FOIL-PACKET POTATOES AND SAUSAGE
My family enjoys camping and cooking over a fire. These hearty foil-packet potatoes turn out beautifully over a campfire, on the grill or in the oven at home. We sometimes leave out the sausage and serve the potatoes as a side dish. Either way, it's so easy, and the spuds can be served right from the foil pouch for easy cleanup. - Prepare campfire or grill for medium heat. In a large bowl, toss potatoes with sausage, bacon, onion, parsley, salts and pepper. , Divide mixture among eight 18x12-in. pieces of heavy-duty nonstick foil, placing food on dull side of foil. Fold foil around potato mixture, sealing tightly. , Place packets over campfire or grill; cook 15 minutes on each side or until potatoes are tender. Open packets carefully to allow steam to escape. If desired, sprinkle with additional parsley.

This makes a fantastic summer meal with minimal clean-up. With the abundance of fresh vegetables, this is a meal itself served with garlic bread. The okra pods and mushrooms are both listed as optional. You may add one or both or leave them out.

Steps:
- Place the sausages in a small amount of water and bring to a boil; boil for 3 to 4 minutes or until they are no longer pink; remove from water and allow to cool slightly.
- Mix together the vegetables, oil and seasonings.
- Tear 2 sheets of foil (10x10inch), divide the prepared vegetables among the foil sheets, slice the sausages into 1 inch lengths and place on top.
- Season each packet with salt and pepper to taste, bring foil up to center and fold over several times, sealing well; fold in ends and seal.
- Preheat grill, place packets on grill and cook 10 minutes, turn over and cook an additional 10 minutes.
- Enjoy!

- Cut peppers into 1-in. pieces; place in a large bowl. Toss with the next 7 ingredients. Divide mixture among 4 double thicknesses of heavy-duty foil (about 18x12 in.). Fold foil around mixture, sealing tightly., Grill, covered, over medium heat until potatoes are tender, 30-35 minutes. Open foil carefully to allow steam to escape. If desired, serve with lemon wedges.

- Cut the top off the pepper and remove the seeds. Thinly slice.
- Remove husk from corn and cut into 1 inch disks. Coarsely chop the onion.
- Cut the potatoes into small bite-sized pieces -- about 8-10 pieces per potato depending on size.
- Coin the zucchini.
- Coin the turkey sausage.
- Preheat the grill to medium heat.
- In a small bowl, stir together the olive oil, oregano, parsley, garlic powder, paprika, about 1/2 teaspoon (or to taste) seasoned salt and pepper. Stir.
- Add seasonings mixture to the veggies + meat and toss well.
- Place 2 pieces of tin foil on top of each other.
- Put a generous amount of the mixture in the center and then fold up the first piece of foil and then the next piece of foil to form a secure encasing.
- Grill covered over medium heat for 16-24 minutes (depending on heat of grill) until veggies are crisp tender.
- Remove and top with freshly chopped parsley if desired.
- OVEN: 400 degrees for around 30-35 minutes.

- Preheat oven to 400 degrees F. Place red potatoes on a large plate and microwave for 3 minutes, turning once halfway through.
- Once cool enough to handle, cut into quarters. Add potatoes, sausage, beans, carrots, onions, and garlic to a large mixing bowl.

SAUSAGE AND VEGETABLE FOIL PACKET DINNERS

- Preheat the oven to 450. Cut the chicken sausage into 1/2 inch slices. In a large bowl, toss together the potatoes, green beans, and carrots. Drizzle the vegetables with the olive oil and toss to coat. Add the garlic powder, salt, pepper, parsley, and basil, and toss to combine.
- Cut four sheets of aluminum foil to be approximately 12 inches square. In the center of each square, add 1/4 of the vegetables, then top with one of the sliced sausages. Sprinkle lightly with parmesan cheese.
- Fold the four sides of the foil up around the vegetables and sausage, then pinch together the top and roll over to seal. Repeat with remaining vegetables and sausage.
- Bake 25-30 minutes, or until the potatoes are tender. Be very careful when opening the foil packs, as they will be hot and steamy.
