Why make an entire cake when you can make a dozen mini cakes? These mini cakes have a killer banana-toffee flavor that's so good, you might have to indulge in more than just one.

2 cups Original Bisquick™ mix
1/3 cup granulated sugar
1 cup mashed ripe bananas (about 2 medium)
2/3 cup milk
1 egg, slightly beaten
1/2 teaspoon ground allspice
1/2 cup Gold Medal™ all-purpose flour
1/2 cup packed brown sugar
1/4 cup cold butter
2 tablespoons peanut butter
1/2 cup white vanilla baking chips
2 tablespoons whipping cream

Steps:

  • Heat oven to 400°F. Spray 12 regular-size muffin cups with cooking spray.
  • In medium bowl, stir coffee cake ingredients with whisk or spoon until blended. Divide batter among muffin cups.
  • In small bowl, mix flour and brown sugar. Cut in butter and peanut butter, using pastry blender or fork, until mixture looks like small peas. Sprinkle topping evenly over batter.
  • Bake 17 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes. Gently run knife around edge of cups; remove to cooling rack.
  • In small microwavable bowl, microwave baking chips and whipping cream uncovered on High 30 to 60 seconds or until chips are melted; stir until smooth. Place sheet of waxed paper under cooling rack. Drizzle glaze back and forth over tops of cakes with tines of fork. Serve warm.

  • Beat butter and sugar with an electric mixer in a large bowl until light and fluffy; beat in eggs one at a time, allowing each egg to blend into the butter mixture before adding the next. Stir bananas into butter mixture.
  • Sift flour, baking soda, and salt together in another bowl. Stir flour mixture into banana mixture until batter is evenly blended. Pour batter into prepared baking dish.

1/4 cup milk
3 tablespoons vegetable oil
1 teaspoon ground cinnamon
3 eggs
2 2/3 cups Original Bisquick™ mix
3/4 cup chopped walnuts or pecans
1 cup Original Bisquick™ mix
1/2 cup chopped walnuts or pecans
1/2 cup packed brown sugar
6 tablespoons butter, cut into small pieces
Maple syrup

Steps:

  • Heat oven to 350°F. Grease bottom and sides of 13x9-inch pan with shortening or cooking spray.
  • In large bowl, stir mashed bananas, granulated sugar, milk, oil, cinnamon and eggs. Stir in 2 2/3 cups Bisquick mix and 3/4 cup walnuts; fold in banana slices. Pour mixture into pan.
  • In medium bowl, mix Streusel ingredients, cutting in butter with pastry blender or fork until crumbly. Sprinkle over mixture in pan.
  • Bake 30 to 36 minutes or until knife inserted in center comes out clean. Cut into 4 rows by 3 rows. Drizzle with maple syrup just before serving.
  • Make-Ahead Directions: Make as directed through step 3. Cover and refrigerate up to 12 hours. Uncover, and bake as directed in step 4.

My own creation, born of the love of all things cinnamon and banana...Easy and soooo satisfying! Lovely, sweet bits of banana in a tender cream cheese and cinnamon coffee cake with a bit of streusel. It is definitely not for those without a sweet-tooth! **You can easily double this recipe and put it in a 9x13 inch pan, increasing baking time to 50-60 minutes. If you do double, add eggs one at a time, beating after each addition until well combined. You can also use a blueberry-banana combo (1 cup blueberries, 1 banana for a double recipe), though you might want to increase the sugar in the batter by 1/4 cup.

1 teaspoon baking powder
1/4 teaspoon salt
1/2 teaspoon cinnamon

4 ounces cream cheese, softened
1/4 cup butter, melted
3/4 cup sugar
1 large egg
1 teaspoon vanilla extract, pure
1 medium banana, diced (should be pretty ripe)
3 tablespoons brown sugar
2 tablespoons sugar
1 1/2 teaspoons cinnamon
1 tablespoon flour
1 tablespoon butter
1/3 cup walnuts, chopped

Steps:

  • Preheat oven to 350 degrees. Lightly grease a 8x8 inch baking pan; set aside.
  • In small bowl stir together 1 cup flour, 1 teaspoon baking powder, 1/4 teaspoon salt, 1/2 teaspoon cinnamon, and nutmeg; set aside.
  • In a large bowl beat cream cheese and melted butter with an electric mixer on medium speed for 3 minutes or until creamy. Add 3/4 cup sugar; beat until combined. Add egg, beating well. Add flour mixture; beat until just combined. Stir in vanilla. Gradually fold in diced bananas.
  • Batter will be very thick. Pour into prepared pan and smooth the top.
  • In small bowl stir together 3 tablespoons brown sugar, 2 tablespoons sugar, 1 1/2 teaspoons cinnamon and flour. Cut in butter until mixture resembles coarse crumbs using pastry blender, two knives or your fingers (this is what I do). Stir in walnuts and sprinkle over batter.
  • Bake for 45-50 minutes or until a toothpick inserted in center comes out clean. Cool on a wire rack.

Steps:

  • Preheat oven to 350°F. and grease and flour a 10-inch (3-quart) bundt pan, knocking out excess flour.
  • Into a large bowl sift together flour, cocoa powder, baking soda, and salt. In a small bowl stir together bananas and sour cream. In another large bowl with an electric mixer beat together butter and sugars until light and fluffy and add eggs, 1 at a time, beating well after each addition. Beat in coffee extract (or espresso) and vanilla. Beat in flour mixture in batches alternately with banana mixture, beginning and ending with flour mixture, until batter is just combined.
  • Spoon batter into pan and bake in middle of oven 50 minutes, or until a cake tester comes out clean and cake pulls away from side of pan. Cool cake in pan 10 minutes and invert onto a rack to cool completely. Let cake stand, wrapped tightly, at room temperature overnight.
  • Dust cake with confectioners' sugar.
