Macaroni and cheese baked to perfection in muffin tins! Great for holidays and lunch boxes - it's portable and makes for easy serving!

2 cups elbows pasta
2 tablespoons Panko
2 tablespoons freshly grated Parmesan
1 1/2 teaspoons olive oil
2 tablespoons unsalted butter
3 cloves garlic, minced
2 tablespoons all-purpose flour
1 cup milk
2 cups shredded sharp cheddar cheese
1 large egg, beaten
Kosher salt and freshly ground black pepper, to taste
1 tablespoon chopped fresh chives

Steps:

  • Preheat oven to 425 degrees F. Line a 12-cup standard muffin tin with paper liners or coat with nonstick spray; set aside. In a large pot of boiling salted water, cook pasta according to package instructions; drain well. To make the topping, combine Panko, Parmesan and olive oil; set aside. Melt butter in a large saucepan over medium heat. Add garlic, and cook, stirring frequently, until fragrant, about 1-2 minutes. Whisk in flour until lightly browned, about 1 minute. Gradually whisk in milk. Bring to a boil; reduce heat and simmer, whisking constantly, until thickened, about 3-5 minutes. Remove from heat. Stir in cheese until melted, about 2-3 minutes. Stir in egg and pasta, and gently toss to combine; season with salt and pepper, to taste. Scoop the pasta mixture evenly into the muffin tray. Sprinkle with reserved topping. Place into oven and bake for 18-20 minutes, or until golden brown. Serve immediately, garnished with chives, if desired.

1/4 cup butter, divided
1/4 cup flour
1 teaspoon salt
2 cups milk (for a more rich taste use evaporated milk for part of the milk)
1/4 lb Velveeta cheese, cut up
2 cups sharp cheddar cheese, shredded
2 cups elbow macaroni, cooked, drained
2 tablespoons seasoned dry bread crumbs (optional)

Steps:

  • Melt 3 tablespoons of the butter in large saucepan on low heat.
  • Blend in flour and salt; cook and stir 1 minute.
  • Gradually add milk; cook, stirring constantly, until thickened.
  • Add prepared cheese product and 1-1/2 cups of the shredded cheese; stir until melted. Stir in macaroni.
  • Pour into lightly greased 1-1/2-quart casserole.
  • Melt remaining 1 Tablespoon butter; toss with bread crumbs.
  • Sprinkle casserole with remaining 1/2 cup cheese and bread crumb mixture.
  • Bake at 350 degrees F for 20 minutes or until thoroughly heated.

1/4 cup flour
1 cup milk
1/2 lb. (8 oz.) VELVEETA, cut into 1/2-inch cubes
2 cups elbow macaroni, cooked
1/3 cup KRAFT Shredded Cheddar Cheese
6 round buttery crackers, crushed

Steps:

  • Heat oven to 350ºF.
  • Melt 3 Tbsp. butter in medium saucepan on medium heat. Whisk in flour; cook 2 min., stirring constantly. Gradually stir in milk. Bring to boil; cook and stir 3 to 5 min. or until thickened. Add VELVEETA; cook 3 min. or until completely melted, stirring frequently. Stir in macaroni.
  • Spoon into 8 foil-lined muffin cups; sprinkle with cheddar. Melt remaining butter; toss with cracker crumbs. Sprinkle over cheddar.
  • Bake 20 min. or until heated through.

1 pound uncooked elbow macaroni
3 cups sharp cheddar cheese, finely shredded
5 tablespoons butter, softened
3 large eggs
1 cup half-and-half cream
1/2 cup sour cream
1 teaspoon salt
1/2 teaspoon pepper

Steps:

  • Preheat oven to 350°. Cook macaroni according to package directions, drain. Transfer to a large bowl. Stir in cheese and butter until melted., In another bowl, whisk the eggs, cream, sour cream, salt and pepper until blended. Add to macaroni mixture; stir until well blended. Spoon macaroni into 24 well-greased muffin cups. Bake until golden brown, 25-30 minutes.

