Dill weed and cream cheese give these twice-baked potatoes a tangy taste that makes them a little different. To get a head start, stuff the potato shells beforehand and put them in the fridge. Then finish baking close to dinnertime.

4 large baking potatoes
1/4 cup finely chopped onion
1/4 cup butter, cubed
1 cup shredded cheddar cheese
4 ounces cream cheese, cubed
1 teaspoon dill weed
4 bacon strips, cooked and crumbled

Steps:

  • Scrub and pierce potatoes. Bake at 400° for 1 hour or until tender. Meanwhile, in a small skillet, saute onion in butter until tender; set aside. , When potatoes are cool enough to handle, cut a thin slice off the top of each and discard. Scoop out pulp, leaving a thin shell. In a bowl, mash the pulp with cheddar cheese, cream cheese and dill. Stir in the bacon and reserved onion mixture. Spoon into potato shells. , Place on a baking sheet. Bake at 400° for 30-35 minutes or until heated through.

3 large baking potatoes (1 pound each)
1-1/2 teaspoons canola oil, optional
1/2 cup sliced green onions
1/2 cup butter, cubed, divided
1/2 cup half-and-half cream
1/2 cup sour cream
1 teaspoon salt
1/2 teaspoon white pepper
1 cup shredded cheddar cheese
Paprika

Steps:

  • Preheat oven to 400°. Scrub and pierce potatoes. Rub with oil if desired. Bake until tender, 50-75 minutes. When cool enough to handle, cut each potato in half lengthwise. Scoop out pulp, leaving a thin shell; set aside. Reduce oven temperature to 375°., In a small skillet, saute onions in 1/4 cup butter until tender. In a large bowl, mash potato pulp. Stir in sauteed onions, cream, sour cream, salt and pepper. Fold in cheese. Stuff into potato shells., Place on a baking sheet. Melt remaining butter; drizzle over potatoes. Sprinkle with paprika. Bake until heated through, about 20 minutes.

2 cups shredded Cheddar cheese
1 (16 ounce) container sour cream and onion dip

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Bake potatoes in preheated oven for 45 minutes, or until cooked through.
  • Slice tops off of potatoes and scoop the flesh into a large bowl, leaving skins intact.

4 medium potatoes
100g strong cheddar, grated, plus extra for topping
100g sweetcorn
100g mixed pepper, diced
small handful fresh herbs, such as oregano, basil, coriander, dill or thyme

Steps:

  • Equipment you will need: medium mixing bowl, small mixing bowl, dessertspoon, fork, baking tray, grater, oven gloves.
  • Get an adult to heat the oven to 200C/180C fan/gas 6 and bake the potatoes for about 1 hr until cooked and the skins are crispy. Leave to cool completely. This can be done up to 2 days ahead.
  • To stuff the jacket potatoes, heat the oven to 200C/180C fan/gas 6. Ask an adult to cut the potatoes in half. Using a spoon, carefully scoop out the middle of the potato, leaving the skin unbroken (like a boat). Place the scooped potato into a mixing bowl.
  • Using the fork, mash the potato until there are no lumps. Add the cheese, sweetcorn and peppers and mix well. Gently pick the leaves from the herbs. You can rip the larger leaves into smaller pieces. Stir the herbs into the cheesy potato mixture.
  • Using the spoon, carefully scoop the mixture back into the potato boats. Make sure that you use all the mixture up. Sprinkle with a little extra grated cheese and place on a baking tray. Using oven gloves, place the tray in the oven and bake for 10-15 mins until golden.

2 tablespoons mayonnaise or salad dressing
1/4 cup finely chopped, seeded cucumber

2 teaspoons chopped fresh dill or 1/4 teaspoon dried dill weed

Steps:

  • Remove stems from tomatoes. To level bottoms of tomatoes, cut thin slice from bottom of each. Starting at stem end and using small spoon or melon baller, carefully hollow out each tomato, leaving 1/8-inch shell. Invert tomato shells onto paper towels to drain.
  • In small bowl, combine cream cheese and mayonnaise; blend well. Stir in cucumber, onions and dill; mix well.

1 teaspoon fresh dill or 1/2 teaspoon dried dill
1/2 teaspoon seasoning salt

Steps:

  • Slice potatoes thin (about 3/8 inch thick) I use my food processor for this.
  • Place a thin layer of sliced potatoes in a 12 x 7 1/2 x 2 inch baking dish.
  • Put small dots of butter on top of potatoes followed by the dill and salt.
  • Cover with aluminium foil and bake at 425 degrees for 25 minutes or until potatoes are tender.
  • After 15 minutes, stir potaotes to enhance flavor.

4 large baking potatoes
1/4 cup butter, melted
1/3 cup sour cream
2 tablespoons fresh dill, finely snipped (or 1-1/2 teaspoon dried dill weed)
4 teaspoons lemon juice
1/2 teaspoon garlic salt
1/8 teaspoon pepper
paprika (optional)
dill sprigs (optional)
lemon wedge (optional)

Steps:

  • Scrub potatoes thoroughly with a brush. Pat dry. Prick potatoes with a fork. Bake in a 425°F oven for 40 to 60 minutes or until tender.
  • Cut potatoes in half lengthwise. Gently scoop out each potato half, leaving a thin shell
  • Place potato pulp in a large bowl. Add 3 tablespoons of the melted butter, sour cream, dill, lemon juice, garlic salt and pepper. With an electric mixer on low speed, beat until smooth.
  • Pile the mixture into the potato shells.
  • Place in a 2-quart rectangular baking dish. Drizzle potatoes with remaining 1 tablespoon melted butter. Sprinkle with paprika, if desired.
  • Bake in 425°F oven about 20 minutes or until light brown. Serve with dill sprigs and lemon wedges, if desired.
  • Make ahead tip:.
  • Prepare potatoes but do not bake. Cover and chill up to 24 hours. Bake, covered, for 20 minutes. Uncover and bake 10 to 15 minutes more or until heated through. Serve as above.

3 lb russet potato, cubed

4 egg yolks, beaten

Steps:

  • Pour gravy into an ice cube tray and freeze until the cubes are solid and can be removed easily.
  • Place the potatoes into a pot with cold, salted water and bring to a boil and cook until the potatoes are fork-tender.
  • Drain the potatoes until completely dry.
  • While still hot, mash the potatoes with a potato masher, fork, potato ricer, or food mill. If the potatoes get too cold, reheat them in the oven or microwave until hot and dry again.
  • To the mashed potatoes, add the sour cream, butter, egg yolks, salt, pepper, and nutmeg. Fold the mixture together with a spatula until just incorporated, making sure not to overmix.
  • Transfer the mixture to a piping bag or a zip-top bag with a star tip.

  • Place an ice cube of frozen gravy in the center, and pipe more mashed potatoes around the gravy cube,
  • Freeze until the potatoes are firm.
  • Preheat oven to 425°F (220°C).
  • Brush with egg wash until completely coated.
