white wine vinegar
juice 1 lemon

Steps:

  • Heat oven to 180C/160C fan/gas 4. Put the sliced carrots in a large roasting tin with the shallots, garlic and fennel seeds. Drizzle over the oil, toss everything together and season. Roast for 35-40 mins until everything has caramelised and the carrots are tender.
  • Meanwhile, boil the pearl barley in a large pan of salted water until al dente, about 30 mins. Make the dressing by whisking all the ingredients together with some seasoning. Remove the carrots from the oven.
  • Strain the pearl barley and toss through the dressing, carrots, dill, parsley and half the cheese. Finish with a few of the fennel tops and the remaining cheese. Serve warm or cold with a slice or two of warm buttered soda bread, if you like.

Hawaii's mac salad is not the summer standard of cookouts on the mainland (what locals call the rest of the United States). The pasta is cooked past al dente, until swoony and soft all the way through. In this version from the chef Mark Noguchi, Gooch to friends, there's a little punch-up of Tabasco and trace sweetness, like a sidelong glance, from grated carrots and a grace note of sugar. The marquee ingredient, of course, is mayonnaise. ''Just so you know, you'll be using a lot of mayo,'' Gooch warns. ''Obscene, guarantee-going-to-make-you-raise-your-eyebrow kine of lot." Yet somehow what you end up with is richness without weight, leavened by tang and salt. In Hawaii, a scoop would be served with a plate lunch, alongside rice and a main dish, like chicken katsu.

1 pound russet potatoes or 1/2 pound russet potatoes and 1/2 pound taro (see Tip)

4 large eggs
1 pound macaroni
1 carrot, peeled and grated through the large holes of a box grater
3 cups mayonnaise
1 teaspoon garlic salt
1/2 teaspoon sugar
1/2 teaspoon black pepper, freshly cracked
1/2 teaspoon apple cider vinegar
Hot sauce, such as Tabasco, to taste

Steps:

  • If using taro, put on kitchen gloves and wash the taro. Bring 1 to 2 inches of water to a boil in a pot with a steamer insert, then put the taro in the insert and cover tightly with a lid. Steam until tender, about 3 hours. Transfer to a plate and let cool. Use a paring knife to remove the skin, then cut into 1-inch cubes.
  • Fill a large saucepan with water and add a generous pinch of salt, so the water tastes like the ocean. Scrub the potatoes, then add to the saucepan - there should be just enough water to cover - and bring up to a simmer over medium-high heat. (Don't go for a roiling boil because you want to keep the potatoes intact.) Simmer until a paring knife inserted in the center goes in and out smoothly, 20 to 40 minutes. The potatoes should look barely translucent and have small cracks and a slightly crumbly texture on the surface. Drain carefully and turn out onto a sheet pan. When cool, peel and cut into 1-inch cubes.
  • Meanwhile, bring a large pot of salted water to a boil. Add the eggs and cook for 10 minutes. Drain and immediately transfer to a bowl of ice and water. Replenish the boiling water, if needed, and add the macaroni. Cook until softened all the way through, at least 2 minutes past al dente. Drain well and immediately run under cold water to stop the cooking.
  • When the noodles are cool, drain well and transfer to a large mixing bowl. Peel the eggs and grate them on the large holes of a box grater. Add them to the bowl, along with the potatoes, taro (if using), carrot, mayonnaise, garlic salt, sugar, black pepper, apple cider vinegar and hot sauce. Mix well with a spoon and adjust the seasonings to taste. Eat immediately or refrigerate for up to 2 days.
