EASY PIE CRUST
Even novice bakers who shy away from homemade pie pastry can't go wrong with this recipe. It is easy to roll out and produces a tender, flaky crust every time.

Yield pastry for a single- or double-crust pie (9 or 10 inches).

Steps:
- In a small bowl, combine the flour and salt; cut in shortening until mixture is crumbly. Sprinkle with vinegar. Gradually add the milk, tossing with a fork until a ball is formed. Cover and refrigerate for 30 minutes or until easy to handle. , For a single crust, roll out pastry on a lightly floured surface to fit a 9-in. or 10-in. pie plate. Transfer pastry to pie plate. Trim pastry 1/2 in. beyond edge of plate; flute edges. Fill or bake shell according to recipe directions., For a double crust, divide pastry in two portions so that one ball is slightly larger than the other. Roll out larger ball on a lightly floured surface to fit a 9-in. or 10-in. pie plate. Transfer pastry to pie plate. Trim pastry even with edge of plate. Add filling. Roll out remaining pastry to fit top of pie; place over filling. Trim, seal and flute edges. Cut slits in top. Bake according to recipe directions.

Steps:
- Mix flour and salt.
- Cut in butter.
- Mix in water one tablespoon at a time.
- Gather into a ball and let sit for 5 minutes.
- Roll out. Place in pie plate.
- Refridgerate 20 minutes.
- Microwave on MED 6-9 minutes. Check for doneness, let sit 2 minutes (it will continue to cook a bit after you take it out of the microwave).
- Use in any pie recipe requiring a baked pie crust.

Steps:
- Preheat oven to 400 degrees F (200 degrees C).
- Place all ingredients in 9 inch pie pan. Stir together with fork. Pat mixture into bottom and up the sides of the pan. Poke holes in bottom and side of crust.
- Bake for 15 minutes in the preheated oven, or until light brown. Use as directed in favorite pie recipe.

EASY ROLL PIE CRUST (MICROWAVE)

- 1. In medium mixing bowl, stir together KELLOGG'S ALL-BRAN cereal, flour and salt. Using pastry blender, cut in shortening until mixture resembles coarse crumbs. Sprinkle water over cereal mixture. Mix gently with fork until mixture holds together.2. On lightly floured surface, roll dough to 10-inch circle. Place in ungreased 9-inch glass pie plate. Trim and flute edges. Prick bottom and side with fork.3. Microwave on HIGH 3 minutes. Rotate and microwave on HIGH about 2 minutes longer or until center no longer appears doughy. Cool completely. Use for any refrigerated or frozen filling.

EASIEST PIE CRUST EVER!
For years I used my mom's old pie crust recipe, then she got me a cookbook for Christmas that had this pie crust in it. I was sold. It's easy, delicious and bakes perfectly.

Steps:
- In a medium bowl, mix flour and salt.
- Add oil and water all at once to flour.
- With a fork, stir until mixture holds together.
- Shape dough into a ball and flatten.
- Roll between two pieces of wax paper to a 12" diameter.
- Peel off one piece of wax paper and invert dough, paper side up, into a 9" pie plate.
- Peel off second piece of paper. Ease an fit pastry into plate. Trim and flute edges.
- NOTE: DO NOT pierce pie crust. Fill as desired and bake according to pie recipe.
- Can be doubled for a 2 crust pie.

EASY MICROWAVE PIE
I wanted to eat something sweet and quick. I made this up quickly (was inspired by a basic russian apple pie) and it turned out nice :)

Steps:
- Dice apple in pieces and dump in a greased microwave bowl.
- In another bowl, mix egg till fluff. Add sugar and mix again. Add flour.
- Pour over the apples.
- Put the lid of the bowl on it. Put in microwave for 10 minutes (this can be diffrent, my microwave is quite quick). Check the dough in between by poking in a toothpick. if it comes out clean the pie is done.

- Use copious amounts of flour. To start, use a generous amount of flour on your countertop and right on your pastry dough. This goes against all conventional wisdom and recommendations for working with pastry, but it makes everything so much easier!
- Stay ahead of the cracks. As you roll, stop periodically to crimp together any cracks that form, especially around the edges of the dough. Catching small cracks early will prevent them from becoming large cracks or holes later in the process.
- Keep it clean. Your rolling pin, that is! As you take breaks to flour the counter and turn your dough, rub your hand over the rolling pin to scrape off any little bits of dough that have gotten stuck to the pin.
- Try this spatula trick. Use a long-handled spatula with a thin head to occasionally loosen the dough from your counter. This is especially handy as the dough gets thinner (and warmer) and is more likely to stick to your counter.
- Invest in a pastry brush. Even though I’m a fan of rolling out dough with a generous amount flour, I also remove excess to prevent a floury taste and minimize any negative effect it might have on the texture of the crust.
