THREE-INGREDIENT PEA SOUP
Steps:
- Bring 2 cups water to a boil in a medium pot. Reduce to simmer and add the frozen peas. Cook until tender, 3 to 4 minutes.
- Transfer the peas and cooking water to a blender and puree until smooth, 2 minutes.
- With the machine running, slowly drizzle in the olive oil to emulsify.
- Mix in the salt; taste and season with more salt if desired.
- Transfer the soup to bowls. Garnish with microgreens if using.
EASY PEA SOUP
One of my regular near-instant meals is pea soup, which I make by tossing sliced scallions in a little garlic-infused oil (or using regular olive oil and mincing a clove of garlic into it) and then by adding peas from the freezer.

- Place a saucepan over medium-low heat, and add oil and scallions. Stir until heated, then add frozen peas. Stir well with a wooden spoon.
- Add 3 cups boiling water and stock concentrate to taste. Cover, and cook at a lively simmer until peas are tender, 5 to 10 minutes. Remove from heat, and allow to cool until no longer steaming.
- Transfer soup to a blender. Add cheese, and purée until mixture is very smooth. Serve immediately or, if desired, reheat to taste.

- Melt butter in a medium saucepan over medium-low heat. Cook onion about 10 minutes or until lightly browned and soft, stirring frequently.
- Blend onion, peas, spinach, lemon juice, thyme and 2 cups chicken broth in a blender or food processor until very smooth. Return to same saucepan. Stir in remaining broth. Gently heat about 5 minutes, stirring occasionally.
- Stir in cream, if desired. Heat over low heat about 1 minute. DO NOT BOIL. Garnish with garlic croutons, if desired.

EASY PEASY PEA SOUP
Steps:
- Add the oil to a large saucepan on a medium heat. Add in the vegetables and stir well. Cook for a couple of minutes then add in the mixed dried herbs and stir well. Add the beans and the hot stock and bring to a gentle simmer.
- Pour in the frozen peas and leave to simmer gently for 10 minutes or until the vegetables are just cooked. Leave the lid off as this helps the vegetables retain their vibrant color. Once cooked blend with stick blender or in a food processor until completely smooth.
- Ladle into bowls and garnish with the croutons and a drizzle of olive oil.
- Preheat the oven to 350 degrees F.
- Place the cubed bread in a medium sized mixing bowl. Drizzle over the olive oil, salt and mixed herbs and mix together with clean hands or spoon till evenly coated. Tip onto a baking tray, spread out evenly and bake for around 15 minutes until golden brown, turning them half way through. Remove and leave to cool.
EASY SPLIT PEA SOUP
Steps:
- Melt butter in heavy large pot or Dutch oven over medium-high heat. Add onion, celery and carrots. Sauté until vegetables begin to soften, about 8 minutes. Add pork and marjoram; stir 1 minute. Add peas, then water, and bring to boil. Reduce heat to medium-low. Partially cover pot; simmer soup until pork and vegetables are tender peas are falling apart, stirring often, about 1 hour and 10 minutes.
- Transfer hocks to bowl. Puree 5 cups soup in batches in blender. Return to pot. Cut pork off bones. Dice pork; return pork to soup. Season with salt and pepper. (Can be made 1 day ahead. Refrigerate until cold, then cover. Rewarm before serving.)

- Soften onions and garlic in butter, doesn't matter how they are chopped! (3-4 minutes).
- Throw in the frozen peas, then the chicken stock, then season - and leave it to simmer (4 minutes).
- Throw in the chopped up fresh mint leaves and let simmer for a bit more (1-2 minutes).
- Pour it all into a blender and add either 2 table spoons of creme fresh or natural yogurt.
- Blend until smooth (1 minute).
- Serve and enjoy! (also tasty when chilled).

This is my simple modified version of pea soup. I modified the recipe to be vegetarian friendly by adding vegetable broth instead of chicken.

Steps:
- Melt butter or margarine in large pot over medium heat. Add dried onions and cook for about 1 minute( do not burn).
- Add water, and dill weed to pot. Bring liquid to a boil and add the bouillon cubes, stirring until cubes are completely dissolved.
- Add frozen peas and bring back to boil, then reduce heat and simmer for 5 minutes or until peas are cooked. Remove pot from heat and set aside to cool for about 3 minutes.
- Take pea mixture and put into a blender and puree until smooth. Add cream cheese and continue to blend until mixed in completely. Salt and pepper to taste then serve.
