1 tablespoon olive oil
1 onion, chopped
1 (14 1/2 ounce) can black beans, rinsed & drained
1 (10 ounce) can corn kernels, rinsed and drained
2 teaspoons paprika
1/2 teaspoon oregano (The Mexican kind is best)
1/2-1 teaspoon garlic salt
pico de gallo, to taste (optional)
1 avocado, peeled & diced (optional)

Steps:

  • Heat the olive oil in a small pan over medium-high heat. Add the onions, and sautee for 5 minutes, or until soft.
  • Add the beans, corn, paprika, oregano and garlic salt to the pan and stir well. Lower the heat to low and cook for 10 minutes while stirring occasionally.
  • Serve this over brown rice if you like, or top with pico de gallo and/or avocados.

4 (10-inch) flour tortillas
1 cup fat free refried black beans

Steps:

  • Combine all corn salsa ingredients in bowl. Refrigerate 30 minutes to blend flavors.
  • Heat gas grill on medium or charcoal grill until coals are ash white.
  • Place 2 slices cheese, slightly overlapping, in center of each tortilla leaving 2-inch border on sides and bottom. Spread 1/4 cup black beans over cheese; top with heaping 1/3 cup corn salsa. Place 1 slice cheese over salsa.
  • Fold 2 opposite edges of tortilla over edge of cheese. Starting at 1 open end, fold up tortilla to enclose fillings.
  • Place onto grill, seam-side down. Grill, turning once, 4-8 minutes or until toasted and heated through.

8 tablespoons grated Monterey Jack cheese (about 2 ounces)
4 tablespoons nonfat sour cream

Steps:

  • Preheat oven to 350°F. Wrap tortillas in foil. Warm in oven until heated through, about 15 minutes.
  • Meanwhile, combine onion and oil in large nonstick skillet. Stir over medium-high heat until onion is golden, about 6 minutes. Add cumin and chili powder; stir 20 seconds. 1/2 red pepper, chopped
1/2 medium onion, chopped
1/2 large zucchini, chopped
1 garlic clove (pressed or minced)
1 teaspoon italian seasoning mix
0.5 (15 ounce) can black beans, rinsed & drained
0.5 (15 ounce) can corn, drained
shredded mozzarella cheese (I use part skim)
tortilla (small or large, I use whole wheat)

Steps:

  • Preheat oven to 375.
  • Heat fry pan on med.
  • Heat with oil or spray.
  • Add red pepper, onion, zucchini and garlic; cook about five minutes.
  • Add Italian spice and mix; cook another minute.
  • Meanwhile, mash black beans in a bowl with a potato masher (I'm sure there are other things you could use, if you don't have a masher!); add corn & cooked veggies.
  • Spoon the mixture into the tortillas, wrap up, and bake on a cookie sheet for about 10-12 minutes; the tortillas will brown slightly.
  • Serve with low fat sour cream!
  • So healthy, so yummy.
  • Word of warning--let them cool down a bit!
  • These are also easy to take to work and reheat.
