2 large baking potato es (1-1/4 lb.)
1/4 cup PHILADELPHIA Chive & Onion Cream Cheese Spread
1/4 cup BREAKSTONE'S or KNUDSEN Sour Cream
1/2 cup KRAFT Shredded Sharp Cheddar Cheese, divided

Steps:

  • Heat oven to 400ºF.
  • Prick potatoes in several places with fork. Microwave on HIGH 8 to 9 min. or until tender.
  • Cut potatoes lengthwise in half. Scoop flesh into bowl, leaving thin shells; mash potato flesh with cream cheese spread, sour cream and 1/4 cup cheddar. Spoon into potato shells; sprinkle with remaining cheddar.
  • Bake 10 min. or until cheese is melted and potatoes are heated through.

Simple Baked Potato image

This recipe for baked potatoes is delicious with steak, meatloaf, or by itself. I never was fan of the potato's skin until I began making this recipe! These potatoes taste amazing loaded with cheese, sour cream, and/or chives! If you want to get fancy, use this recipe as a base recipe for one of the many potato skin, whipped baked potato, or other more-to-it recipes on here.

4 tablespoons butter
2 teaspoons olive oil
1 ½ teaspoons garlic powder
salt and ground black pepper to taste
6 medium potatoes, scrubbed

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Place butter in a microwave-safe bowl and microwave on high until melted, 20 to 30 seconds. Stir in olive oil, garlic powder, salt, and pepper.
  • Use a fork to poke about 5 holes into each potato. Place each potato on a sheet of aluminum foil about 6 inches wide. Brush butter mixture over potatoes, making sure to evenly coat each one. Wrap up completely in foil. Poke 5 more holes into the wrapped potatoes.
  • Bake potatoes in the center of the preheated oven until easily pierced with a fork, about 1 hour. Spread leftover butter mixture over potatoes after cutting them open.

I have always wanted light and fluffy baked potatoes like I would get in nice steakhouses, but NEVER could do it at home! I found this recipe and holy cow.. IT WORKED!! :D Who'd a thunk? Key is to start with a mealy fleshed potato - Idaho is best I find. And the salt draws the moisture out of the potato while baking, making it light and fluffy!! It really works! Ingredient amounts are just there because they have to be, but use however many potatoes you need.

4 idaho potatoes
1/2 teaspoon salt

Steps:

  • Preheat oven to 400º.
  • Wash the potatoes well and while still damp, rub it with plenty of salt.
  • Pierce the potatoes with a fork all over.
  • Bake at 400º for 40- 60 minute or until tender. When a knife inserted into the center of the potato comes out with no resistance, they are done.
  • The result is a crispy exterior with a fluffy interior.

3/4 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Place potatoes in a large bowl. Drizzle with oil; toss to coat evenly. Combine the garlic, parsley, basil, oregano, salt and pepper; sprinkle over potatoes and toss to coat evenly. Transfer to an ungreased 13-in. x 9-in. baking pan. Bake, uncovered, at 425° for 30 minutes. Stir; bake 10-15 minutes longer or until potatoes are tender and golden brown.
