1/2 cup pecans, chopped
1 cup cream, whipped
2 tablespoons mayonnaise
2 tablespoons sugar
1 cup cottage cheese
1 cup pineapple juice

Steps:

  • Disolve jello and sugar in 1/2 cup boiling water. Cool.
  • Add pecans, cottage cheese and pineapple juice.
  • When almost set, add whipped cream and mayonaise.

What I love about this jello-based salad is that it's not too sweet. Like the name implies, it is a "heavenly" accompaniment to everything else on your plate. If you like pina coladas, you'll love this salad. I think it got the name because it looks like a bowlful of divinity candy once it has set up (note that it needs to be refrigerated 12-24 hours before serving). I hope you enjoy this family favorite!

2 (3 ounce) packages lemon Jell-O gelatin
1 cup boiling water
1 teaspoon salt
2 tablespoons granulated sugar
2 cups small curd cottage cheese
2 cups crushed pineapple, undrained
1 pint whipping cream, whipped (don't use prepared whipped cream)
4 tablespoons mayonnaise (real mayo, not salad dressing like Miracle Whip)
1 cup chopped walnuts (optional)
3 maraschino cherries (optional)
1 sprig fresh parsley (optional)

Steps:

  • Dissolve the jello, salt and sugar in the boiling water. Place in the fridge and let cool for about 5 minutes.
  • While jello mixture is cooling, whip the whipping cream using a mixer on high speed. The whipped cream is ready when it thickens and peaks. Be careful not to over whip.
  • Add the following to the jello mixture: cottage cheese, pineapple, mayo and nuts. Mix well.
  • Now gently fold the whipped cream into the jello mixture. This will make the mixture very light and fluffy.
  • Pour into a pretty presentation bowl.
  • For a nice presentation at holiday time, garnish with the maraschino cherries and a sprig of parsley to look like holly berries.
  • Cover and refrigerate for 12-24 hours.

2 ⅔ cups white sugar
⅔ cup light corn syrup
½ cup water
2 egg whites
1 teaspoon vanilla extract
⅔ cup chopped walnuts

Steps:

  • Cook sugar, corn syrup, and water in a 2-quart pot over low heat, stirring constantly, until sugar is dissolved. (On humid days, use 1 tablespoon less water.) Cook, without stirring, to 260 degrees on candy thermometer (or hard ball stage).
  • Beat egg whites in 1-1/2-quart bowl until stiff peaks form. Continue to beat while pouring hot syrup in a thin stream into egg whites. Add vanilla; beat until mixture holds its shape and becomes slightly dull. (Mixture may become too stiff for electric mixer). Fold in nuts (if you choose).
  • Drop from buttered spoon onto waxed paper. Let stand at room temperature, turning candy over once, until outside of candy is firm--at least 12 hours. Store in airtight container.

You'll be surprised at how easy this divinity is to make. Recipes that require a candy thermometer can often be intimidating, but this divinity was pretty simple to make. Just follow the directions and you'll have a creamy delicious divinity that melts in your mouth.

2⅔ cups sugar
⅔ cup corn syrup
½ cup water
2 egg whites
1 teaspoon vanilla
⅔ cup chopped pecans

Steps:

  • Line a cookie sheet with waxed paper or parchment paper.
  • In a 2 quart saucepan, heat the sugar, corn syrup, and water over low heat until sugar is dissolved. Stir constantly. You'll want to heat this mixture to 260 F on a candy thermometer.
  • Before the candy reaches 260, start beating the egg whites in a stand mixer on high speed until stiff peaks begin to form.
  • When the sugar mixture reaches 260 F, slowly pour it into the beaten egg whites. Beat the mixture on high speed.
  • Beat until the mixture is no longer glossy and holds it's shape. This could take about 8 minutes.
  • Fold in vanilla and nuts.
  • Spray 2 spoons with non stick cooking spray. Using these spoons drop by tablespoonfuls onto the lined cookie sheets.
  • Work quickly as the divinity sets up fast.
  • Let set for about 1 hour.
  • Store in an airtight container.

2/3 cup coarsely chopped nuts

Steps:

  • Cook sugar, corn syrup and water (use 1 tablespoon less water on humid days) in 2-quart saucepan over low heat, stirring constantly, until sugar is dissolved. Continue cooking, without stirring, to 260°F on candy thermometer or until small amount of mixture dropped into very cold water forms a hard ball that holds its shape but is pliable.
  • Beat egg whites in medium bowl with electric mixer on high speed until stiff peaks form. Continue beating while pouring hot syrup in a thin stream into egg whites, beating constantly on medium speed. (For best results, use electric stand mixer, not a portable handheld mixer since beating time is about 10 minutes and mixture is thick.) Add vanilla. Beat until mixture holds its shape and becomes slightly dull. (Mixture may become too stiff for mixer.) Gently stir in nuts.
  • Drop mixture from buttered spoon onto waxed paper. Let stand at room temperature at least 12 hours, turning candies over once, until candies feel firm. Store in airtight container.

1 teaspoon vanilla
1/2 cup boiling water
1 box (16 oz) powdered sugar (4 cups)

Steps:

  • Heat oven to 325°F. Line 2 large cookie sheets with cooking parchment paper.
  • Place dry frosting mix, corn syrup, vanilla and boiling water in bowl of electric stand mixer fitted with whisk attachment. Mix on low speed until blended. Beat on high speed 5 to 7 minutes, scraping bowl occasionally, until stiff peaks form. On low speed, gradually beat in powdered sugar, scraping bowl occasionally. Stir in nuts. Drop mixture by teaspoonfuls onto lined cookie sheets.
  • Bake 5 minutes; remove from oven. Slide parchment paper with candies from cookie sheet onto cooling rack. Let stand about 4 hours on parchment paper or until tops of candies feel firm. Remove candies from parchment paper, using small icing spatula to loosen edges if needed. Turn candies over, and place bottom sides up on cooling racks. Allow candies to dry at least 12 hours. Store in airtight container with waxed paper between layers.

2 collard greens, washed, dried, and cut into long strips
1 bunch kale, washed, dried, and cut into long strips
6 portobello mushrooms, washed, dried, and sliced
1 lb shiitake mushroom, (15-20 mushrooms), washed, dried, and sliced
1 lb oyster mushroom, (10-15), washed, dried, and sliced
3 cartons vegan broth
6 cloves garlic
1 small red onion
1 jalapeño pepper
2 packs shirataki noodles, rinsed and halved (or cut to desired length)
6 tablespoons paprika
3 whole star anises
liquid amino
¼ cup olive oil, as needed
topping of your choice, Hemp seeds, avocado or scallions

Steps:

  • Pour the broth into a large stock pot over low heat. Add star anise and allow to simmer slowly for 20 minutes.
  • Then, pour enough olive oil in a wide-bottomed skillet to cover the surface and heat to medium. Once heated, add the first bunch of collard greens to the skillet and cook 2-3 minutes.
  • Add a few squirts of liquid aminos into the skillet with the greens. Cook an additional 1-2 minutes on medium-high heat. Transfer the batch of cooked collards to the stock pot.
  • Repeat steps 2 and 3 until all the collards and the kale have been cooked.
  • Then, in the same skillet, heat 1 tbsp olive oil, add mushrooms, and cook until browned. Once browned, add to the stock pot.
  • Once mixture is combined, add shirataki noodles. Stir to combine.
  • Turn off the heat. Serve hot, garnishing with hemp seeds, avocado or scallions.