6 quarts water
1 tablespoon salt
1 pound bow tie pasta
4 tablespoons unsalted butter
4 tablespoons all purpose flour
2 cups hot whole milk
1 teaspoon salt
1 teaspoon ground white pepper
1 tablespoon Dijon mustard
1/2 teaspoon cayenne pepper
1 cup grated Colby or Jack cheese
1 cup grated extra sharp Cheddar cheese
1/4 cup grated Parmesan cheese
1/2 cup bread crumbs

Steps:

  • Preheat oven to 350 degrees. Bring 6 quarts of water to a boil. Add the salt and reboil before adding the pasta. Cook the pasta according to the package directions; about 10 to 12 minutes. While the pasta is cooking, heat the butter over medium heat in a saucepan until it begins to bubble but do not let it brown. Whisk in the flour to create a roux for the white sauce base. Cook the flour and butter, over low heat, for 5 to 7 minutes, add the hot milk in a steady stream. Cook the white sauce for 10 minutes. Add the salt, pepper, mustard, cayenne pepper, Colby and Cheddar cheeses and cook for 2 minutes over low heat. Drain the pasta and place into a baking casserole dish large enough to hold the pasta and all of the sauce. Add the cheese sauce by pouring over the top. Sprinkle the bread crumbs and Parmesan cheese over the top and bake for 15 minutes or until the top is well browned and crusty.;

2 cups fat-free milk

1 pkg. (7 oz.) KRAFT Shredded Fat Free Cheddar Cheese, divided
2 cups elbow macaroni, cooked, drained

Steps:

  • Heat oven to 350ºF.
  • Melt butter in large saucepan on low heat. Remove half of butter; mix with bread crumbs. Set aside. Stir flour into remaining butter in saucepan; cook and stir 1 min. Gradually stir in milk until well blended; cook and stir until thickened. Add VELVEETA and 1-1/2 cups cheddar; cook until melted, stirring frequently. Stir in macaroni.
  • Spoon into 1-1/2-qt. casserole; top with remaining Cheddar and buttered crumbs.

¼ cup fresh parsley, chopped
1 egg, beaten
2 tablespoons garlic, chopped
¼ cup bread crumbs
salt, to taste
pepper, to taste
cumin, to taste
3 tablespoons cream cheese
1 tablespoon cooking oil
2 cups mac 'n' cheese
parmesan cheese, to taste

Steps:

  • Preheat oven at 350°F (180°C).
  • Mix the ground meat with the onion, parsley, egg, garlic, bread crumbs, salt, pepper, and cumin.
  • Grab a tablespoon of beef, place ½ tablespoon of cream cheese and cover it with the beef to make a meatball.
  • Add oil to a pan and cook the meatballs over low heat, let cool and remove excess fat.

1 small shallot, finely chopped
2 tablespoons all-purpose flour
2 cups whole milk, warm
1 teaspoon Dijon mustard
2 cups shredded cheddar cheese
1/2 cup panko bread crumbs

Steps:

  • Preheat the oven to 350 degrees F. Butter a twelve-cup muffin tin.
  • Cook the pasta in a large pot of boiling salted water until al dente, then drain in a colander.
  • Melt the butter in a large saucepan. Add the shallot, and sauté until tender, about 3 minutes. Add the flour, and stir until it thickens and reaches a golden-blond color, about 2 minutes. Slowly whisk in the warm milk, bringing up to a simmer, and stir until it thickens. Stir in mustard, and season with salt and pepper. Let the sauce simmer on low heat for 5 minutes, until thick enough to coat the back of a spoon. Stir in the cheese a handful at a time, then stir in the cooked macaroni.
  • Divide the macaroni among the cups in the muffin tin, and sprinkle with bread crumbs. Bake for 15 minutes, or until they're nicely golden brown on top. Let them rest for 5 minutes, then slide a knife around the edges to remove from the muffin tin, and serve.
