My family enjoys camping and cooking over a fire. These hearty foil-packet potatoes turn out beautifully over a campfire, on the grill or in the oven at home. We sometimes leave out the sausage and serve the potatoes as a side dish. Either way, it's so easy, and the spuds can be served right from the foil pouch for easy cleanup. The recipe also tastes amazing when cooked in a Dutch oven. -Julie Koets, Elkhart, Indiana

3 pounds red potatoes, cut into 1/2-inch cubes
2 packages (12 ounces each) smoked sausage links, cut into 1/2-inch slices
4 bacon strips, cooked and crumbled
1 medium onion, chopped
2 tablespoons chopped fresh parsley
1/4 teaspoon salt
1/4 teaspoon garlic salt
1/4 teaspoon pepper
Additional chopped fresh parsley, optional

Steps:

  • Prepare campfire or grill for medium heat. In a large bowl, toss potatoes with sausage, bacon, onion, parsley, salts and pepper. , Divide mixture among eight 18x12-in. pieces of heavy-duty nonstick foil, placing food on dull side of foil. Fold foil around potato mixture, sealing tightly. , Place packets over campfire or grill; cook 15 minutes on each side or until potatoes are tender. Open packets carefully to allow steam to escape. If desired, sprinkle with additional parsley.

This makes a fantastic summer meal with minimal clean-up. With the abundance of fresh vegetables, this is a meal itself served with garlic bread. The okra pods and mushrooms are both listed as optional. You may add one or both or leave them out.

2 Italian turkey sausage links
1 medium zucchini, cut into 1-inch slices
1 medium summer squash, cut into 1-inch slices
1/2 medium bell pepper, sliced
1/2 medium onion, cut into wedges
6 -10 okra pods, steam cut off, cut into 1 inch lengths (optional)
1/2 cup mushroom, quartered (optional)
4 -6 garlic cloves, peeled
2 tablespoons olive oil
2 teaspoons dried oregano
2 teaspoons dried parsley flakes
1 teaspoon paprika
salt and pepper

Steps:

  • Place the sausages in a small amount of water and bring to a boil; boil for 3 to 4 minutes or until they are no longer pink; remove from water and allow to cool slightly.
  • Mix together the vegetables, oil and seasonings.
  • Tear 2 sheets of foil (10x10inch), divide the prepared vegetables among the foil sheets, slice the sausages into 1 inch lengths and place on top.
  • Season each packet with salt and pepper to taste, bring foil up to center and fold over several times, sealing well; fold in ends and seal.
  • Preheat grill, place packets on grill and cook 10 minutes, turn over and cook an additional 10 minutes.
  • Enjoy!

1 medium green pepper
1 medium sweet red pepper
1 medium sweet yellow pepper
1 package (14 ounces) smoked turkey kielbasa, sliced
2 large potatoes, cut into wedges
1 medium onion, chopped
4 teaspoons lemon juice
4 teaspoons olive oil
1/2 teaspoon garlic powder
1/2 teaspoon pepper
Lemon wedges, optional

Steps:

  • Cut peppers into 1-in. pieces; place in a large bowl. Toss with the next 7 ingredients. Divide mixture among 4 double thicknesses of heavy-duty foil (about 18x12 in.). Fold foil around mixture, sealing tightly., Grill, covered, over medium heat until potatoes are tender, 30-35 minutes. Open foil carefully to allow steam to escape. If desired, serve with lemon wedges.

1 red bell pepper
2 ears corn
1/2 large yellow onion, 1 medium
4 -5 small red potatoes
1 medium sized zucchini
1 (368 g) package butterball hardwood smoked turkey sausage
5 tablespoons olive oil
1 tablespoon dried oregano
1 tablespoon dried parsley flakes
1/2 teaspoon garlic powder
1 teaspoon paprika
seasoned salt and pepper
chopped parsley (optional)

Steps:

  • Cut the top off the pepper and remove the seeds. Thinly slice.
  • Remove husk from corn and cut into 1 inch disks. Coarsely chop the onion.
  • Cut the potatoes into small bite-sized pieces -- about 8-10 pieces per potato depending on size.
  • Coin the zucchini.
  • Coin the turkey sausage.
  • Preheat the grill to medium heat.
  • In a small bowl, stir together the olive oil, oregano, parsley, garlic powder, paprika, about 1/2 teaspoon (or to taste) seasoned salt and pepper. Stir.
  • Add seasonings mixture to the veggies + meat and toss well.
  • Place 2 pieces of tin foil on top of each other.
  • Put a generous amount of the mixture in the center and then fold up the first piece of foil and then the next piece of foil to form a secure encasing.
  • Grill covered over medium heat for 16-24 minutes (depending on heat of grill) until veggies are crisp tender.
  • Remove and top with freshly chopped parsley if desired.
  • OVEN: 400 degrees for around 30-35 minutes.
